Happy Sunday 👌🕺😉🤪 5 heads of Garlic I large sprig of Rosemary 1 pint made up of extra virgin olive oil and normal olive oil about a 60 40 split in favour of the extra virgin Method Split the heads into cloves and put them in a jar with a tight fitting lid (about 3 quarter's full). Put a song you love to dance to (I like Footloose,) and turn it up.Dance and sing your heart out whilst shaking the S..t out of the jar for at least 1 minute to ensure the skin's come away from the cloves. Cut off the end bit where its come away from the stalk and put all the cloves in a small saucepan. Add the oil and bring to a boil. Once you've reached boiling point reduce to a simmer and let it tinker along for 10 minutes. Switch off the heat after 10 minutes then leave to cool. Seperate the cloves from the oil and discard the rosemary. Put the cloves into a sealed container and freeze up to 3 month's (just defrost what you need to) Put the oil into a sterilised bottle or jar. Ive been making a different version of this for year's and use it in all sorts of dishes. Jade loves this on Chips (Dont knock it until you have tried it). A word of advice dont by your Garlic from supermarkets they are overpriced and underperforming buy it from your local grocer 👌🕺😉

Putting 4 months of #justcook into one picture(of 9 pictures). Was quite the time. Going from my time running the urban tea merchant with about 5 cooks To TWG where I had about 8 highly qualified cooks and chefs in our brigade to this past summer where it was myself and a breakfast chef cooking for 45 ppl a la carte breakfast, lunch and a 5 course plated dinner. That was alot of work. A 5 course menu changing everyday, making in house breads,desserts, limited charcuterie and cured meats like pastrami,montreal smoked meat, as well as special events and photo ops. It was a stiff challenge to try to make the food on point while plating for 45 guests and not being able to do the presentation I usually do. I kept the plating simple and the feedback was great. I always wanted to do more and bring it to yet another level but I am quite satisfied with what I was able to accomplish. As I always say, chefs shouldnt cook to feed their egos, they should cook to feed their guests and every chefs clientele are different. Hungarian honey and lavender glazed duck breast with concord grape jus . It is no secret that I love to cook when I travel. Its generally known that while I respect tradition it does not bind me pr what I do . This is by no means a Hungarian dish as far as I know but I do know that everything I used was very hungarian. Part of travelling is learning and exchanging culture where possible. I was pleasantly surprised to learn that Hungarian produce goes far beyond paprika and cabbage . Did you know that Hungarian honey is supposedly some of the best in the world? Neither did I until I walked through the market and saw stalls exclusively hawking it. And there was ALOT. It wasnt relatively cheap but then again when is something good ever? Okay, let me rethink that last part because the duck here is really cheap and the taste is stellar . I knew this region was known for its wine and logically there are grapes being sold in troves. So many varieties and that is always a welcomed option for someone looking to explore and create. While I do not know if the concord grape is something consumed or harvested in this region I managed to find it in a few places here and I have only ever found it in Italy . Where does the lavender come in to such an antithesis of what I assume Hungarian cuisine is? Well, I picked it in a park across the road from where I am staying. I was alerted to its presence when I saw an older lady picking handfuls so I decided to get in on the action. She acknowledged me with a welcoming smile as I gestured back to her with a smile and hand movements to indicate that I was going to be cooking with this. She said to me in relatively good English that she was going to use hers to do laundry .
