VANILLA CAKE Ingredients * 2 sticks unsalted butter (at room temperature) * 3 cups all-purpose flour * 1 tablespoon baking powder * 1/2 teaspoon salt * 1 1/4 cups sugar * 4 large eggs * 1 tablespoon vanilla extract * 1 1/4 cups whole milk Method: * Whisk the flour, baking powder and salt in a bowl until combined. * Beat 2 sticks butter and the sugar in a large bowl with a mixer until light and fluffy. * Beat in the eggs, one at a time; beat in the vanilla. * Beat in the flour mixture & milk, until just smooth. * Pour the batter in the cake pan lined with butter paper and bake until the cakes are lightly golden on top and a toothpick inserted into the middle comes out clean, 30 to 35 minutes. “Jamjo ane Jamarjo” Salsa Pasta Salad #salad #salsa #pasta Ingredients 3 cups Chopped Tomatoes ½ cup Chopped Green Capsicum 1 cup Chopped Onion ¼ cup Chopped Coriander 4 no Chopped Green Chillies (Hot) ½ tsp Jeera Powder 2 tbsp Olive Oil 2 tbsp Lemon Juice 1 tsp Sugar Salt to Taste Oregano Method In a food chopper finely chop all the veggies including chillies. Add jeera powder, lemon juice, sugar, salt as per taste and mix well. Season with oregano and serve. Note: If you do not have food chopper machine, finely chop all the veggies, then mix all the ingredients in the a large bowl. Take cup full of salsa in the pestle and mortar, press it coarsely. Inspired by @smriti_saythi as she taught us the importance of including fiber in your diet.. 📝Ingredients :- 2 small bowls of shredded Romaine Lettuce 1 Capsicum - Finely chopped 1 Red Bell Pepper - Finely chopped 1 Yellow Bell Pepper - Finely Chopped 1 Sweet Corn 2 Tsp of Thousand island Dressing 1 tsp of Salt 1/2 tsp of black pepper 1/2 tsp of chaat masala ( optional) 1/2 lime - Juiced Procedure - * Toss all the ingredients together with the thousand island dressing, add more dressings if you want a different taste. * Enjoy! #HealthFact : A well-nourished body responds better to stress! . We have all been facing elevated stressors in the last month, so I wanted to share some tips that have helped me manage my stress the last few weeks, with my food, exercise and other daily habits! I pray they will benefit you too! . 1️⃣Don’t stress what you can’t control, and take ownership of what you can! I’ve said this before, and it’s something that’s easier said than done, but there is so much power in investing in your mindset (spend time each day in personal growth and development, organize your home and workspace to cut out distractions and things that make it more challenging to get things done throughout your day. . 2️⃣Eat a diet balanced with healthy, nutritious whole food (lean proteins, fruits and veggies). Don’t shortchange yourself by making poor choices at the table. . 3️⃣Fight inflammation at the foundational level by giving your body adequate micronutrients, omega-3s (which naturally fight inflammation, support joint and heart health) and antioxidant rich foods to fend off the free radicals. . 4️⃣Maintain a healthy exercise regimen. This can actually be a form of stress relief and help our body better handle stress from a physiological standpoint, but you have to balance that by not overdoing it. Overtraining can have an unhealthy effect that compounds emotional and mental stress. . 5️⃣Get more sleep. Our bodies regulate cortisol during the night when we get at least 7-8 hours of restful (deep rem cycle) sleep! Cultivate your bedtime routine to ensure you get the best sleep possible: no screen time 1 hour before, cool room, no light pollution, warm bath/shower to relax before bed, herbal tea (chamomile) or other natural methods, especially if you work shifts off of the normal circadian rhythm. . 