Middle Eastern Salmon. Again I can not take credit for this genius. You can certainly have fun with this one and get creative with the modifcations. •The Coconut Rice• Ingredients: 1 cup basmati rice 500ml of coconut milk A couple of fresh basil leaves A generous squeeze of honey Method: Cover rice in water and heat on high for a few minutes or until you notice rice to start looking like its going to cook. Then add rest of ingredients and turn down the heat stiring occasionally to avoid burning the bottom. As rice gets thicker turn down heat incrementally. Just one cup of rice would make enough for 4 people. •Raita• 1-2 a small cucumber chopped finely Sheeps yoghurt Cumin powder Coriander powder Salt Pepper Tahini (only a tiny bit) •Herby Topping• Fresh coriander Fresh mint (used to most sparingly of all the herbs) Parsley Seeds from half a pomegranate Pistachio nuts, shelled and crushed. Top with chilli oil and enjoy!

🍣😍 SUSHI TOWER!!! 😍🍣 This was SO much fun to make!! Anyone who knows me (Nina) knows that sushi is my favorite thing ever. At volleyball tournaments in high school we would go to sushi places (Sushi King 🤤) every so often and I became known for being able to “pack away” the most sushi...even over all the Dads 😂. Probably not the best thing to be known for but it was true so I couldn’t argue xD So yeah, I really love this stuff ;) • Making it homemade does take a little while though (as my boyfriend can attest to 🙃) especially the prepwork: cutting veggies, making the rice...so definitely plan time for it if you want to make your own sushi!! Monday is for yellow. One year 118 days in. I forgot how beautiful is a morning sun! I have started waking up earlier, to start my day with some routine. MEALS. Happy with meals. Especially instant ice cream. Lots of watermelon too. 😁 Trying to hit protein the hard way - eating. 😅 Cottage cheese pancakes were handy. As well as lean protein cheese. It's hard to eat lots of protein when it's hot outside. What do you think? Exercise. After yesterday's HIIT my 🍑 doesn't say thank you. I think I need to leave it alone for two weeks without doing any glutes engaging exercises. However, decided will do "superman" and few other shoulder exercises with resistance bands... So... Greek yogurt protein peach overnight oats!! • Can you tell I’ve been on an overnight oat kick the past couple of days? Yesterday I went to the grocery store and found fresh peaches for the first time in FOREVER!! So naturally, I had to incorporate them into a bowl of oats. • #deats I let 1 cup rolled oats, 1 cup almond milk, 1 scoop vanilla whey protein powder, and 1/4 cup Greek yogurt sit overnight. Then added a drizzle of almond butter and a sliced up peach! So refreshing for a hot day :)

I found this one and it’s definitely one I want to try soon! 😋 🌮🌮🌮 Easy Healthy Taco Salad w/ Ground Turkey Ingredients: 16 oz organic lean ground turkey 3 tsp organic chili powder 1 serving 3 Ingredient Creamy Avocado Lime Dressing (see notes below) 8 oz canned corn 1 avocado 1 lime 5 cups spinach 4 Tbsp crushed corn tortilla chips Instructions: Combine 2 tsp chili powder and the ground turkey, cook thoroughly. While the turkey is cooking, make the avocado lime dressing in a small blender. Slice the avocado into squares and the lime into 4 slices. Put the salad together, starting with the spinach and adding the avocado, corn, turkey, dressing, and tortilla chips. Top each salad with the remaining chili powder and serve with a slice of lime. Enjoy! Notes ~ Creamy Avocado Lime Dressing Ingredients: 1 avocado 1 Tbsp nonfat plain greek yogurt 2 limes Instructions: Remove the skin and seed from the avocado. Pea soup with shrimp. For those days when you don’t feel like making an elaborate meal. Fresh, light, crispy, and a little spicy. I can’t think of a more perfect combo for summer. Spicy Asian Lettuce Wraps 1. Sauté 2 lbs ground beef over medium heat in 2 tbsp vegetable oil. 2. Add 2 tbsp minced garlic, 2 tbsp minced ginger, 2 tbsp soy sauce, 1-2 tbsp red pepper flakes, and 1/4 cup hoisin sauce. Cook on low until flavors are fully combined. 2. Take a head of lettuce, and separate individual leaves. Wash and pat dry. 3. Make a side of Jasmine rice, use an Asian slaw salad kit, chop up some peanuts, and set out fried wontons/sesame seeds/chopped scallions/sriracha for garnish. 4. Set up items buffet style for serving. This meal is quick and simple. It will bring your people to the table in under 30 minutes. Bam! Grilled Lemon Mussels🍋 I love to get inspired by flavours when I dine out, so naturally when I tried the lemon cream mussels at @chowderhouse, I had to recreate them at home. I tested them last summer and they were delicious, so I knew I had to share! Btw how great is this hand painted mussel bowl that my sister @ashleamask brought me back from England a couple of years ago? Here’s how I made them (serves 4): Ingredients: - 5 lbs mussels, cleaned - 2 tbsp olive oil - 1 small onion, diced - 2 tsp garlic, minced - 1 lemon - 1 cup heavy cream (I had 1/2 cup of each heavy cream and evaporated milk so that’s what I used) - 3 sprigs fresh thyme Directions: 1) grill lemons by slicing in half and placing on a hot grill (I used my bbq but you could do this in a frying pan). Set aside to cool. 2) in a large pot, sauté onions in oil until translucent. Add garlic and cook for 1 minute more. 3) add mussels, juice of the grilled lemon, cream and thyme to the pot and cover. 4) cook mussels until they’re all opened. Lovely ribs for lunch as I miss BBQ food. Can't wait until Burgess Park opens up its communal BBQ area again. On a healthy diet so a huge salad with a handful of seeds and olive oil and balsamic vinegar. Sauces can be highly calorific and can add 200-400 calories on top the way I see how much can be added to a salad, so be careful!! Easy and healthy weeknight dinner 🥑 Asian salad with crispy tofu and spicy mayo 🤗🤗🤗 come ere you. For the salad I peeled a cucumber, added chopped red peppers, avocado, chilli, ginger, lime juice, salted peanuts and a dash of sesame oil. Mango also goes really well in this dish! For the crispy tofu I pressed the tofu, covered in in flour and fried it in a fair bit of oil (you need this to make it crispy). The tofu can however be swapped out for any protein. For the sauce, I simply mixed vegan mayo with sriracha and lime. Summer shrimp pasta! My mom made this dish for me years ago by using what she had in the fridge and I am so glad she did. This pasta is packed with fresh seasonal ingredients that hit just right on a hot summer night. Add the following to your grocery list (yields 2-3 servings): •1lb raw shrimp 🍤 •4 corn stalks 🌽 •1 heirloom tomato 🍅 •1/2 package of grape tomatos🍅 •4-6 cloves of garlic (chopped)🧄 •fresh basil (to taste) •4 tbsp EVOO •1 tbsp butter🧈 •1/3 cup white wine •salt, pepper, red pepper flakes to taste •1/2 cup grated or shaved Parmesan •1 package of fresh pasta Start by sautéing chopped garlic, butter, EVOO, salt, pepper and red pepper flakes in sauce pan. Once garlic is golden brown add chopped tomatoes and white wine. Add more seasoning as needed. Let tomatoes blister. Add fresh corn and more seasoning (this will require more salt than you think do to sweet nature of corn & tomatoes) and cook down to desired thickness. Turn down heat and add shrimp, cook for 2-3 minutes. Shrimp cook incredibly fast so be careful to not cook them too long. Turn off heat and stir in fresh basil, pasta and Parmesan.
