Balance with Hydrocephalus?! 🤦🏼‍♀️ Yeah, right, I’ve seen unicorns, too! Ever since I was diagnosed with Hydrocephalus and a brain tumor age 18, I have been told that balance will be a huge problem. And it has, but I decided that I won’t let my illness define what I am or am not capable of, while I can, and I started training my balance and the strength of my legs. I workout almost every day, focusing on my legs :) . . It is tough and sometimes I feel very tired after that, but working on my leg muscles has made it possible for me to run 5 full road marathons, and 3 mountain trail ultramarathons, one of which just 4 weeks after #pcos surgery, and with my disease 💪🏻🦵👟🤘 This is one of my greatest achievements in life, beating all odds and being able to prove that everything is possible :) . . How many times do you want to give up when things get a little bit tough and a little bit uncomfortable?? I had this thought on my run this morning. Some of my runs are full of energy from start to finish and some..like today are tougher. I know now that it’s all to do with where I am in my cycle, so I have learnt to give myself a more direct talking to. On these kind of runs, it always takes at least 15 minutes to get into my stride...so I have to literally talk myself into not giving in. I call this 15 minutes ‘WARRIOR MODE’. I put my blinkers in and go for it. No matter how slow. No matter how painful. Then it’s done. And guess what? I survived!!!! What if you just hung on that little bit longer and push through towards success?? Think of the magic you might find. I can’t tell you when the moment comes, it may be in 15 minutes, a day, a week, a year even, but it will come. Apply this to any goal you have and don’t give up. 🍒COMPOSTA DI CILIEGIE senza zucchero 🍒 🔼1000 g ciliegie (senza nocciolo) 🔼60 g Stevia 🔼40 ml Succo di limone 🔼2 Mele medie 🥄Con questa ricetta a me sono venuti 3 vasetti da 300g. La mela serve per la pectina naturale ( 1 mela ogni 500 g di frutta)🍏🍎 ⚠️È importante la sterilizzazione dei vasetti: ho messo i vasetti e i relativi coperchi in un pentola piena di acqua e portato a bollore. Ho lasciato in pentola per ca. 20 minuti. Poi con una pinza ho tirato fuori i vasetti e li ho messi su un panno da cucina a testa in giù, in modo da eliminare l’acqua all’interno. ⚠️ 🌳Ho raccolto le ciliegie nel mio giardino, nel mio caso sono biologiche.. Le ho comunque lavate con un po' di bicarbonato. 🙌🏻Poi ho iniziato a togliere i noccioli a mano libera, stringendo un po' le ciliegie con le dita. Esiste anche uno strumento per togliere i noccioli, ma io non ce l'avevo. 😁 sono andata bene lo stesso.. Giusto che ci si sporca un po'. 👉🏻Ho fatto macerare la frutta con il succo di limone per 30 minuti, in modo che faccia fuoriuscire il succo della frutta. 👉🏻 Poi ho unito la mela tagliata a pezzetti alle ciliegie, la stevia e ho messo il tutto in una pentola abbastanza grande. ⏱️Ho lasciato cuocere a fuoco basso per 1 ora. 🚩A metà cottura circa ho frullato con un mixer a immersione la frutta, perché così risulta più semplice da spalmare. 🔚 infine ho versato la composta nei vasetti, li ho chiusi e li ho capovolti in modo tale da fare il sottovuoto. 🌠 😊mi ricorda tanto la marmellata di ciliege che faceva mia nonna quando ero piccola.. Mmmm meatballs😍 I needed to use the left over burgers I made yesterday for the BBQ and decided to make them into meatballs and yum! Meatballs made out of 5% fat steak mince, onions, paprika, garlic powder, salt and pepper! Mixed in with passata, chopped tomatoes and garlic🧄( SPEED for ALL)🍅, paprika,salt and pepper. Supposed to be red velvet but I didn’t put much in as it was out of date🤣! But these bad boys are 1 syn each or 1/2 a Syn if you don’t count sweetner😨WHAT?! I hope everyone is staying safe during these crazy times. My heart is heavy watching what is happening across this country. Strive to make a change at the local level...start with what you teach your children and then be a positive force in your community! We still all have our daily grind that we have to do no matter what is going on around us. One of the issues I have been having is not having time for lunch. Literally..I walked around with a veggie burger in my hand waiting on customers the other day..i hate That! You don't even realize you ate, I hate eating in front of people and honestly, 5 minutes to sit would be nice! To help with that problem I made overnight oats for lunch. That way I was able to grab the jar and a spoon and it was filling and easier to eat on the go! Recipe: 1/2 c. Thick oats 1/4 c. Almond milk 1/2 c. Cashew yogurt 2 tbsp. 