Flourless banana bites🍌🥜 Plant based, gluten free, and refined sugar free!! If you’ve ever had a finnikia (type of Greek cookie), they reminded me of these! ⁣ ⁣ #recipe⁣ 1 cup bananas mashed⁣ 1/4 cup almond flour⁣ 2 tbsp coconut flour⁣ 2 tbsp any nut butter ⁣ 1/4 cup honey (can use maple syrup or agave if vegan)⁣ 1 tsp baking powder⁣ Vanilla extract⁣ Cinnamon⁣ 1/4 cup Nutsola mix (if you don’t have any you can use crushed nuts, chocolate chips, coconut, etc)⁣ ⁣ Preheat oven to 350 degrees. Combine all ingredients besides the nutsola in a bowl. Grease a muffin tin and fill each cup about 2/3 of the way. Top each muffin cup with the nutsola or whatever you are using instead. Bake for about 15-20 minutes or until browned and cooked through. I’m definitely learning to seek peace during this time when things may not feel so right. There are so many things that I miss right now but I’m enjoying this slower pace of life. I think I’ve watched more tv in the past three weeks than I have in the past two years🤪I also started meditating which I never seemed to have the time to do before now. What’s one thing you are enjoying now that you have the time? On my plate: BBQ chicken quesadillas, roasted snap peas and organic blueberries.

Anyone else feeling just a little tired of cooking?! We’ve never been people who eat out a ton but apparently those few meals out made all the difference because I’m currently less than thrilled (to put it mildly) about making dinner tonight. Mostly it’s the dishes. I just want to toss all the dirty plates in the trash. But I won’t. Because restraint, y’all. So here’s a super simple meal that even I can get on board with right now. Brunching At Home. ⁣ ⁣ Thought I would share a fun moment from last night. ⁣ ⁣ So last night I decided to sing broadway karaoke because honestly it makes me happy. Whipped up some “Protein” Pancakes and then made a homemade topping by roasting chopped apples in butter with cinnamon, nutmeg, ginger, lemon juice and lemon zest. Right before serving, I turned on the broiler and added raw pecans and real maple syrup. Perfect pre-workout birthday-eve brunch feast. 🥞 🍎 🥜

Spring New Potato Salad. ⚘⚘⚘ The first day you get home with your grocery haul for the week is the most inspiring. We always get a bag of new potatoes because they last a long time. So a potato salad with some minced & sliced fresh veggies seemed like a good plan today. I used cucumbers, leeks, radishes, sugar snap peas, cherry tomatoes, sweet peppers, capers, torn radicchio, and chopped parsley & dill. I topped it all with my daughter @erin.cauley 's signature perfect 6 minute eggs. 🌝 The final touch was drizzling it all with a tangy mustard vinaigrette to keep it light & fresh. Creamy 🍄🍄 sourdough toast! This was one of the most popular recipes I’ve made with you guys and also happens to be a favorite of mine. Have the 🍄 over toast or pasta for coziness overload🙌🏻😊This took 5 minutes to make and was absolutely insanely delicious. Ingredients: 1 cup mushrooms, sliced 1 small handful dino kale, chopped 1/2 tsp olive oil (I used @caoliveranch ) A dash of sea salt 1 big dollop of @foragerproject cashew yogurt 2 slices of sourdough bread (I keep mine frozen after slicing) Sautée the shrooms, olive oil, kale, and sea salt until the mushrooms become soft. Add the yogurt. Sautéed for 1-2 more minutes. Top on warm toast and enjoy!

