Yummy raw applesauce for breakfast this morning!!! I love 🍎 🍏& always enjoy finding new ways to eat them!! Right now my fave is apple slices sprinkled with pink salt!! 1 out of my 3 kids finds this acceptable, the other 2 think it’s insanity!! What, doesn’t everyone meal prep at 6AM while simultaneously packing lunches? #momlife is usually pretty stressful and almost always busy. But a little pre-planning goes a long way! 5 ingredient paleo, gluten-free pancakes! 🥞 .⠀ I love upgrading a classic food like pancakes with healthier and simpler ingredients! Coconut flour, used in this recipe, is a great alternative to white or wheat flour because it’s high in fiber, protein and healthy fats. Coconut flour is also low in sugar and digestible carbs, and has a low glycemic index. All around wins!⠀ .⠀ Full ingredients and instructions below:⠀ .⠀ What you need:⠀ (Makes 4 pancakes)⠀ 1 ripe banana⠀ 4 large eggs⠀ 1/8-1/4 cup water⠀ 1/3 cup coconut flour⠀ 1/2 tsp baking soda⠀ *stevia if you like it sweeter*⠀ .⠀ What to do:⠀ 1 - Mash the banana with a fork⠀ 2 - Whisk eggs and combine in a bowl with banana, coconut flour, baking soda and the optional stevia⠀ 3 - Mix well then add an 1/8 cup to 1/4 cup water depending on desired consistency⠀ 4 - Heat a pan with some oil or non toxic spray oil⠀ 5 - Using a 1/4 cup, scoop pancake batter into the pan and shape into a circle. Cook for about 2 minutes each side on medium heat. (I covered pan with lid too)⠀ 6 - Repeat for 4 pancakes total⠀ 7 - Enjoy with berries or maple syrup. Story of my life... Another month down and I have not done ANYTHING 😭. But my gym has been closed for a whole month and going!! Even though it's not an excuse 😂. But recently things have changed. I think I got a motivational boost so I'm gunna take it an run! Not literally 😂 but a nice fast walk will do 😜. The size of a bagel has pretty much doubled in the last 20 years or so according to the National Heart, Lungs and Blood Institute (NHLBI). Most store bought bagels are pretty carb heavy (they are heavy and dense) providing >50g per serve. ⠀ Now it’s not that bagels are inherently bad, no food is bad. They are what they are – they often lack fibre, therefore the large amount of carbohydrate they provide is digested pretty quickly! A wholegrain English muffin or two pieces of wholegrain toast would be far better regular options to start your day, since they provide a more reasonable carbohydrate load. ⠀ ⠀ Now if bagels aren’t something your grabbing on the go on the daily, then don’t worry about it. ⠀ If you are grabbing a bagel daily, AND you are living with a chronic condition like diabetes, it might be something you need to be more mindful about. ⠀ Remember the less fluctuations in BGLs the less blood vessel damage even in someone with “well controlled diabetes” as determined by a person’s HbA1c. This has nothing to do with weight. Blood sugar levels are a great marker of a persons ‘health’ or level of control, which will impact their health 🙃 ⠀ I am all for ‘no restrictions’ with food and understanding that everything can be part of a healthy balanced diet (diet - the way you eat, lol). However I like people to be informed about their choices. Awareness around food choices, especially when living with chronic progressive conditions is essential! ⠀ How you might want to bagel: ✔️Go mini - A mini bagel was a regular sized bagel back in the day. ✔️Be mindful with toppings. I’m all about delicious toppings, but try and pair your cream cheese with a source of protein so you at least feel fuller for longer. You could also try a light cream cheese if it is a regular thing. ✔️Go for wholegrains where possible and if they are a regular occurrence! ✖️? Scoop out the middle - I’ve seen suggestions around this and honestly….if you are going to do this. Don’t. Get something else. Transformation/Throwback Thursday.. . . Left is a day before the PCA Finals, middle is day before NABBA UK & right is today, almost 8 weeks since the first pic.. Feeling happy with where I’m at for the start of improvement/off season, would like my legs to be less wobbly but it’s where I hold fat sooo what ya gona do 🤷🏽‍♀️ can’t be lean for ever!