6️⃣Remeber, you don’t have to do this alone. There is such power in a loving and supportive community, and having that feeling of understanding can lift a major weight from your shoulders! Don’t stress the “what if’s” and “maybes”. Today I am sharing a recipe for a super simple and delicious Pakistani qeema or keema. In our family, we would call it “naashta wala qeema” which translates into breakfast qeema; and the reason we called it this was because it was a dry style qeema usually made for breakfast and eaten with puri or paratha. In such pandemic situations,when world is fighting deadly novel Corona virus, it's extremely essential for us to build our immune system, which in turn fights off the virus. Foods which contain abundant amounts of Vitamin C, B and E are really essential to help get rid of infections. Our body relies on these nutrients to launch an effective immune response. So, I stock up my kitchen with lots of citrus fruits like guavas, oranges, Sweet lime, amla, berries, lime etc. My superfood to fight such infection: Take some Tulsi leaves, a piece of ginger and a spoon of Demerara sugar in Mortar and pestle, crush it and put in a mixing glass. Add 2 cups of orange juice, a teaspoon of honey and few drops of lime juice. Add pinch of Himalayan salt. BACON MUSHROOM QUICHE (Gluten-Free, optional Paleo, Whole 30) I’m so excited about this one 😊 I got to use my tart pan, which is a treat for me! And LOOK AT THIS CRUST, guys 😍 its super simple, buttery, delicious, and healthy The filling is also great - I hope you’re a mushroom fan! If not, feel free to replace them with a veggie you love. This recipe is versatile To make it Paleo and Whole 30 friendly, just leave off the cheese topping Ingredients: Crust: • 1 ¾ cups (196g) almond flour • ¼ tsp salt • 3 tbsp (45g) ghee, melted • 1 egg Filling: • 6 pieces of bacon, cooked, diced • 3oz crimini mushrooms, diced • 2 shallots, diced • 5 eggs • ¼ cup coconut milk • ½ tsp garlic powder • ¼ tsp each: salt, black pepper • 2oz cheddar cheese, shredded Directions: 1. Heat oven to 350F. Very lightly grease a tart pan (or pie pan) with ghee or olive oil 2. In a bowl, mix almond flour and salt. Add the melted ghee and egg, mix with your hands until combined 3. Press the mixture into the bottom and sides of the pan. Use a fork to poke holes all over the bottom, then bake for 12 minutes. The bottom will rise from the steam but should settle when you take it out of the oven (gently press it down if it doesn’t) 4. For the filling, whisk the eggs with coconut milk, garlic powder, pepper, and salt. Add the shallots, mushrooms, and bacon 5. Pour filling into the pie crust and gently flatten/distribute the veggies, then top with cheddar 6. Shrimp and Asparagus Foil Packs with Garlic Lemon Butter Sauce by @cookingclassy⠀⠀⠀ .⠀⠀ Shrimp and Asparagus are cooked together in individual foil packs in a rich buttery sauce. The bright lemon pairs perfectly here and the garlic adds so much flavor. Cook them on the grill or in the oven.⠀⠀ ~⠀⠀ 1 1/2 lbs large (21/25) shrimp peeled and deveined⠀⠀ 2 Tbsp dry white wine or chicken broth⠀⠀ 4 tsp minced garlic (4 cloves)⠀⠀ 2 tsp lemon zest⠀⠀ Salt and freshly ground black pepper⠀⠀ 6 Tbsp butter diced into small cubes⠀⠀ 1 1/2 Tbsp fresh lemon juice⠀⠀ 2 Tbsp chopped fresh parsley⠀⠀ 1 lb medium thickness asparagus woody ends trimmed⠀⠀ Preheat a grill to medium-high heat (about 400 - 425 degrees). Cut 4 sheets of 14 by 12-inch heavy duty aluminum foil then lay each piece separately on countertop.⠀⠀ Divide shrimp among packs near center then place asparagus to one side of the shrimp (going the long direction of the foil). Pour 1/2 Tbsp white wine over each. Sprinkle over garlic (1 tsp per packet) and lemon zest then season with salt and pepper.⠀⠀ Divide butter pieces evenly among packets layering them over the shrimp and asparagus.