OMELETTE CIPOLLOTTI E RICOTTA 🥚🥚🥚🥚🥚🥚🥚🥚 - 8 uova - 200 gr ricotta - qualche pomodorino semi secco - 100 ml latte - 4 cipollotti - olio sale - (se avete verdure avanzate, io ho messo un pochino di piselli già cotti) 😋😋😋😋😋😋😋😋😋 Pulisci i cipollotti eliminando la radice e taglia a rondelle i bulbi e parte delle foglie (solo la parte tenera). Fai appassire a fuoco dolce con un pochino di olio e un filo d’acqua. Lascia raffreddare. Sbatti le uova con il latte, incorpora i cipollotti e un pizzico di sale. Scalda in una padella antiaderente un pochino di olio e metti 1/4 del composto, fallo addensare un pochino, distribuisci un paio di cucchiai di ricotta (50 gr), qualche pomodorino e qualche verdura avanzata a piacere se volete (io ho messo un cucchiaio di piselli già cotti che avevo avanzato). Cheesy Pea and Nooch soup with barley (or rice) 🥣🌱🍚 ' ' This wholesome one pot soup is truly one of my most favourite meals. Soup is a great way to get in plenty of veggies and a particular type included here is the very cheap and high protein; frozen garden peas. The cheesy taste is all down to B12 fortified nutritional yeast (also high in Zinc and Folic acid). It can be served with any wholegrain of choice, although I have a bias for chewy, nutty and creamy barley 🙃. Although not needed for taste, cashew parmesan provides a lovely crunch on top. Overall this meal is TASTY, full of fibre, a nice balance of macronutrients and is bursting with an array of micronutrients. NO added sugars and fat (other then those naturally occurring) is required for this bowl of goodness. ' ' I simply just chopped up a couple of medium potatoes, 1 medium carrot (skins both left on) and 1 onion in equal sized chunks and added them to the pot. Then poured in 1 cup of frozen peas, 1 cup of unsweetened soya milk, 1 tsp of garlic powder, 1/2 tsp of nut meg, 1/4 tsp of turmeric, 1/4 tsp of paprika, a dash of pepper and 1 tbsp of vecon veg stock. Lastly, I added water to cover the mix, then brought it all to the boil and simmered until soft. When finished I stirred in 1/2 cup of nutritional yeast and blitzed the soup until very smooth.

More isolation vegan rice and beans. This time it's brown rice with pinto beans, the last of my vegan pesto 😥 and roasted sunflower seeds. Salsa and olive tapenade on the side. I also used lemon juice and the leftover vinaigrette from my artichoke hearts to flavor the rice and beans. 🍚🌿🧂🍽 I still haven't been shopping since before the isolation. I have no interest in the prospect which apparently includes disinfecting groceries before bringing them in the house. Foraging almost sounds easier and safer than that. I wish I knew more about foraging. Maybe I should start eating the dandelions in the yard. This is not the daal I grew up having. The staple in my house is chana daal and not arhar/toor. Neither is the tadka (tempering) common to how the Punjabis temper their daal - mustard seeds and red chilli instead of jeera (cumin), garlic and green chillies. Also, I ran out of coriander, so chopped some spinach leaves and used as garnish. This Andhra style Amba Pappu (mango daal) was perfect for my sore throat and felt like a warm, nourishing hug. The taste of familiarity is acquired, but it can also be recreated, and re-invented over time. Today’s recipe is oat soup.. easy to digest and can be made with minimal ingredients easily found at home! A much needed during this crucial time. Just sauté your favourite vegetables ( I have used bell pepper, tomato and onions but you can add carrot, peas etc) in some olive oil, ad half crushed chilly and oats with some water. Add half spoon turmeric (excellent for boosting immunity and also imparts great flavour). Add salt and pepper with some lemon. Add water to make it soupy. I added coriander and some oregano as well. VEGAN RECIPE ALERT!! MINIMALIST COOKING CHALLENGE! With limited groceries in the house, we all ought to think of ways to make food last longer. Yes, there are shops open for sometime but it's better to stay at home and limit grocery shopping as part of physical distancing. Also, when we privileged are not responsible, we are taking away food from people who are unable to keep food stock. I'm starting a minimalist cooking challenge in an attempt to explore how ingredients can be used innovatively. Today's box of ingredients comprised of carrot, potato, wheat flour and chickpeas. I made a roasted vegetable wrap. Recipe 1 bowl chickpeas 1 carrot 2 potatoes 3 plain roti Bit of oil Spices: salt, pepper, cumin powder (jeera), red chilli powder, oil, dried oregano Method: Cut the potatoes and carrots into pieces. Add a tablespoon of oil, salt, pepper and oregano and put in a baking dish. For the chickpeas, soak it overnight and pressure cook it until soft. Mix with oil, red chilli powder and cumin powder. Put it in a baking dish. Bake the vegetables and chickpeas at 250 degree Celsius for about 30 minutes. Make normal plain rotis. In the cooked roti, spread a sauce of your liking: ketchup, mayonnaise, green chilli sauce, red chili sauce. I used Thai sweet chilli sauce and a bit of coriander chutney I had. Homemade golbeda achar works well too. Add the roasted vegetables and eat it. Vegan chickpea curry. This is one of the fastest, easiest meals that tastes like you got takeout. Maybe it just seems that way to me because I rarely make curry at home for some reason, though that may change this was so good. It's just chickpeas, canned coconut milk, pasta sauce, curry powder, sugar, garlic and salt (over rice). I cooked it for a few minutes in the microwave. I cooked the rice in a rice maker. 