I haven’t made this bread for a while but I remembered it after listening to @doctors_kitchen podcast (highly recommended) where they were chatting about it. It’s called the “my new roots life changing bread”....google it for the exact recipe. It’s grain free, gluten free and vegan. It’s also incredibly nutritious as it’s packed with seeds. It uses psyllium husk to make it spongy (kind of spongy anyway) which is full of fibre and great for anyone with slow digestion! It also freezes really well as my kids don’t quite agree on its life changing properties so I usually slice it and put half of it in the freezer. Oh and it’s also a really versatile recipe as you can substitute in any nuts of seeds that you happen to have in the cupboard. Ensuite je laisse «gonfler » cette préparation toute la nuit. 💫 . . . . ✏️Ce matin j’ai simplement rajouté une demi banane, du granola, des pistaches, des graines (courge et chanvre) et de la purée d’amandes. . . L’avantage de ce petit-déjeuner c’est que l’on peut doubler ou même plus les quantités pour deux ou trois jours pour gagner du temps. If you don’t let the dry out enough, they’ll be chewy. Do any of you have a great tried and true recipe? This year I was too lazy to mess with the seeds and got some already roasted. I love snacking on them by themselves or adding them to a salad. Pumpkin seeds can be a good source of healthy fat, fiber, and protein. They also are high in antioxidants and can provide nutrients like magnesium, phosphorus, manganese, and zinc. They may also be beneficial with blood sugar levels and supporting prostate, cardiovascular, and liver health. Makes a delicious snack or treat! . . • 4 LARGE EGGS • 15 can PURE PUMPKIN • 1 cup APPLESAUCE, UNSWEETENED • 3/4 cup MAPLE SYRUP . • 2 cups WHITE WHOLE WHEAT FLOUR • 2 tsp CINNAMON • 1/4 tsp NUTMEG, GROUND • 1 1/2 tsp BAKING POWDER • 1/4 c PUMPKIN SEEDS . • 1/4 c WALNUTS . •1 tsp BAKING SODA • 1/2 tsp SALT . 1. Preheat oven to 350F. Grease a 9 x 13″ baking dish and set aside. 2. Whisk first 4 ingredients (eggs, pumpkin, applesauce and maple syrup) together in a large bowl until smooth. Golden Gusto! Hands down to my new fav bake from WPC! I always grab the yam one (bc i prefer yam) but yesterday I tried the pumpkin one instead and WOW man!!!! The pumpkin seeds were soooooooo perfectly toasted! The pastry, as usual, is SO GOOD!!! Every bite into it gives off that crisp sound that is so addicting 🤩 omg they can literally just sell this without the pumpkin and mochi inside. I swear just the pastry on its own with the toasted pumpkin seeds is enough to make you go back often just for this!!!

29 degrees here in New York?!! 🥶❄️Means it’s soup season and let me tell you that’s all I want to eat when the temperature starts dropping!! Tonight I made a super delicious squash soup with a combination of butternut squash and acorn squash spiced with some cinnamon and cloves😍this warm fall spiced soup hits the spottt on these freezing days😊😊 -toss butternut squash cubes, acorn squash cubes, diced apple, and diced white onion in olive oil and salt/pepper. Black Truffle Salt Roasted Chicken, Part I: I looked for jarred bits of black truffles, but could not find them, so I went with black or summer truffle salt. It smells great, although to be honest I’m not sure it adds so much to the flavor. If you can find and like the jarred crushed or pieces of black truffle, you may use them. I would not recommend using full slices or fresh truffle, unless you don’t mind an expensive dish. The chicken was accompanied by sautéed kale and roasted delicata squash and roasted mushrooms. Pre-heat oven to 450 F. For the chicken, first pat very dry with paper towels inside and out. The USDA recommends that you DO NOT wash the chicken before cooking. The splashing water will spread any potential salmonella into your kitchen, and the heat of the oven will kill it Next, put a slice of butter under the skin over each breast. Add pinches of the truffle salt with the butter. Add the truffle salt to the cavity of the chicken (after removing any giblets!) with freshly ground black pepper, and rub pinches of the truffle salt over the breasts, legs and wings of the chicken, pressing it into the skin. Place in a roasting pan and roast for 1 hour to 1 hour 15 minutes, depending upon the chicken. I test my chicken by cutting into the body where the leg meets the breast. If the juices are no long pink or red, the chicken is done. The USDA recommends cooking the chicken to an internal temperature of 165 F. Black Truffle Salt Roasted Chicken, Part II: To prepare the veggies, clean and prepare the delicata squash by slicing in half the long way, removing the seeds, then slicing the halves into half moon shapes. Add to a bowl with olive oil, salt (I used whiskey salt), unpeeled garlic cloves, pumpkin seeds and pignoli nuts, and freshly ground black pepper. If you prefer your squash sweeter, you can add a little maple syrup or honey. Mix well. Add to a roasting pan. For the mixed mushrooms, clean, trim and slice the mushrooms, add to a bowl with olive oil, unpeeled garlic cloves, salt (I used whiskey salt) and thyme leaves. If you have time to freeze the thyme, the leaves come off more easily. Mix well, and place in a roasting pan which may be the same as the squash, placing them side by side. The squash and mushrooms will need 30-45 minutes to roast depending upon the size of the slices and where in the oven the pan is placed. Clean the kale, removing the stems. This is done pretty easily by folding each leaf along the stem and pulling the leaves away from the stems. Tear each leaf into large pieces. After rinsing and draining, add olive oil to a large, lidded pot, add crushed, peeled garlic cloves and red pepper flakes. When the garlic has been browned, add the kale. BE VERY CAREFUL. THE WATER FROM THE KALE WILL CAUSE THE HOT OLIVE OIL TO SPLATTER AND CAN BURN YOU. Once you put a large quantity of the kale into the pot, quickly put the lid on the pot to prevent further splattering. When the splattering has died down, turn the kale in the pot to distribute the oil. Add the rest of the kale in batches, turning and adding salt after each batch. When all the kale has been coated in oil, reduce heat to medium, put on the lid, and allow the kale to cook in it’s own juices. When the chicken and veggies are ready, plate, pouring some of the chicken jus over the chicken. How many of you just love pumpkin seeds? I remember when Ammi used to make pumpkin aka Kaddu she used to make us wash the seeds and we would dry it in the sunlight and enjoy it the most.
