What is Heart Healthy, Really? [Part 1] · Everything knows that wild fatty fish like Alaskan salmon is heart healthy and packed with omega-3's. · But what about otherwise eating plenty of while grains, legumes, and fruits? These choices, even with their sightly higher fiber content, can send your blood sugar on a roller coaster ride, all, for the most part, without providing many nutrients. (Did you know that many whole grains and legumes are essentially devoid of vitamins if they're not soaked and properly prepared?) Sugar is more damaging to your blood vessels than fat, contrary to conventional wisdom. · So what should you do? First, find your *optimal carb intake, then enjoy winter squash such as pumpkin and butternut/acorn/kabocha squash, and tubers such as carrots, sweet potatoes, and cassava. · This is the first part of my Heart Healthy Myths series where I debunk common nutrition misconceptions. Coziness is something that should not be exclusive to the weekends, amiright? The weeks are long and taxing for us college students, which means we ought to take every chance we get to make ourselves calm, collected, and comfortable. What better way to do that than with a nutritious, delicious, seasonal soup! And a recipe that’s quick and easy enough for a weeknight to boot. Ingredients: - 1 small squash, cubed (1-inch) - 4 large carrots, cut into 1-inch thick rounds - 1/2 large white onion - 3 cloves garlic - 3-inch piece fresh ginger, peeled and roughly chopped - 1-inch piece fresh turmeric, peeled and roughly chopped - 1 cup canned full-fat coconut milk - 3 1/2 - 4 cups vegetable stock - 1/2 tsp nutmeg - salt and pepper to taste Directions: 1. Roast squash, carrots, onion (just leave halved, no need to chop), and garlic in a pan at 350F (convection) for 40 minutes. You don’t need to drizzle with olive oil for roasting, but you can if you prefer. 2. Remove from oven and place in blender along with remaining ingredients. 3. Blend until smooth. 4. Add more vegetable stock if you prefer soup to be thinner. 5. Reheat in pot if necessary. Another great thing about soup is that there’s no better excuse for eating some freshly baked bread. 🍳 BREAKFAST🍳 🍴 🍴 I was asked at the seminar the other day what I eat for breakfast. Here is a great example. It’s 15 shrimp with 5.5 oz cauliflower “grits” seasoned with chipotle and black beans and then 5 oz cast iron Brussels because 🔥. 🍴 Cauliflower and brussels are both part of the brassica family aka cruciferious vegetables. Rich in vitamins, minerals, fiber and phytonutrients- they are a powerhouse of nutrition. They are known cancer fighters and great anti inflammatory foods. 🍴 Check out the nutrition profile!! (Those aren’t my daily goals btw... they fluctuate) Only 300 calories and I’m stuffed. In order to enhance performance, body comp, recovery etc I tend to time my nutrients the closer I get to a meet. This allows me to fuel my body with what it needs during training. AKA carbs around training time giving me the energy I need. 🍴 Yes. This is pretty typical. It’s nutritious, satisfying and tastes pretty damn good. So no, sorry. I work as a health and nutrition coach helping people make better choices, lose weight, and lead overall healthier lifestyles. I cannot even begin to tell you the number of people who have been SO misguided on what to eat by diet culture. It’s nuts. (No pun intended.) From podcasts to audiobooks to TV shows to word of mouth, people have been so overwhelmed and let down by “quick fix” diets that leave a bad taste in their mouth about “healthy eating” for years to come. And yes, some of that information comes from social media as well! So please. Practice what you preach on social media. Show people what real healthy lifestyles look like. Perhaps did something that scared you or even changed you for the better; maybe it actually improved your life? * * Here are my top 3 tips that I have used to help me through my triathlon journey...something I told many people I would NEVER do. * * +Set a deadline Most people are always getting ready to get ready. The date sets the tone for your journey, your long term goals and short term. For me the date has been my triathlon race. This puts into play all the things necessary to be ready on race day. Without the magic of this date it would have been very easy for me to have never started. * * +Create a Schedule Now that you have your date it’s time to create the best schedule for you that fits your goal & lifestyle. Failing to plan is really planning to fail. I pulled out my calendar and began to schedule in “ME” time and was sure to treat it like a meeting that could not be missed! * * +Do the work BUT enjoy the ride! Unfortunately this is where most will stop. Some come in with that all or nothing attitude and fall flat on their face. Chip away slowly and build from there. And many miss one important thing...be sure to find the positive moments along the way. * * I challenge you today to get out of your comfort zone! Much anticipated Zoodle Shrimp Scampi recipe, you guys will want to save this one ••• Ingredients: -2 zucchini’s spiralized -Handful of whole wheat spaghetti, cooked according to package -1 plum tomato, diced -1 ear of corn, cooked and cut off -3 cloves minced garlic -10 oz of shrimp (I bought frozen with the shell and ran them under cold water, the peeled the shell off. It’s way cheaper than fresh and just as good!!) -2 tbs butter -1 bunch of mint, chopped finely -salt, pepper and red pepper flakes to taste Directions: 1. Hear skillet to medium high melting 1 tbs on butter, add the shrimp. Cook on one side for 2 mins and flip. Cook on other side for 2 mins until opaque. 