🔺🥄GRANOLA HOMEMADE senza glutine senza zucchero 🥄🔺 ⚠️ Non riesco mai a trovare nei supermercati una granola che possa mangiare, essendo allergica a gran parte della frutta secca, anche quelle senza zuccheri o latticini sono letali per me 😥 😇 Così ho deciso, finalmente, di farmela in casa! ✔️Ho preso spunto dalla ricetta di @le_ovaie_di_porcellana , che ringrazio 😍😎 INGREDIENTI : 🔸100gr fiocchi di avena sg 🔸25gr quinoa soffiata 🔸10gr semi di girasole 🔸15gr semi di zucca 🔸10gr semi di lino 🔸10gr semi di sesamo 🔸12gr semi di chia 🔸31gr anacardi al naturale 🔹30gr sciroppo di agave 🔹35gr olio di cocco sciolto 🔼1 cucchiaino di cannella ➡️Ho messo nel mixer i fiocchi di avena, con gli anacardi e i semi di zucca. Li ho tritati in modo grossolano. ➡️Ho messo in un recipiente quindi i fiocchi, anacardi, semi tritati, ho aggiunto gli altri semi, la cannella e la quinoa; ho mescolato bene con un cucchiaio . Since today is the last day of Mental Health Awareness Month, I wanted to talk about a topic that is close to my heart: PCOS and mental health. Many women with PCOS also have mental health issues such as depression and anxiety. . This is something I’ve personally struggled with over the years and there were points in my life where I thought I was just crazy, or it was all my head, or that I couldn’t overcome the anxiety I faced daily. When I found out that anxiety and depression are linked to PCOS about a year ago, it validated my feelings and gave me hope that it was something I could work on. If you are going through mental health struggles, with or without PCOS, your feelings are valid. They are also overcomeable 💜 . Some days are much harder than others, especially during a pandemic, but my anxiety has gotten much better in the last year! Some things that helped me in the long term are working on my eating habits (curbing cravings and binges) and practicing more self care (exercise, taking my vitamins/supplements and spending more time on my hobbies). If I’m feeling particularly anxious in the moment, I find it helpful to talk to a friend, take some deep breaths or pray. It may take some time to figure out what works for you, but don’t give up and keep looking! I’ve linked some helpful articles about PCOS and Mental Health in the google doc in my bio! Cortisol is such an important hormone, and is not given enough attention to which results in prolonged symptoms and an increase in androgen production.⁣⁣ ⁣⁣ ⁣⁣ Previous studies have suggested that cortisol (often known as the stress hormone) is dysregulated in PCOS, primarily through increased hypothalamic-pituitary-adrenal (HPA) axis activity and enhanced cortisol secretion. My 2 outfit choices for the day, got way too hot being that covered up in the play suit so decided to rock my curves and change into a sports bra and shorts! This was very scary for me as we were sat in the front garden (it gets the most sun) and there were people passing by constantly but I got over it quickly since I was burning up otherwise lol. --- I started 2020 in a complete negative mindset about my body and since then I've worked so hard on changing my mindset and loving my body and appreciating it! Pudina (mint!) quinoa with a side of eggs, carrots and cucumbers - or possibly zucchini, I honestly can’t tell the difference 😳 . Even just a couple months ago, I would’ve just ate the pudina quinoa and called it a day, but I am trying to work on balancing my meals with more protein and vegetables! It’s been challenging finding this balance as a vegetarian, especially with very little resources on how to do it, but it is definitely worth the effort! Since starting this journey, my mental health and my mood have gotten way better!
