I hope you like it as much as I do! ⭐️ ⭐️ Ingredients: 🔹 1 cup dates 🔹 1 cup prunes 🔹 1 cup almonds 🔹 1/2 cup cashew nuts 🔹 1/3 cup raisins 🔹 1/4 cup cacao powder . . Method: 🔹 Pit the dates and place them together with prunes and raisins into a food processor. Process until smooth. Some nights I do NOT want to make dinner. I mean, I have nothing else to do lately but wear an apron and pj's all day so I SHOULD be on top of dinner, right? Or not. For those nights, a one-pot, simple skillet is my plan. Ready in 20-minutes and there's substitutions too! My kids love it and it breaks up the regular "taco night" * * In a large skillet, brown 2 1/2 cups (12 oz bag) frozen rice cauliflower in 2 T olive oil for 5 minutes Drain excess water and TRANSFER to a bowl. (You could substitute and make white or brown rice if you prefer) In same pan, brown 1 lb ground chicken (or ground turkey) with 1 T minced garlic and 1/2 small onion, chopped As meat browns and breaks up, add seasonings (adjust to taste): 1-2 tsp chili powder, 1-2 tsp chipotle chili powder, 3/4 tsp paprika, 1 tsp cumin, salt and pepper. Cook 5 minutes Add 1 sliced green pepper, 1 sliced red pepper and cook 5 more minutes. Mix in cauliflower rice (or regular rice) Serve over salad or with corn/flour tortillas. Do you tend to always eat the same vegetables prepared in the same way, over and over again? I know I can get stuck in loops with my cooking, but every now and then, I try something new. This is my favourite way to eat beets these days 😋 (the first picture is golden beets, if you’re not familiar). Here’s how you do it: ✅ Start by boiling the beets, skin on, until fork-tender ✅ Rinse under cold water until cool enough to hold and remove peel, either by gently pressing with you fingers or with a pairing knife ✅ Cut into bite size pieces ✅ In a frying pan, cook 2 to 3 pieces of thick bacon until bacon is cooked but slightly underdone, leave bacon fat in the pan and set bacon aside ✅ Place beet pieces in the fat along with a small handful of raw walnut pieces and some lemon zest. Sautéed until slightly golden. ✅ Finish off with lots of fresh dill and lemon zest

🍪 PRODUCT REVIEW!!! 🍪 @bobsredmill #glutenfree chocolate chip cookie mix. 🚨 um, hello, these are amazing! 🚨 they have mini chocolate chips which I looove and the texture is perfect - chewy in the middle and crunchy on the outside. The only thing I would change would be a little extra vanilla flavor because I believe chocolate chip cookies must be jam-packed with vanilla and these were a teeny bit lacking on that front. However, I would *absolutely* buy this mix again and have already eaten 5 cookies 😌😙