This being our third week in this coronavirus lockdown, I gave in to the urge to do some stress baking. Baking has long been therapeutic for me, a state of bliss where I can lose myself in the aroma of cinnamon, the sensual pillowiness of bread dough, the rainbow of creamy buttercream frosting. So even though I’ve refrained from baking since deciding to make some dietary changes last fall (with only a couple of exceptions such as my son’s birthday cake), the stress of our current situation has knocked a small dent in my will power. Keeping my health goals in mind, I chose to make a dessert that is both nostalgically comforting and relatively healthy: my mom’s carrot cake. I grew up on this cake, even, for a short time during my pickiest years, eating it at breakfast, lunch, and dinner—that is, when this kid in my 3rd grade class didn’t steal it out of my lunchbox! Made with whole wheat flour and olive oil (my mom would have used safflower oil back then), as well as 1/3-less-fat cream cheese in the frosting, it’s really not that unhealthy. Well, there is a bit of butter in the frosting, but this week I’m not beating myself up over that. I’m the kind of person who looks at cake as just a conveyance, a carrier for the frosting! While my mom usually used orange juice and zest in her frosting, I prefer the flavor of lemon, although I have been known to make it with orange or even lime. The best endorsement for this recipe: my teenage son just dubbed it his second favorite cake! It’s interesting to me that stress baking has now become such a thing. I've been thinking about how this time is a really really big opportunity for us all to evaluate our typical levels of food waste, our spending, and our habits overall. ⁣ ⁣ 🛒 When we don't want to go to the grocery store unless absolutely necessary, and when we're being conscious to make sure we're not hoarding more than we need, and when many of our jobs are being put on hold and we're being faced with financial uncertainty... suddenly, the idea of throwing out half our unused groceries seems completely irresponsible. 🥬 ❌⁣ ⁣ What an important reminder that in reality, this level of waste is always irresponsible. We can all stand to do better, myself included! 🙋🏻‍♀️⁣ ⁣ Cheers to building and recognizing the importance in these new habits — buying only what we need, actually using the things we buy, cooking more, and being mindful of how much we're throwing away. 🗑 ⁣ ⁣ How has this been going for you? We made it with just California strawberries and sugar — no corn syrup, no palm oil, no coloring — so it has a wonderfully intense, jammy flavor. My meals are getting weirder. 🙃 - But the amount you can do with quinoa is surprising. 👀 - This is Vegetable curry, with roasted pepper & marinaded chicken. 🙌🏻 - (Marinaded/spread some paste on. Same thing 🙄) - I cooked the quinoa in water for about 15 mins, adding water as needed. Then added 1 chopped onion & some cumin seeds. Next, what was left from a Korma paste jar & a Tikka paste jar. Then some fresh tomatoes & frozen cauliflower. Finally some kale. I added water whenever it started to dry out and the end result was pretty darn good ✌🏻 - Would have been even better with fresh coriander & mango chutney but apparently these aren’t essential items. Who knew 🤷🏼‍♀️ 🥭 - . What weird stuff are you guys making? 👏🏻💛

Eat clean this spring! Here’s a #breakfastrecipe to get you rolling! Omelet with Asparagus & Smoked Salmon 2 eggs 2 tbsp smoked salmon, chopped finely 1 cup asparagus, chopped 2 tbsp ghee or olive oil A squeeze of lemon Sea salt to taste In a small sauté pan, heat 1 tablespoon of oil, add the asparagus and let simmer for a few minutes stirring occasionally, add the salmon and continue to heat for another minute or two. Set aside. Crack the egg right into the pan and season with a little sea salt. Set the egg. Add omelet filling of asparagus and salmon and finish with the squeeze of lemon. These tomato-y, garlicky, spicy sautéed scallops served on top of a simple green salad with marcona almonds and chives are what I want for dinner tonight, but I have no scallops or shrimp!!! ⠀ ⠀ If you have some though, I highly recommend making this. It will make you happy.⠀ ::⁠⠀ ::⁠⠀ ::⁠⠀ ⁠SCALLOPS PICCANTE⁠ (aka, Spicy Tomato Garlic Scallops)⁠⠀⁠⠀ Serves 6-8 as an Appetizer⁠⠀⁠⠀ ⁠⠀⁠⠀ First, you need to make some Garlic Confit:⠀⁠⠀⁠⠀⁠⠀ • Just put a bunch of peeled garlic cloves in a small pot, pour enough olive oil over them to just cover them, add a chili pepper or two for a bit of heat (optional), then place it on a burner on the lowest heat possible and let it cook super slowly until the garlic cloves are soft & just turning to brown. Remove from heat & let cool, then store covered in the refrigerator.⁠ (There are so many uses for this - I suggest making a good amount of it and using it throughout the week-for salad dressings, garlic bread or just about anything that could use a little garlic + olive oil!)⁠⠀ ::⁠⠀ ::⁠⠀ Then, make the marinade by mixing the following together in a food processor until all ingredients are well-incorporated:⠀⁠⠀⁠⠀⁠⠀ ⁠⠀⁠⠀ •3 fl oz (6 Tbsp) extra-virgin olive or garlic oil⁠⠀ •2 1/2 Tbsp tomato paste ⁠⠀ •1/4c Calabrian chili paste⁠, aka, "bomba"⁠⠀ •2Tbsp GARLIC CONFIT cloves⁠⠀ •1/2 tsp salt⁠⠀ •1/4 tsp black pepper⁠⠀ 🌶⁠⠀⁠⠀ Then, use this mixture to coat & marinate 2 lbs of raw scallops (mussel removed) for 2-3 hours or up to overnight. What is your biggest struggle following a vegan diet! These days meal planning has become more difficult as I'm the cook in the home and not everyone likes my choices and want their meat 😭🤪 There are so many ideas in my head but always hold back because I'm always thinking about the others and what they will eat and not eat and a lot of times my meals are left to last and I don't have the energy to make proper meals for myself as much as I try This is my biggest struggle and very frustrating. 😖 Sorry about the rant.🙇‍♀️ However last night's dinner was delicious and filling. On my plate are roasted baby carrots, mixed veggies, rice and vegetable balls from Ikea which tasted really good 😋 but now I have no more on hand 🥺 I seasoned the carrots with minced garlic, salt, pepper and balsamic vinegar and roasted them for about 45 minutes at 350°f. The rice was simple, just sauteed onion and garlic and a vegetable bullion cube and followed the package directions. The veggies were mixed with Greek seasoning and sauteed with a bit of olive oil, these were more cooked than I liked but tasted good. . . . . . . . . . . . . . . #veganmeatballs #veganmeals #healthymeals

