I made two different versions of flatbread pizza. I didn’t want anything too heavy or acid rich like tomato sauce. So I had a little fun with some @lostvegasforever BBQ sauce and cashew cheese. The cashew cheese is made in a pepper jack style so there’s some nice flavor with mixed bell peppers. The flatbread on the left is #claimex style with avocado and sweet peppers. The one on the right is simply cashew cheese and mixed mushrooms. Hang in there everyone. Crispy oven-baked Potato Wedges 🔥 with fresh Guacamole for good measure! ⠀ Recipe by @xanjuschx ✨⠀ 4 medium sized yellow potatoes⠀ 3 tbsp olive oil⠀ 2 tbsp all-purpose flour⠀ 1 tsp paprika⠀ 1 tsp garlic powder⠀ 1/2 tsp onion powder⠀ 1/2 tsp salt (or to taste)⠀ ⠀ Instructions 💥 ⠀ Preheat oven to 425ºF/220ºC.⠀ Scrub and wash potatoes well. Pat dry. Cut into wedges (each potato was cut into 8-10 wedges) and toss with 2 tbsp olive oil to coat (reserve 1 tbsp for the pan).⠀ In a small bowl, stir flour, paprika, garlic powder, onion powder, and salt.⠀ Sprinkle over oiled potato wedges and toss to coat.⠀ Prepare a baking sheet with the remaining 1 tbsp oil. Arrange potato wedges to stand up on the potato skin side. If some fall over, no big deal!⠀ Bake for 35-40 minutes until edges are crisp and golden, and the sides are golden.⠀ Remove from heat and serve. What you need: 2 pounds of russet potatoes peeled & one medium onion peeled, 1/2 cup matzah meal (sub cornmeal) , 2 vegan eggs (I used 2 tbl flax meal/6 tbl warm water/ whisk/ wait till thickens) juice of one lemon, 1/2 tsp fresh pepper, kosher salt, grape seed oil (sub peanut oil) 1️⃣ Spiralize potatoes & onion. Then pat down potatoes & onions to absorb extra moisture with a kitchen towel. Place in bowl, mix together onion & potatoes, flax egg, matzah meal, lemon juice, salt& pepper to potatoes. Mix well. 2️⃣Now you are ready to make your latkes: Using a 12 inch heavy bottomed pan, add 1/2 in oil & heat on medium/ medium high heat. When you feel high heat 6 in above pan, it’s ready 3️⃣Scoop 1/4-1/3 cup mix mixture and form into a ball and push down. Place into skillet using spatula, press down. I fit about 3-4 latkes in the pan per batch. 4️⃣When latke edges turn brown (about 3-5 min) it’s time to flip. Fry for another 3-5 min. Repeat. Place on large baking sheet lined with paper towels Recipe makes about 16-20 latkes. Serve with sour cream and/or applesauce. "Wet Ingredients ⠀⠀ ⠀⠀ 4 chia “eggs” (4 Tbsp chia seeds (preferably ground, but can use them whole)+ 180mL water, mixed and set aside until thickened)⠀ 1/2 cup vegan butter⠀⠀ 1 1/2 cup coconut sugar⠀⠀ 1 cup plant milk of choice⠀ ⠀⠀ Dry ingredients ⠀⠀ ⠀⠀ 2 cup (250g) white spelt flour⠀⠀ 2 tsp baking powder⠀⠀ 1 cup cacao powder⠀⠀ 2 tsp pure vanilla extract⠀⠀ 1/2 tsp good-quality salt ⠀ 1 tsp ground cinnamon⠀⠀ ⠀ Topping ingredients ⠀ 3-4 beurré Bosc pears, peeled, halved and cored. ⠀⠀ 2 Tbsp vegan butter⠀⠀ 2 Tbsp coconut sugar ⠀⠀ ⠀⠀ Method⠀⠀ ⠀⠀ 1. Preheat oven to 170C/340F⠀⠀ 2. Add the 2 Tbsp vegan butter and 2 Tbsp coconut sugar to a fry pan and brown over a low heat (be careful not to burn- cook until just fragrant). Pour this caramel into the base of an 8 inch round cake tin, then Place pears cut-down on top. set aside. ⠀⠀ 3. Add all the wet ingredients to a saucepan, and melt over a low heat, whisking throughout. Once melted, remove from heat and set aside.⠀⠀ 4. Sift dry ingredients into a large mixing bowl. Combine, then add the cooled wet ingredients. Mix to combine, then Pour batter over pear base and smooth with a wet spoon.⠀⠀ 5. Bake for 30-35 mins, or until an inserted skewer is removed with only a few crumbs intact. ⠀⠀ ⠀ Allow cake to cool for 10 mins in the tin, before carefully flipping onto a plate and serving immediately with ice cream or yoghurt. ⠀ Note- this cake is best served warm, after baking. Due to the fruit in the cake, it will not keep well (the fruit juices will cause the cake to become soggy on standing) but, if you do have leftovers, refrigerated to help it keep/stop the fruit juice leaking into the cake. Shepherd's Pie...literally 🤭🤤! In order to cut down on dishes and cleaning time 😏, I made this delicious Shepherd's Pie in a cast iron skillet and then I cut it into pie slices 🤷🏼‍♀️. I used #gardein beefy crumbles as the base, along with a ton of veggies like onions 🧅, carrots 🥕, edamame (in place of peas) and chopped kale 🥬. A side of sauteed spinach 🍃, shallots