2. Remove shrimp from pan and add another tbs of butter. Add corn, tomatoes and garlic. Simmer for about 2 minutes. Add half of the chopped mint and zoodles. Cook for another 2 minutes. 3. Add cooked spaghetti and remaining mint. Continue tossing and top with salt, pepper and red pepper flakes to taste. Enjoy! Simple swaps to make the recipe easier- use canned corn and tomatoes instead of fresh, and cooked shrimp instead of raw! Hope you guys enjoy and tag me if you make it 😋

I’m not one to take selfie’s at the gym 😂 But I had to capture my growing baby bump because I am just so exited to be pregnant! Also I’m finally feeling good enough to be working out again 👊🏼 - It’s okay to take a break from working out. Remember to listen to your body! For a few months it was more important for my health and the babies that I took it really easy. Plus morning sickness can be rough! We all have different bodies and various stages of life. Enjoy physical activity that makes you feel good, but don’t feel bad if you need some rest and recovery time too! 👍🏼

Not only do added sugars come from obvious places like sugar added to your morning coffee or sugary sweets, they also come from unexpected places like condiments, pasta sauces, and yogurts. The World Health Organization recommends less than 5% of total calories per day be from added sugars (this would be 25g, or 6 teaspoons, for a 2000kcal diet). I got this quinoa and kale salad from @costco (but pretty sure I’ve seen some version of this at almost every grocery store) just add your choice of quality protein (animal or plant based) and you’ve got dinner done 👍🥗 I really like salads like this because they’re loaded with veggies and whole grains (meaning they keep you full and satisfied for a while) and can be served hot or cold. Made my red enchiladas and Kevin said “this is my favorite thing you make” so you know it’s husband approved! I used @sietefoods almond flour tortillas... sooo good! Recipe below! •••••••••••••••••••••••••••••••••••••••••••••••••••••• INGREDIENTS: 1 lb. lean ground beef or tofu crumbles 1 small onion 2 garlic cloves, minced 3 TBS. salsa 1/2 tsp salt 2 cups shredded cheddar cheese 20 oz. red enchilada sauce, divided 1/4 cup olive or avocado oil 1/4 cup whole wheat flour (or gluten free) 1/4 cup whipping cream 1/2 tsp ground cumin 2 packages @sietefoods almond flour tortillas •••••••••••••••••••••••••••••••••••••••••••••••••••••• DIRECTIONS: Cook ground beef until almost done, add onion and garlic. Cook until done, drain any excess grease. Add salsa, 1 cup cheese, and 2 TBS red enchilada sauce. Mix well and set aside. In saucepan add olive oil, and flour, mix and let bubble about 3 minutes. Add remaining chili sauce, cumin and whipping cream. Cook about 5 minutes until thick. Pour 1 cup in a 13x9 inch baking dish. Preheat oven to 350 degrees F. Use 1 tortilla and scoop 2 TBS meat into tortilla roll tightly and set folded section down. Continue until enchiladas are snug in dish. Place the rest of sauce over enchiladas. Place foil over dish and bake for 40 minutes. Uncover and sprinkle rest of cheese (1 cup) over enchiladas. Bake for 5 more minutes. Top with black olives, jalapeños, avocado, cilantro whatever you prefer! Moment of transparency...after a fifteen 'personal and professional improvement program' I have found my way back to where my former #rd2be knew I needed to use my gifts - @deptvetaffairs. Today was my first day at my new job as a Clinical Dietitian serving the veterans of the United States military within an inpatient mental health and drug rehabilitation center. My position is new and filled with many uncertainties; however, the training I have to bring essential knowledge and training about the healing power of food to these brave men and women offers a boost of encouragement for my own path in life. Not one painful experience on my path here will be forgotten. No clinical symptom of malnutrition that I have personally or scientifically explored will be neglected. There is a calm wave of certainty within while the hope for those millions of people unnecessarily suffering is one step closer to ending. Contemplating on what to make for dinner makes me wish I was back in Disney. . Y’all - eating in Disney is expensive (especially when you’re on a budget). I didn’t eat out every day.
