I weighed twice in the last two days.⁣ ⁣ first time I’ve done that in MONTHS, maybe all this year.⁣ ⁣ yesterday I stepped on the scale for my monthly weigh-in and was shocked/frustrated/disappointed to find I gained half a pound over May. I credited most of that as bloat etc due to too much 75% chocolate and some off plan tortilla chips on my crossover taco salad the night before, but it was still frustrating. really frustrating.⁣ ⁣ this morning, the scale was still sitting in our bathroom (I hadn’t put her in timeout yet) and I decided to step on it.⁣ ⁣ and y’all, I was 2.2 pounds less than I was yesterday.⁣ ⁣ this is important for two reasons:⁣ 1) it shows (once again) that the scale can fluctuate a loooot and we shouldn’t get too caught up in it. THIS WILL CHANGE YOUR SUMMER ☀️🔥🍫 These marshmallows taste like the REAL DEAL! And you can roast them for S’MORES!!! (But be careful...they fall off of your roasting stick easily and you will be sad to loose any 😞) ALSO, I made a super easy graham cracker replacement. I cut a low carb tortilla into big squares. I laid them on a paper towel covered plate and sprayed with coconut oil spray. I sprinkled with Gentle Sweet and cinnamon. Then, I microwaved for about 90 seconds. They crisped up into the perfect crunchy cracker to hold the melty goodness. I used Lily’s milk chocolate to complete the wonderful combination. Have you ever made the “Can-do Cereal from THT? I never had before the other week. Truth be told, if I had of read all of the directions before starting, I would never have made it. 🙈 It has a lot of steps, and takes a long time! However, I made the FP version, and it was a lifesaver for me. Plus, it is really nice to have a cold cereal type food to enjoy for breakfast or lunch. Last week I cooked for a friends church retreat. I was away from home, and cooking for hours each day. I love cooking, so that wasn’t a hardship. I packed half of my kitchen to go with me, so I had lots of familiar tools to work with. Unfortunately, it wasn’t THM style food, although that would have been super fun. That being said, having this cereal on hand to get me going each morning was a huge help! I decided I liked it enough that I was making a double batch tonight. Hey, why not? It’s FP, takes a lot of time to cook, why not save time and make more at once. I’m super excited about the 2nd cooking step though. Instead of using my oven and cooking it on low overnight, I’m using my dehydrator. Spreading it out on different trays gives me more space to work with, and hopefully the air movement from the fan will help too. Yay for finding ways to make the process more efficient! Just a heads up on steps involved if you want to try, you have the dry ingredients that you will mix with whipped egg whites (and a couple other things). Cook those, then break apart in small pieces. Make another mix of ingredients you stir into the broken pieces, and cook in the oven again overnight. We closed out May with 4 birthdays, which meant lots of yummy celebration foods and desserts. We celebrated my moms bday and she requested pork tenderloins, my hubby cooks these the best! 🙌 My mom has lost over 30 lbs by just changing her dinners to THM! I’m so proud of her! 🙌 We all take baby steps to better health. One step at a time! 🥰 Helpin Hubby’s Trim Healthy Tenderloins recipe: 😋 Step 1: Slice one pork loin. Tenderize the meat with a meat mallet. Step 2: Coat in whisked egg. (4 eggs per dozen tenderloins) Step 3: Dip in premixed thm breading. 2 cups Parmesan 1 cup Nutritional yeast 2tsp mineral salt 1 tsp. Garlic powder 1 tsp. Black pepper A few shakes of cayenne (up to a 1/4 tsp if you like a little more kick) Tip: make mix in plastic bag and then put into a cookie sheet for easy breading. Step 4: Fry in coconut oil, olive oil or butter uncovered until golden brown. Approximately 4-5 mins each side. For sides we enjoyed peas and asparagus along with Chocolate Berry Wedding Cheesecake from the THM cookbook page 332. 😍

That moment when you feel like a purist dream because you managed two crunchy projects yesterday and are enjoying the fruits of your labor for breakfast. I made raw milk cottage cheese this weekend, and I finally made my homemade sourdough bread after neglecting my poor starter for almost this entire week. I didn’t salt my cheese so if paired really well with cubed papaya and left a really clean taste in my mouth. I’ll put the link to the cottage cheese recipe in the comments.