and garlic. Since this was my hubby's plate 🙋🏼 and because he may love bread 🍞 more than me 🤔😉, I added a couple slices of homemade focaccia 👩🏼‍🍳. Such a yummy dinner and cleanup was easy peasy. Do you eat enough spinach? Here’s a super easy snack that’s packed with pumpkin and sunflower seed protein, loaded with nutritionally rich spinach, full of vitA, vitC, calcium, iron and more. Soak sunflower and pumpkin seeds, drain and blend smooth adding lots of spinach with garlic, miso paste, nutritional yeast, a couple of spoons of homemade basil pesto and a couple of slices of German style rye bread. Add water while blending to achieve a thick paste. The ingredients can be adjusted, starting with about 100g of each of the soaked seeds and adding as much garlic, pesto and spinach as you like. Spread the mixture out on a parchment sheet. Place on a large flat tray in the oven, set the temperature to around 60c-70c with the fan on, use a rolled dishcloth to hold the oven door slightly open. Leave the sheet to dehydrate for 4-5 hours, the longer the crispier it will get. I had some drying at 60c overnight for about 6 hours. Great to eat with hummus, or break up and toss with a salad. Crush some up into crumbs for a sprinkle seasoning. My baked cheesecake tastes JUST like the real thang, with a perfect cream cheesy texture - I’m so happy I created this - because cheesecake was always my FAVORITE cake . Here served plain, I usually top it with homemade strawberry jam, mango agar “jelly” or my salted caramel 👌 For the crust I make quick cookies with palm sugar and whatever healthy gf flour I have on hand, ( when Tash @tashtagg and I made it we used ginger snaps ! ESALADA DE DURAZNOS UFF!!! 😍😋 . . Ve a mis historias por el paso a paso. Hoy preparé un aderezo de durazno y la ensalada de duraznos, espinaca, nueces y coco natural 😍 quedó buenísima!!! Súper fresca, el sabor y aroma del durazno mas las nueces caramelizadas con maple y pimieta negra le da un sabor delicioso, los tropezones con el coco neutralizan un poco el sabor, agrega textura y el toque del aderezo queda espectácular. Espero todo el año para este momento especial en que llega Paty mi sobrina @patydeheza con una bolsa gigante llena de duraznos 🍑🍑 nada como la fruta directa del árbol! en el súper no consigo duraznos con este sabor tan delicioso. Los muy maduros terminanaran en mermelada o pie y eso también me encanta. 👉si no eres vegetariano puedes agregar queso de cabra, la mezcla de duraznos y queso de cabra es deliciosa. Los hice en el hornito pero también se pueden hacer en un sartén o comal a fuego bajo. . There is a misconception that a plant-based diet requires high-dose Vitamin B12 supplements. I'm discussing vegan options for B12 in this post because those who eat meat and fish get more than enough B12. So let's learn how a vegan diet CAN get the daily B12 requirement 🌱. _ 🔹️B12 daily requirement is 2.4 mcg (microgram, not milligrams). It is a water soluble vitamin, which means excess intake will be excreted by the urine after some is stored in the liver. _ 🔹️This small daily requirement can be found in common plant-based options including nutritional yeast, fortified cereals, fortified non-dairy milk and @yvesveggiecuisine. I checked Beyond Meat and their products do not have B12. _ 🔹️Common supplements of B12 contain 500-1000 mcg of B12 which is way above the daily intake of 2.4 mcg. _ 💉B12 deficiency is not always a dietary issue. Polenta pizza: easy delicious healthy experience! . I love it as a light dinner, it is delicious and filling. The crunchy hazelnuts make a great contrast with the soft polenta and juicy tomatoes. The colours make us travel to Italy for the evening. Try it, you will be amazed how simple tasty ingredients combined together make a wonderful dish. . 🥣RECIPE 📝 . You need : 250g fine polenta 300g cherry tomatoes, cut into halves 1 big zucchini, finely sliced lengthwise 1 handful baby spinach leaves 1 handful roasted hazelnuts, chopped Few basil leaves Olive oil . 1️⃣ Cook polenta as recommended on the pack 2️⃣ Pour it into a round pie dish covered with parchment paper 3️⃣ leave it aside to slightly cool down 4️⃣add evenly zucchini slices and tomatoes on the polenta 5️⃣drizzle with olive oil, add salt and pepper 6️⃣cook in the oven for 20 min at 210 degrees 7️⃣take it out of the oven and top it with the spinach and basil leaves and sprinkle hazelnuts .
