My son cooked tonight. He walked to the shops and purchased all the ingredients to make the most delicious pesto, with cashew nuts, pine kernels, olive oil, garlic, nooch, and loads of fresh basil. He made bruschetta using part baked olive ciabatta, which complemented the meal perfectly. This creamy roasted red pepper & garlic sauce by @hello.kalin 🔥 can go on everything from pasta to potatoes to buddha bowls! It’s so flavorful!⠀ ⠀ ROASTED RED PEPPER & GARLIC SAUCE:⠀ ⠀ Ingredients: 1 red bell pepper • 1/2 cup cashews ground into fine powder • 1/2 cup vegan cream cheese (in a pinch you can substitute cashew cream [1.5cups raw cashews soaked overnight then blended with 3/4 cup water], or unsweetened plant milk for a thinner sauce) • 1/4 cup extra virgin olive oil • 3-4 garlic cloves • 1 tbsp tomato paste (optional) • Salt & pepper to taste.⠀ Method: (1) Roast the garlic. The fastest way is to place the cloves on a piece of aluminum foil with a dash of oil, then close the foil to create a pouch and roast at 350°F for 30 minutes. (2) Roast the red pepper. You can do this directly on the oven rack at 450°F for 30 minutes, or if you have a gas stove, roast the pepper over the flame until all sides are blackened. Allow the pepper to cool, then remove most of the charred bits, stem, core, and seeds. (3) Add the red pepper, garlic, cream cheese, cashew powder, oil, tomato paste (if using), salt and pepper to a blender and blend until very smooth. Follow us @veganmeal.recipe Get the recipe: ⁣Recipe (yields 3 servings)⁣ 🌱Ingredients:⁣ ~ 1/2 lb long beans (about 24 stalks)⁣ ~ 16 oz firm tofu, pressed⁣ ~ 1/4 cup finely chopped carrots⁣ ~ 1/4 cup finely chopped King oyster mushrooms, sauteed & seasoned with salt⁣ ~ a handful of chopped cilantro⁣ ~ 1/2 teaspoon salt, a few shakes of white pepper⁣ ~ 2 cloves garlic, finely minced⁣ ~ 2 Thai chilis, chopped⁣ ~ oil for cooking, toasted sesame oil, cornstarch, toasted sesame seeds⁣ 🌱Sauce ingredients: Mix together 2.5 tablespoons soy sauce, 1 tablespoon hoisin sauce, 2 teaspoons hot bean paste in 1 cup water until well combined.⁣ ⁣ How to:⁣ ✅Bring a pot of water to boil, add a pinch of salt, then blanch green beans in hot water for 2 mins. Remove & soak green beans in an ice water bath. ✅To make the stuffing, place pressed tofu in a food processor/blender, pulse a few times until it turns pasty. Transfer tofu into a bowl & add in chopped carrots, mushrooms, cilantro, 1/2 teaspoon of salt, a few shakes of white pepper, 1 teaspoon cornstarch & a drizzle of toasted sesame oil. Mix all ingredients until well combined.⁣ ✅👉👀🎥 check out @woonheng's page on how to make knotted beans.⁣ ✅Place knotted long beans on a cleaned surface & generously dust both sides with cornstarch. Stuff long beans knot with tofu mixture.⁣ ✅In a heated non-stick pan with 1 tablespoon oil, pan fry long beans until golden brown on both sides. Push them aside & sauté garlic until fragrant. Add in sauce, chili & lightly coat long beans with sauce. Place a lid over & let simmer for 2-3 mins or until the stuffing is fully cooked. (Leftover filling can be turned into tofu cakes😋) ✅Season accordingly, add cornstarch slurry for a thicker sauce & garnish with sesame seeds.⁣ .⁣

Today, it's all getting to me. I'm not okay today, by any stretch. Doing my best to stay stable. A lot of sleeping today, watching Hulu, staying in my room with blackout curtains, crying. Recipe (Serves 1-2):⁣ - 2 servings of dried pasta of choice (I used wholewheat penne) ⁣ - 1/2 medium/large onion, diced⁣ - 1 clove garlic, minced or 1tsp garlic granules ⁣ - a few closed cup mushrooms, sliced⁣ - 1/2 a 400g can red kidney beans, drained & rinsed⁣ - 1/2 can coconut milk ⁣ - 1/2 tsp ground cumin⁣ - 2 tsp medium curry powder⁣ - a handful fresh organic spinach⁣ - juice of 1/2 a lime⁣ - salt & pepper to taste!⁣ ⁣ 1. Cook the pasta according to packet instructions, then also add the red kidney beans to the same pan as the pasta to cook together until al dante. ⁣ 2. Meanwhile, sauté the onion, garlic & mushrooms in a frying pan with a little water/oil for 5-10 mins until the mushrooms are soft. ⁣ 3. Turn the heat down to low, then add in the cumin & curry powder. Stir for 1 min until fragrant.⁣ 4. Pour in the canned coconut milk & squeeze of 1/2 a lime. ⁣ 5. One the pasta is cooked, drain the pasta and kidney beans from the pan through a colander, then stir them into the pan with the curry. ⁣ 6. Bring the heat up to a medium setting, add a handful of spinach and stir frequently for 5 mins until the spinach has wilted. ⁣ 6. Season with salt and pepper. Serve once piping hot and enjoy! ⁣ . . . . .

Banana cake 🌱 (1 cup = 200ml) Dry ingredients -2 cups of whole wheat flour -1 cup demerara sugar -1 teaspoon baking powder -1 teaspoon of baking soda 1/2 teaspoon ground cinnamon Wet ingredients -1 1/2 cup vegetable milk -1/3 cup vegetable oil -1 tablespoon of white vinegar Toppings -2 sliced ​​bananas For the crumble -1/2 tablespoon of wheat flour -1 1/2 tablespoon of sugar -1 tablespoon of finely chopped walnuts To make crumble: Mix all the ingredients. Para fazer a farofa doce: Misture todos os ingredientes até ficar como uma farofa. Para o bolo: Coloque em uma tijela a farinha, açúcar, fermento, bicarbonato e canela e misture bem. Adicionar o leite vegetal, o óleo e o vinagre e misture delicadamente com uma espátula. (A massa deve estar só um pouco grossa,mas fácil de entornar). Recipe 1 medium onion, chopped 1 clove garlic, minced 1 medium carrot, chopped 1 cup (76g) mushrooms, chopped 1 red bell pepper, chopped 1 tsp basil 1 tsp turmeric 1 tsp paprika 1 tsp salt 1 cup (100g) red lentils 1 can (400g) chopped tomatoes 2 cups (200g) gluten-free pasta ½ can (120ml) coconut milk 1 cup water 2 tbsp tamari 2 cups (134g) kale Add the onion and the garlic to a large saucepan or frying pan, and sauté for 2-3 minutes, until softened. Add the carrot, mushrooms and bell pepper. Sauté for a further 2-3 minutes, before stirring in the basil, turmeric, paprika and salt. Stir to coat the vegetables, then add the red lentils, chopped tomatoes, pasta, coconut milk, water and tamari. Simmer for 12-15 minutes, until the pasta and lentils are soft, stirring in the kale half way through the cooking process.
