#daythree #gratitudeseries #gratitudechallenge It’s interesting to go through the day and have the rhythm of gratitude mark the passing of time like a ticking clock. Every hour and a half or so i’d think, and not tritely, “i’m grateful of this, i’ll include it in my gratitude series”. and then when it comes time to document said thing/event...it’s not realistic to capture it. So, i’m finding it harder than i anticipated, not at all from lack of things i am grateful for, it seems my cup runneth over. But to somehow have a presentable representation of it is the challenge...this one just jumped out at me though. It was coming to the end of the day and i knew i had to get my post done...and i found myself here. In the company of a compelling and comforting friend, blessed with this bounty of color, taste, texture...soft, sassy music playing...all such a gift. A gift of companionship, of food, of art and it presented itself so smoothly...i am grateful for the nourishment in my life. #thisiswhatnourishmentlookslike #gratefulforthenourishment #nourish . hah...i said it so many times it sounds like a funny sound now. #inspiredbymybigsister

Quinoa Bean Chili by rainbowplantlife⠀ Recipe⠀ Ingredients⠀ 2 tablespoons olive oil⠀ 1 large onion, diced⠀ 2 carrots, diced⠀ 2 celery stalks, diced⠀ 1 green bell pepper, diced⠀ 6 garlic cloves, minced⠀ 2 small jalapeños, diced (keep seeds for heat)⠀ Salt and pepper⠀ 2 tablespoons chili powder⠀ 1 tablespoon ground cumin⠀ 1/2 teaspoon ground coriander⠀ 2 teaspoons smoked paprika⠀ 1 teaspoon dried oregano⠀ 1/2 teaspoon allspice powder⠀ 1/2 teaspoon cayenne pepper⠀ 1 28-ounce can of crushed tomatoes⠀ 2 heaping tablespoons of tomato paste⠀ 2 cups vegetable broth⠀ 2 bay leaves⠀ 1/2 cup dried lentils⠀ 1 15 ounce can of black beans, drained⠀ 1 15 ounce can of pinto beans, drained⠀ 1 cup uncooked quinoa, rinsed⠀ 1-2 teaspoons of apple cider vinegar⠀ 2-3 tablespoons chopped cilantro⠀ Garnishes: additional cilantro, diced red onions, sliced green onions, sliced avocado, hot sauce, vegan cheese, vegan sour cream, etc.⠀ Directions⠀ 1. Heat the olive oil in a large Dutch oven over medium heat. Once hot, add the onion, carrot, celery, and bell pepper. Season with salt & pepper. Cook for 5 minutes until the vegetables begin to soften.⠀ 2. Add the garlic and jalapeños, season with salt and pepper, and cook for 1 minute or until fragrant.⠀ 3. Add the spices, stirring constantly for 30 seconds to 1 minute until fragrant and the spices have coated the vegetables.⠀ 4. Add the crushed tomatoes, tomato paste, broth, bay leaves, and a few pinches of salt and pepper. Stir to combine and allow the mixture to come to a simmer.⠀ 5. Once simmering, add the lentils. Reduce the heat to low and simmer for 15-20 minutes.⠀ 6. Add the black beans, pinto beans and quinoa. Bring to a gentle boil. Then, reduce the heat to low. Cover the pot and simmer on low heat for 20-25 minutes. Taste for seasonings.⠀ 7. Once off heat, stir in the apple cider vinegar and cilantro.⠀ 8. WHOLE FOODS // Smoothie Bowls ⁣ ⁣ When I first saw smoothie bowls I really didn’t get it ... why would I want to eat a smoothie with a spoon instead of drinking it through a straw?? Well it’s safe to say I’ve been completely converted!!⁣ ⁣ What I came to learn is it’s not really about the smoothie itself (although a delicious base is essential) it’s really about the beautiful toppings you put on it 😋⁣ ⁣ I’ll often have a smoothie bowl for dinner on the weekend if I’ve had an indulgent day or just fancy something quick & easy. Last week I tried out Creative Gourmet Açai Purée (instead of powder which I usually use) along with frozen banana, frozen berries, vanilla whole food powder and almond milk & topped with the fruits, seeds & nuts pictured 🌱 at Perth, Western Australia

Vanilla Almond Bliss Balls 💚 These babies are the perfect afternoon snack if you’re craving something sweet 👌🏽👌🏽. . ✖️1 cup pitted dates (pre-soak in hot water) ✖️3 Tbsp almond butter. ✖️1 Tbsp chia seeds ✖️1/2 cup oats ✖️1 tsp vanilla Blend ingredients together in a food processor and roll into small balls. Add more/less dry ingredients if needed to get the right consistency. Set in fridge for an hour and then their ready to go 👍🏽

Scrumptious budha bowl for dinner tonight! Even if you're not doing the challenge you can try this healthy recipe too! Ingredients: 300g raw chicken breast, chopped 1 cup canned chickpeas, drained and rinsed 2 carrots, grated 1 cucumber, chopped 1/2 cup avocado, chopped 1 tsp. coconut oil 1 tbsp. olive oil 1 garlic clove, crushed Method: 1. Heat coconut oil in a non-stick fry pan over medium temperature and cook the chicken with garlic for 7 minutes, turning occasionally. 2. In two separate bowls, evenly divide the chickpeas, carrot, avocado, and cucumber, without mixing the ingredients together 3. Add the cooked chicken to the bowls. Drizzle the olive oil over the chickpeas and season with Himalayan salt and pepper. 4. Serve one bowl and refrigerate the second bowl for another meal.

So, the other night I put the rice on the stove and reached for what I thought was quinoa to mix with it (as I always do), then realised once I'd poured it in, that I had actually reached for the chia seeds! I cooked it all up nonetheless and now the rice/chia is a lovely pudding to mix with fruit.
