easy meal prep made for a short week🌶 Spicy Chipotle Lime Shrimp Bowl Plan it: Large shrimp deveined and peeled (I used 3 per day) 3 tablespoons olive oil 1 lime, 1/2 juiced 1 cup cherry tomatoes, halved 2 Serrano peppers, sliced 1 can chipotle peppers in adobo sauce 1 teaspoon adobo sauce from the can of peppers 1 16 oz can black beans, rinsed & drained 1 16oz can corn, drained 2 cloves garlic pressed 2 teaspoons honey 3/4 teaspoons ground cumin 1/2 teaspoon salt & pepper 4 cups quinoa & cauliflower rice mix Fresh cilantro for garnish Prep it: 1. Mix shrimp with lime juice, honey, 1-2 sliced chipotle peppers, 1 tsp adobo sauce, garlic, salt, pepper & cumin in bowl and set aside to marinate for 10 min. 2. While shrimp is marinating, cook cauli rice and quinoa then mix to serve. 3. Cook shrimp & marinated sauce in pan with 1tbs olive oil over medium heat until cooked through (5-8 min) 4. Prep bowls with drained beans, corn, sliced tomatoes & Serrano peppers- Garnish with cilantro. I hosted my family for dinner this weekend so Individual Swirl Chocolate Cheesecakes were on the menu! These were quick and easy...and delicious! 😋 Recipe:👇🏻 1 cup graham crumbs 3 Tbsp butter, melted 2 pkgs cream cheese, softened 1/2 cup sugar 1 tsp vanilla 2 eggs 2 oz. semi-sweet chocolate, melted, cooled 1. Combine graham crumbs & butter, press into 12 muffin tins (I used silicone!) 2. Beat cream cheese & sugar, add vanilla & mix well. Add eggs 1 at a time, mixing low just until blended. 3. Combine 1/2 cup batter with melted chocolate. Spoon batter into muffin tips and top with chocolate batter. Swirl gently with toothpick. 4. Bake 22-25 mins inter cheesecake centres are almost set. Glass noodles / Noodles de cristal. Una receta muy fácil que siempre funciona. Al estilo Wagamama 💝 Para 4 personas: 250g noodles 150ml leche de coco Verduras al gusto 200g tacos de carne(la que prefieras, yo he utilizado de cerdo) Curry al gusto Sal Llevar el agua a ebullición y añadir los noodles. 5 min a fuego medio. Dejar reposar 2 min y luego pasar por agua fría y escurrir. En una sartén tipo wok poner a dorar los tacos de carne, sazonar, añadir el curry y las verduras. Cuando esté dorado añadir la leche de coco y remover. Volver a añadir curry al gusto. Y a emplatar! Ya me diréis que tal 😜

wakey wakey🍳 Sweet Potato Waffle Egg Sandwich Plan it: 2 eggs 1 sweet potato, grated 1/4 tsp cumin 1/8 tsp paprika 1/8 tsp garlic salt 1 tsp oil 1/2 cup sprouts or kale 1/2 medium avocado, sliced Prep it: 1. Preheat oven to 350° 2. Bake bacon on foil lined pan for 15-20 min, until desired crispness. 3. Grate sweet potato *pro tip* cube potatoes, mix in blender for quick mashed consistency 4. In a medium bowl, whisk 1 egg and add in grated sweet potato, seasonings and 1tsp oil (should be around a 1 cup) 5. Cook extra egg over skillet, however you like it. 6. Spray waffle iron with oil and heat. 7. Pour sweet potato hash mixture into iron. Press waffle iron down gently and allow sweet potato to cook about 5-8 minutes, until lightly golden. 8. Assemble sandwich with egg, bacon & sprouts. Top with sliced avocado. burger bowl for the win🍔 Secret Sauce Burger Bowl Plan it: 1 lb lean ground beef or turkey patties 1 bag frozen sweet potatoes fries (or homemade if you choose to) Chopped Romain lettuce 1 cup cherry tomatoes 1/2 cup sliced red onion 1/2 cup bread & butter pickles For secret sauce dressing; 1/3 cup Mayo 2.5 tbs Ketchup 1 tbs Yellow Mustard 1 tbs Dijon Mustard 1/2-1 tbs pickle juice pinch of Cayenne pepper Salt & pepper to taste 1 tsp garlic powder Prep it: 1. Cook sweet potato fries according to package or homemade recipe. 2. Grill patties to medium-well done. 3. Cut onion, tomatoes and pickles. 4. Mix all sauce ingredients together and set aside. 