Had a REAL talk tonight with someone I knew from high school about what is happening in the world. She spoke about this situation going on, and I was glad to hear someone finally say what I’ve been thinking. I keep my distance during the day from social media - especially during the HIGH usage rate times, and refrain from clicking on people’s LIVE videos and/or profiles. It’s great to keep people motivated. But, there is a boundary line that should be drawn. If you are NOT being productive during this time, not tuning into the latest online at-home workout, not following the new “at home diet” to not get bloated. That’s fine. As a matter of fact, I’m so much more proud of those who choose not to be any more or less active or productive than they normally are. They key thing to focus on during this time is that this pandemic is not NORMAL. This isn’t normal at all. Life was never like this before, and it’s OKAY to be confused and worried. Im not in the right mindset to suddenly make myself better and put more effort into working on myself. This is a scary time. The entire world is going through this - not just you. So if need be, sit on your couch and eat chips for breakfast and a salad for lunch and a burger for dinner. I don’t care, eat what you normally eat. Just KNOW that this is NOT NORMAL. Be realistic and refrain from the unrealistic. The chilis added some great heat, but if you’re not a fan of spice, leave them out. I figure now is the best time to test these box services. Loaded with a ton of nutrients including chlorine, b12, b2, b5, selenium + much more. Enjoy an array of nutrients from this meal with the perfect mix of protein, good fats, veggies and whole food carbs ❤️⠀⠀ —⠀⠀ 4 ingredients:⠀⠀ 2 medium free range organic eggs⠀⠀ 1 medium sweet potato - spiralised⠀⠀ 1 tsp ghee⠀⠀ Handful of Russian / black kale (calvo nero)⠀⠀ —⠀⠀ Instructions:⠀⠀ 1. I've never been more proud of a meal. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ROASTED CARROTS: salt then roast at 375 for about 30 mins ⠀⠀⠀⠀⠀⠀⠀⠀⠀ RAINBOW CHARD: sautée rainbow chard with EVOO, shallots, garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀ SPAGHETTI SQUASH: (wow) i'm annoyed at myself for not trying sooner. I looked up how to cook it and it went splendidly. The sauce is where it's at though: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ALMOND TOMATO CREAM SAUCE: Blend 1 cup soaked and peeled almonds, 1 cup water, roasted garlic, red pepper flakes, lemon and salt in a blender - taste until its right! Next, make pink sauce: Saute garlic, mushrooms and shallots then add half a jar of marinara, I used @montebene. Cook for a few then add the cream! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It's a v special meal

I used @sietefoods Almond Flour Tortillas and did a homemade guac and a paleo Chipotle Crema using @culinayogurt Coconut Yogurt with some @sirkensingtons Avocado Mayo, Chipotle Peppers, and a few other things! - This is essentially the same recipe as the Chicken Burrito Bowl I made last week! Burger Bowl for an easy lunch today 🍔 Had one of these burgers from Sunday in the freezer (I’ll put the recipe below) 👇🏻 Paired with the last of my prepped veggies from Sunday! Added some bacon in there for good measure 😉 - - Also I just wanted to say I’ll continue posting what I’m eating/new recipes but am definitely aware of everything going on in the world. It’s hard to convey that in every post but just know I’m thinking of everyone who is anxious or nervous. Like I said, I’ll be sharing recipes and what I’m eating but it definitely feels weird. Just remember to be kind to each other in crazy times like these and help each other out when you can❤️ - - Burger recipe: 1/2 diced onion + 1/2 cup chopped mushrooms + 1/2 cup chopped spinach for 5 minutes in olive oil. For the burgers, add in all the sautéed veggies with 1 lb ground beef+ all of the veggies I sautéed + 1 tsp garlic, 1/2 tsp onion powder, 1 tsp chili powder, sprinkle of salt. Formed 7 burgers. Cooked over medium heat in olive oil for 5 minutes on each side then added to the oven at 425F for 5 minutes. Always check the internal temp to make sure they’re done. Paleo Air Fryer Buffalo Cauliflower Wings 🤩 had perfect weather today in Tulsa and so we are grilling out and made these cauliflower wings for an appetizer. They’re healthy, so easy, and have the perfect amount of kick 🌶 macros and recipe below⬇️ Macros: C=10g; P=7g; P=8g Ingredients: • 5 cups cauliflower, cut into florets • 1/2 cup buffalo sauce (make sure it’s paleo friendly) • 1/2 cup almond flour (my favorite is the one from @traderjoes) • 1 tsp seasoning salt (I used @lawrysseasoning) • 1/2 tsp black pepper • 1/2 tsp garlic powder • 1/2 tsp onion powder • 1/4 tsp paprika Directions: • preheat air fryer to 350°F • in a large mixing bowl, combine the cauliflower and buffalo sauce • in a small bowl, combine the almond flour, seasoning salt, garlic powder, onion powder, pepper, and paprika • add the flour mixture a handful at a time to the cauliflower and mix well, repeating until everything is fully coated • add half of the cauliflower to the air fryer and fry for 15-16 minutes or until browned to your liking, shaking them every few minutes • remove the first batch and place in a bowl or plate and set aside • repeat with the second batch of cauliflower and serve with celery and ranch dressing
