A quick healthy dinner ready in less than ten minutes?! Yes, please! Sam’s Club sells the best frozen salmon and individually wrapped perfect size portions about 4-5 ounces each. You get three pounds for $25! I use the steam basket that came with my Black and Decker Rice Cooker to steam my salmon. I use lemon pepper seasoning or garlic salt with pepper. Depends on the day. Cook some spinach in a pan while the salmon cooks and you’re done. Quick and easy! Everyone is happy!

How many of you think about mercury when making a healthy dinner or lunch? With the focus on a healthy Mediterranean diet in the news lately, you can’t ignore the possibility that we are taking in way too much mercury from fish! Yes, fish! Fish can be part of a healthy diet and it can be a great source of omegas but you have to be well informed and know which fish is safest to eat and how often. According to NIH research, mercury is a well known endocrine disrupter. This can affect every hormone in your body! Much focus recently has been on mercury and it’s effects on our system. So what are we to do? I limit my intake of fish to twice weekly. I consume fish to be known lower in mercury such as salmon, shrimp (yes I know shrimp is not really a fish), sardines, cod. Keep in mind the larger long lived fish have higher mercury concentrations. Are you a sushi lover? Test your mercury level in your blood. My mercury level was 14. After starting on a few key supplements, little detox and changing my diet, I retested at 7. You can do this in your state by obtaining a prescription from your doctor. Do your research. Celebration dinner tonight at #homecookingbyfabienne as we have reached 800 followers!!! Yeahhh!!! Thank you!!! To thank you, here are two other super easy recipes. Salmon almost teriyaki... One side salmon Honey Soy sauce Salt and pepper Sesame seeds to decorate Wash the salmon and lay it on a baking tray Drizzle generously honey and splash generously some soy sauce Season with a bit of salt (not too much as we put soy sauce) Cook in the oven at 180C for 29 minutes max not to dry the fish! Decorate with sesame seeds Filo pastry with spinach, cheddar and ricotta 400g filo pastry 500g spinach 250g ricotta 125g cheddar 2 red onions 6 garlic cloves Salt, pepper Olive oil 30g flat parsley Sesame seeds 1 egg Cut the onion in four and slice them Cut the garlic in small pieces In a large frying pan, fry the onions until they soften, then add the garlic and the spinach. Add the ricotta, the cheddar and season with salt and pepper. Add the flat parsley and mix Lay two sheets of filo pastry and slightly spray them with water. Add some spinach preparation in the middle and roll to form a cylinder. Continue the process with the other sheets of filo pastry and spinach preparation. Brush with egg wash and sprinkle with sesame seeds Cook at 170C in a fan oven for 30 minutes Eat hot! Salmon on cedar plank for dinner tonight 🐠 We don’t eat seafood as often as we should. I blame it on having a hard time finding good fresh seafood. When we lived in West Africa we would eat seafood at least once a week, it had a lot to do with being able to find fresh seafood that was literally caught in front of your 👀 ***************************************Salmon marinade: 4 pieces of salmon, washed & dried 2T olive oil 1T blackened spice 2whole garlic cloves crushed 1t crushes black pepper 1t dried onion flakes ************************************** Mix everything together & add salmon. Place lemon pieces on top of salmon & dried rosemary. These will go on a cedar plank, that was soaked in water for about 2 hours. They will be grilled on a charcoal grill. At some point I will cover them so that they cook well on the inside. Cooking time should be about 20 minutes. I LOVE cooking a delicious Salmon dinner, but I also love when someone cooks some Salmon for me! 😂🤣 This recipe would be my request! . . 🐟MAPLE MUSTARD GLAZED SALMON🐟 Makes 4 servings Per serving 1 Lean protein 3 condiments 2 healthy fats (need to add your greens) . . Ingredients: • 1 3/4 lb salmon fillet cut into 6 equal pieces • ¼ cup fish or chicken broth • ¼ cup Walden Farms pancake syrup • 2 tbsp grainy mustard, I used Dijon Wholegrain Mustard • 2 tbsp low sodium soy sauce • ½ teaspoon pepper to taste . . Directions: 1. Preheat oven to 425 F degrees. 2. Arrange the salmon pieces in a 9x13 inch baking dish. 3. In a small bowl, whisk together the butter, maple syrup, mustard and soy sauce. Pour over salmon. Add some freshly ground pepper, if preferred. 4. Bake for about 15 to 20 minutes or until salmon flakes with a fork. #healthispossible #salmondinner #DeliciousFood #YourSuperShape

So I usually only post food posts that are plant-based because, well, I’m plant-based. BUT I’ll make one exception because I was pretty dang proud of myself for cooking my boyfriend a lovely salmon dinner for his birthday. He usually eats plant-based with me, but he’s still an Omni so I respect his wishes. I thought this salmon dinner was romantic and exactly what he needed for a special occasion. At least I get more veggies in his diet 😉