5. Worcestershire sauce 5 heads romaine lettuce, halved lengthwise, rinsed and dried salt & black pepper, to taste 4 oz. blue cheese, crumbled Prep it: 1. Preheat oven to 350° & preheat grill 2. Bake bacon on foil lined pan for 15-20 min depending on desired crispness. 3. One bacon is cooked, reserve & transfer bacon drippings to a bowl. 4. Add oil, vinegar, and Worcestershire to bacon dripping bowl & whisk until smooth, set dressing aside. 5. Place romaine halves cut-side down on grill, and cook, turning once, until charred and slightly wilted, about 4 minutes. 6. Transfer lettuce cut-side up to plate, season with salt and pepper; drizzle with dressing, and sprinkle with bacon and blue cheese. you never knew how much you needed this burrito spag squash bowl until now🌯 Burrito Squash Bowl Plan it: 1 spaghetti squash 1lb ground turkey 1 green or red bell pepper 1/2 yellow onion 1 jalapeño 1 16 oz can black beans 1 16oz can corn 1-2 avacados Cilantro to garnish Olive oil Salt & pepper to taste 1 tbs Red pepper flakes 1 tsp cumin 1/2 cup shredded Monterrey jack/cheddar mix 1 cup favorite salsa Prep it: 1. Preheat oven to 375° 2. Cut spaghetti squash in half and scoop out seeds. *pro tip* make slits in squash and microwave for 3-5min beforehand to soften. 2. Season squash with olive oil, salt & pepper then place face down over foil lined baking pan and roast in oven for 25-30 min. 3. While squash is roasting, cook ground turkey over oil on stove. Season with cumin, salt and pepper. 4. Add chopped bell peppers, jalapeño, drained corn and beans and mix over med heat for 2-3 min. 5. Remove squash from oven and fork out 1/2 mixture of squash into separate bowl. 6. Scoop turkey veggie mix into squash bowls and add desired amount of squash from separate bowl. Add favorite salsa and mix well. 7. Top with cheese and roast in oven for an additional 5-8min. 8. Garnish with avocado and cilantro. unlimited toppings🍕 Bacon Brussel Leek & Tomato (BBLT) Cauli Pizza Plan it: Cauliflower pizza crust (homemade or frozen) 1/2 cup chopped brussel sprouts 2 sliced leeks 1/2 cup of chopped cooked bacon 1/2 cup diced cherry tomatoes 1 cup of mozzarella cheese 3 tbs of Parmesan cheese 1 tbs red pepper flakes Salt & pepper to taste 2 garlic cloves Olive oil Prep it: 1. Pre heat oven to 350° 2. Place bacon on foil lined pan and bake for 10-12 min depending on desired crisp. 3. Bring olive oil to a medium- high heat. Add the sliced leeks and sauté until soft- add brussel sprouts 1/2 way through and season with salt and pepper- total time 6-8 minutes. 4. While veggies are sautéing, mix 3 tbs olive oil, red pepper flakes and 3 tbs Parmesan cheese in a small bowl until combined. 5. Top pizza crust with parmesan garlic paste & sprinkle on mozzarella. 6. Philly cheesesteak stuffed bell peppers in the house tonight Plan it: 4 bell peppers 1 tbsp. vegetable oil 1/2 red onion 16 oz. cremini mushrooms, sliced Kosher salt Freshly ground black pepper 1 lb. sirloin steak, thinly sliced 2 tsp. Italian seasoning 8-10 slices provolone (alternative cheese if diet restricts) Freshly chopped parsley, for garnish Prep it: 1. Preheat oven to 325º 2. Slice top of bell peppers and scoop out any remaining seeds. 3. Place bell peppers in a large baking dish and bake for 30 minutes, until tender. 4. While peppers are baking, heat oil in a large skillet over medium-high heat- Add onions and mushrooms and season with salt and pepper. Cook until soft, 6 minutes. 5. Add steak and season with more salt and pepper. Cook, stirring occasionally, 5 minutes. Stir in Italian seasoning. 6. Remove peppers from oven & add 1-2 slices of provolone to bottom of baked peppers and top with steak mixture. Top with another piece of provolone and broil until golden, 5 minutes. 