Today's pain de campagne baked in two woodfired ovens. The left is baked in the indirectly fired bassanina with steam. The right is baked in an Alan Scott type oven a low dome for holding and radiating heat and keeping in the steam from the dough resulting in a crust that is not as shiny and slightly thicker. First batch of sourdough baguettes in a while and I dare say the best one to date. Crust to crumb ratio perfect for the soup or stew. Using the @apieceofbread process with a long cold bulk and room temp final proof. Organic roller milled flour from @berte_qvarn yielding a true "cream of wheat". I find baguettes to be very technically challenging so this is truly a win for me in my learning curve!