I’m very much on team ‘sweet breakfast’ 🙌🏻; most days you’ll find me with a yoghurt or oatmeal bowl! But this morning my whole family went the savoury route with eggs, and since they looked pretty darn tasty I made myself 👩🏻‍🍳 some as well! I always scroll through posts with tahini sauce on my feed so I had to see what the hype was about! Honestly didn’t expect much since I don’t really like the bitter taste of tahini but it turned out so good!! And it worked perfectly as a drizzle over sweet kabocha squash . To make: a glob or tahini, a bit of water, squeeze of lemon juice, salt and pepper, and garlic salt! Mix everything together and keep adding water until you get the desired consistency 👌I eyeballed the amount of these ingredients, so just try it as you go and adjust the taste as needed. Garlic salt goes a long way to mask the bitterness. Once satisfied, pour into a ziploc bag and cut off the corner to make a small hole. This helps to drizzle neatly! Enjoy 😚 . Yesterday I was in dire need of chocolate... it was just one of those days... I’ve been practicing making the most of what I have in my pantry and being as minimal as possible with my recipes so I only have to the grocery shop when it is absolutely necessary. This practice of stretching my ingredients has been actually been a fun challenge because it allows me to be creative and intentional. Here’s what I came up with - 5 ingredient double chocolate cookies! 2 small over-ripe bananas, mashed 1/4 cup cacao powder 1/4 cup peanut butter 1/4 cup almond flour 1/2 a bar of dark chocolate broken up Pulse the ingredients in the food processor, bake at 350 for 8 minutes, then pop them in the fridge until they cool! They are fool-proof and super yummy - so yummy that I nearly devoured them before snapping this photo... clearly. 🍌🍫

Pinto beans with green chile and homemade tortillas. This might be my ultimate comfort meal because it takes me back to growing up. We always had a big pot of beans, giant jar of salsa, and tortillas in the fridge. Bean burritos with green chile made up at least one meal each day for me through high school. Gently stir in blueberries. Spray skillet with baking spray and pour ¼ cup of batter. Flip the pancake when bubbles start to form. Serve with your favorite toppings and enjoy!

🇺🇸 Say hello to my new fav drink : DALGONA COFFEE or whipped coffee. 😍🥰 . Made this beauty for the first time yesterday and oh my my : DELICIOUS. . Perfect for spring and the sunny weather who is there since the start of this quarantine 🤷🏻‍♀️ don’t need coffee shops friends you can make such beauties at home 😍 . #onmytable : dalgona coffee ♡ . Recipe : - 1 tablespoon of instant coffee - 1 tablespoon of sugar - 1 tablespoon of hot water . I used Ricoré and vanilla flavored sugar. So it gave even a sweeter taste 😍 . Put all the ingredients in a bowl and start whisking with a whisk the first minute then with an electric one. Until you get a creamy brown/gold consistency :) I used an electric whisk on low intensity. I tried it again today, I got a more smooth texture, and its as delish as ever 😍🥰 . In a glass add some ice cubes and milk of your choice. Then layer the whipped coffee on top. And ot’s ready! It takes 5-10mins to make!!! . I wish you a beautiful day ♡ . 🇫🇷 Dîtes bonjour à ma nouvelle boisson préférée : le café DALGONA ou café fouetté 😍 . J’ai testé cette boisson hier et oh je l’adore! Un délice, je vais m’en refaire un cette après-midi 😍 . La recette : - 1 cuillère à soupe de café instantané ( Ricoré pour moi, la base dans ma famille 🙏🏻) - 1 cuillère à soupe de sucre - 1 cuillère à soupe d’eau chaude À côté : Glaçons et le lait ( de votre choix ) . Ajoutez les cuillères dans un bol ( café/sucre/eau ), j’ai mélangé avec un fouet au début et ensuite j’ai utilisé un batteur électrique ( à une vitesse basse ), et vous battez (5/10mins) jusqu’à l’obtention d’une crème marron/dorée :). Il faut que la texture soit crémeuse/onctueuse, j’ai réessayé aujourd’hui et elle était beaucoup moins « mousseuse » que sur la photo! Vous inquiètez pas c’est très bien aussi, même mieux et délicieux 😍🤤 . Vous pouvez aussi mélanger à la main...ça vous fera le sport du jour 🤷🏻‍♀️ c’est environ 20mins! . Dans un verre ajoutez le lait et les glaçons et versez votre café fouetté au dessus. . Et voilà c’est prêt 😍 régalez vous bien et n’hésitez pas à partager en story si vous le testez 😍 .