🍚 I hope everyone is doing OK. I'm doing OK, but I think I'm depressed because I'm not even exercising (walking) which is still allowed, but I just haven't even wanted to be outside. I'm going to really try to go out for a walk tomorrow, but I told myself that yesterday. I'm not really worried about catching the virus now because there's only 4 cases in my city so far (39 in the county), I just am obsessed with watching the news and don't feel like seeing people. I do feel it's inevitable that I will get the virus at some point unless they're able to come out with a vaccine sooner than a year from now. ⏳ It's so disturbing that this country wasn't better prepared and hadn't started taking precautions and preparing months ago. This Coronavirus has been out there for months already, but not many took it seriously in this country until less than 2 weeks ago, even though it's been in the news for months. I still don't feel this country really takes it seriously. Have canned tomatoes?? This is one of my all-time favorite soups, and it requires minimal ingredients and a base of canned tomatoes! 🍅 You can definitely substitute dry basil for the fresh (just add dry spices in the beginning, not at the end like you do with fresh) and skip the little drizzle of cream at the end if you don’t have that. Yugadi Habba celebrations are muted this year for obvious reasons. My mood wasn’t upbeat to make anything special either . We ate the mandatory Bevu Bella ಬೇವು ಬೆಲ್ಲ (Neem-jaggery) in the morning thankfully as I had dried neem flowers at hand . As the afternoon grew though, I felt I should look at the glass half full rather than half empty and made a small quantity of super simple 3 ingredient payasa. Like they say, Shastrakke ಶಾಸ್ತ್ರಕ್ಕೆ . about 8 days back when I was taking stock of the pantry in preparation for the lockdown, I discovered my entire stock of the precious Karuppu Kavuni Rice swarmed by weevils. The sight itself was so disheartening; but I just couldn’t let all that deep purple hued rice go waste. . I did all that I could do, washed the rice several times, got rid of the weevils. Then segregated the rice into portions that I’d cook with in several ways. What all I did with that rice is a story in itself. Anyways, One tiny portion, I saved for making Payasa for today and I’m happy I could save the rice and cook with it too . I’ve normally be very conscious about food wastage. I know the value of each grain even more than ever before . . Because, too much work stress has happened 🙄 Since it is a 21-day lockdown and I am shit scared of running out of cylinder gas, I am not indulging in elaborate cooking sessions (also how are people getting all this time to chill and cook and do music and then even get bored...when I am hardly getting time to breathe! Vegan brunch of rice and beans with home marinated mushrooms and artichoke hearts from a jar. Served with avocado, salsa, olive oil, garlic, parsley flakes and cayenne pepper. It was delicious. I've nearly depleted my store of fresh veggies and am starting to use my canned and jarred food more. I wish I had thought to buy more canned vegetables and sauces, but I don't foresee having to go shopping again for a while. I'm in no hurry to go shopping. I marinated some fresh mushrooms last week with the remaining marinade from a jar of marinated artichokes, so good. 🍄🥑🍅🍚 I'm pretty stressed and cranky by being home bound and listening to the news about the virus. Vegan comfort food Sunday breakfast. @fieldroast Frankfurter, polenta, and fries with salsa. All baked in my trusty toaster oven with olive oil, garlic and thyme. 🌽🥔🌭 I hope everyone is doing well. These are scary times for all I know but I'm much happier now that the government is finally taking this seriously. I haven't left home in over a week. I've just been hanging out at home, chatting with friends by text or online, keeping up with the news etc... I've decided that in addition to taking precautions like isolation, social distancing, hand washing, cleaning surfaces, opening windows in communal areas etc... I'm going to assume that at some point I'll be exposed to the virus and I need to have a plan...