7. Garnish with parsley before serving. No Monday morning blues when this is what is packed for lunch🥗 Asian Chicken Zoodle Salad Plan it: 1 pound boneless, skinless chicken thighs 1 cup shredded carrots 2 small zucchinis, spiraled 1 cup shredded purple cabbage 1/2 cup sprouts 1/2 cup sliced almonds (Optional) 1 sliced lemon For the marinade and dressing 1/3 cup coconut aminos 1/4 cup rice wine vinegar 2 tbsp sesame oil 2 tbsp avocado oil 1 tbsp minced ginger 1 tsp garlic powder 1 tsp Frank’s hot sauce 1/2 tsp Chinese 5 spice 1/2 tsp salt 1/4 cup creamy almond butter 1/4 cup water Prep it: 1. Combine all of the marinade ingredients, except for the almond butter and water in a medium bowl. 2. Mix the chicken thighs in a gallon bag or large with 1/3 cup of the marinade. Refrigerate for 30 minutes to 1 hour 3. Add the almond butter and water to the remaining marinade to make the dressing. Mix with a fork until the dressing is combined well, and refrigerate (add more almond butter if thicker consistency is desired) 4. Once the chicken has marinated, heat a skillet over medium heat and add the chicken with marinade into the skillet. Cook for 5-6 minutes on each side, or until chicken thighs have cooked through. 6. Assemble the salad jars by first adding equal amounts of dressing to the bottom of each jar. 7. Layer the chicken, followed by equal portions of all veggies. Top with a lemon slice, cover tightly and refrigerate. 8. stuff em’ full with these mediterranean roasted chickpea sweet potatoes Roasted Chickpea Sweet Potatoes Plan it: 2-4 medium sweet potatoes (1 per person) 1/2 cup of cherry tomatoes 1 can chickpeas 1/2 tablespoon olive oil 1/2 teaspoon coriander, cinnamon, cumin, and paprika, sea salt 1 lemon 1/4 cup hummus (or tahini) 1 teaspoon dried dill 3 gloves garlic 1 teaspoon almond milk (or water if you don’t have milk on hand) Fresh or dried basil for garnish Prep it: 1. Preheat the oven to 400ºF and line a tray with baking paper. 2. Clean the potatoes, and cut lengthwise (for ease of prepare) 3. Rinse and drain the chickpeas, then season with olive oil and spices before leaving to dry on a baking sheet. 4. Season the sweet potatoes with a touch of olive oil before placing them on the same baking sheet. 5. Leave the sweet potatoes and chickpeas to roast while you’re preparing the garlic sauce. 6. Add lemon juice, spices, garlic & almond milk into a bowl, and whisk to combine them. 7. Add a touch of dried dill if you want more of an intense flavor. 8. Add hummus or tahini to the rest of the mixture & whisk together. 9. spice up your taco tuesday with this chile lime shrimp taco bowl🌮 Chile Lime Shrimp & Zucchini Bowl Plan it: 1 tbsp olive oil 1 cup cooked shrimp 1 zucchini 3-4 assorted peppers 1 cup of mix cabbage 1 Cup mayo (or paleo mayo) 1 tsp lime juice 1 tsp chili powder 1 tsp salt 1 tsp pepper 1/2 tsp lime zest 2 cups cauliflower rice (frozen for ease) Optional: taco bowl Prep it: 1. Heat grill to 400°F. 2. Slice the zucchini into fourths 3. Thaw the shrimp and clean the mini peppers. 4. Add the shrimp, mini peppers, cabbage and zucchini to the grill. Cook until desired tenderness 5. While everything is cooking, mix up the chili lime sauce. Add the mayo to a mixing bowl along with the lime juice, chili powder, salt, pepper, and lime zest. 6. spaghetti squash chow mein > takeout any day of the week🥠 Spaghetti Squash Chow Mein Plan it: 1 large spaghetti squash 1/4 cup COCONUT AMINOS (or tamari if not paleo) 3 cloves garlic, minced 1 tablespoon COCONUT SUGAR 2 teaspoons freshly grated ginger 1/4 teaspoon black pepper 2 tablespoons OLIVE OIL 1 onion, diced 3 stalks celery, sliced diagonally 2 cups cole slaw mix (shredded cabbage and carrots) Prep it: 1. Cut a spaghetti squash in half length wise and scoop out seeds. Season with olive oil and salt/pepper for taste. Lay skin side up on lined baking sheet. Bake at 400 degrees for 30-40 minutes, until flesh is very tender. Once done, scoop out flesh with a fork so it breaks apart into strings, set aside. * pro tip- pierce squash and microwave for 2 min prior for easier cutting * 2.