Do you know how versatile sourdough starter is? I didn’t until I started digging deeper into different sourdough recipes. I’ve made bagels, pizza crust, crackers, cinnamon rolls, and the best no-knead bread. Pictured is my latest batch of crackers with one happy kiddo. I changed up the recipe this time by omitting bacon grease (I used coconut oil instead) and adding everything but the bagel seasoning. 🤤 So. Good. Please don’t take me for an expert by any means, 😅 I’m still learning, but do you have any questions about sourdough?

3 years of becoming a butterfly. 🦋 (part 2)⁣ ⁣ these past 5 months have been eye-opening.⁣ ⁣ I’ve learned I was scared of carbs. I’ve learned that the scale had too much of a hold on me, so I put it in time-out for a few months. I’ve learned that I’ve relied too much on heavy S meals. I completed my 5th fuel cycle. I’ve learned I’ve been pretty sedentary, so I bought a second-hand FitBit in January and I’ve been consistently going on good, long walks since then. I’ve started working out consistently (2-4 times a week) again. I’ve learned I’ve used my knee as an excuse.⁣ ⁣ I’ve been around 90% on plan these last 5 months. I’ve still gone off plan...I’ve still eaten too much and had to reset with some deep S. but mostly, I’ve been on plan.⁣ ⁣ and y’all...the scale still says I’m 20 pounds over my goal weight. I’m not gonna stand here and say that doesn’t mess with my head a little and that I’m not frustrated. I’d love to see a little bit of a reward for all my hard work!!⁣ ⁣ BUT.⁣ ⁣ I’ve learned/am learning to put the scale in its place, and to focus more on how I FEEL. and you guys, I feel so. much. better. than I did last summer. I feel stronger, and healthier, and fitter. I still want to reach that goal weight...or at least be a whole heck of a lot closer. 3 years of becoming a butterfly. 🦋 (part 1)⁣ ⁣ May is my “trimiversary” month, and while it’s hard to believe I’ve been following the Trim Healthy Mama plan for 3 years now, it also seems impossible that it’s *only* been 3 years.⁣ ⁣ this journey has NOT been a straightforward one, but it HAS been a worthwhile one.⁣ ⁣ I started THM after years and years of struggling with my weight and trying out many different diets and exercise programs...none of which stuck or worked for long.⁣ ⁣ I healed my gut and hit goal weight within a year and a half of being on plan, but then I tried to make up for years of not eating gluten, and I simultaneously wrecked my gut again and gained back some of the weight.⁣ ⁣ two+ years on plan found me (once again) gluten free and at goal weight, but not what I’d consider “healthy”. I had injured my knee pretty badly, and I was only a few weeks from getting married. the stress was HIGH and my body was in constant fight mode.⁣ ⁣ post wedding (almost 9 months ago) found me sick on our honeymoon (fun stuff) and eating both sugar and gluten in the name of celebration. (bad idea.) over the next almost 4 months, I was on/off plan and gained about 20 pounds. YIKES.⁣ ⁣ the last few days of 2019, I decided enough was enough. I hated how I felt, hated how I looked, and I was ready for a change. a few non-scale victories from the weekend // hiked 7.5ish miles Saturday on a trail that had yet to be bucked and had a loooot of trees/debris on it. (aka: it was an even harder workout than normal hiking is.) picture 2 is part of a “trail” (😂) we did. the NSV part is that I was hardly sore the next morning! then Sunday we went on what was supposed to be a nice lil 1 mile hike but turned into around 6 miles with 4 of it down/uphill in the snow. picture 5 shows the lake we hiked down to in the bottom right corner. Dill Salmon with roasted cauliflower and side salad with thinned out sauce I put on the salmon. The sauce was just mayo mixed with yogurt (I used lactose free), dill, powdered onion, lemon zest, a few tablespoons of nutritional yeast (use Parmesan for dairy option), salt and pepper. Somehow I blinked and I’m 30 weeks pregnant! 😳 Our little guy is moving all the time, and I’m starting to feel him up in my ribs more consistently. 😉 My latest cravings have been all the fruit, which is perfect considering we’re almost in prime fruit season!