⠀⠀ Wrap packets in and crimp edges together then wrap ends up (don't wrap too tight - keep a little extra space inside for heat to circulate). ALOO TIKKI BURGER RECIPE Ingredients for aloo tikki 4 potatoes (medium sized aloo) 1 tsp ginger paste or ¼ tsp powder ¾ tsp GARAM MASALA or any spice powder ½ tsp chaat masala ½ to ¾ tsp red chili powder 1 tbsp ghee (very hot) optional handful coriander leaves (finely chopped) 1 green chili chopped 2 tbsps corn flour or rice flour (optional) 3 to 4 tbsps bread crumbs ( do not use fresh bread crumbs) Salt as needed 2 tbsp Cashews (chopped) Oil as needed for frying HOW TO MAKE THE RECIPE Preparation for aloo tikki Boil potatoes until just cooked. They should be firm and not mushy or soggy. Cool them. Grate or mash them in a mixing bowl. Make sure there are no chunks of aloo. Add coriander leaves and green chilies. Add ginger paste, garam masala, chaat masala, salt and red chili powder. Heat 1 tbsp ghee till very hot in a kadai. Pour that over the red chili powder to remove the raw flavor. Add flour and bread crumbs. Begin to mix and make a firm and non sticky ball. If needed you can add more bread crumbs. How to make aloo tikki Divide the mixture to equal parts and make balls. If you prefer large tikkis, you can make large balls. But thin tikkis cook well and get crispy when fried. Flatten them and make the aloo tikki. Heat oil in a pan and fry them until golden. Keep flipping them to both the sides and fry. Remove them to a absorbent kitchen paper. OR for grilling in oven Alternately Brush them with oil & place on a greased wire rack over a tray. Grill in a preheated oven for 25 to 35 mins at 180 C or until crisp. Adjust the timing based on your oven. Now the burger part: Spread sandwich spread on the burger buns (If you dont have sandwich spread mix ketchup, mayo and some salt together) And then grill the burgers🥳

Spicy shakshuka Spicy shakshuka with a Korean kiss delivered via gochujang will bring fabulous heat that tickles your mind. It is what we need when doing our best to keep each other healthy and sane. Personally, I am fond of a little passion in the food, and this has pretty lovely intensity that embraces your palate with love. In a cast iron skillet heat up olive oil on medium heat and sauté onion, garlic, and Thai long peppers for 2 min while stirring. Add celery, cherry tomatoes, and scallion for another 2 min while stirring. Add gochujang and incorporate it throughly. Deglaze with chicken stock and reduce until half is left. Add crushed tomatoes, paprika, cumin, salt, and black pepper and stir. Let it simmer until it gets thick for 10 min. Add 6 eggs spread out over the dish and bring the skillet to the oven. Bake for 7 min at 350F for runny eggs and serve with warm pita bread. TANDOORI CHICKEN Ingredients: * 500g Chicken * 1/2cup Curd * 6 Garlic clove * 1tsp Coriander powder * 2tsp Ginger * 1/2tsp Cumin * 1/2tsp Vinegar * 1/2tbsp Lemon Juice * 6 drops food colour (optional) * 1 tbsp Oil * Chili powder (required) * Salt to taste Method: * Wash the chicken and pat the pieces dry using a kitchen tissue. * Make slits on each piece using a knife. * Apply salt & lemon juice all over it. * Blend garlic, ginger, coriander powder, chili powder, cumin and vinegar. * Mix it in curd, add salt and marinate the chicken. Today, I decided to make an Italian Cream Cake (as cupcakes). I was headed to Burnet, Texas to meet my sister and do an exchange in a parking lot of the HEB. An exchange for Easter. She is bringing me a couple of things I need for Austin and in exchange, I am taking her somethings she had left in Llano at our moms’ house. She mentioned the kids would love some cupcakes for the holiday, hence the Italian Cream Cupcakes. We have always gotten together for Easter Sunday and this year we, of course, can not. The World has a new normal this season. We waved and I placed a box of cupcakes in the front seat of her car. I hope she remembered to bleach wipe the outside of the box before she opened it! We will call each other on Sunday and we will continue to pray. The recipe is already posted on my blog as a cake.
