First attempt at a sourdough focaccia. Topped with olives, sundried tomatoes, garlic mushroom, dried herbs, nooch and rock salt. Crisp exterior, soft and fluffy interior. Working with sourdough requires so much patience and even more practice. This was a wet dough, in comparison to my previous attempts at sourdough bread. 2-BITE VEGAN COCONUT BARS. Wild hair? Coconut oil. Dry skin? Coconut oil. No cake? Coconut oil. Bad credit? Coconut oil. Empty bank account? Coconut oil. Conclusion: The answer is always coconut oil. ⠀⠀ Here’s a quick and easy recipe for 2-Bite Coconut Bars. They’re light, fluffy and everything you dream of in a coconut cake. INGREDIENTS Bars: 125g self-raising flour 1 tbsp cornflour (cornstarch) 140g caster sugar 50g unsweetened desiccated coconut 50g coconut oil, melted and cooled 160ml coconut milk 2 tsp lime juice 2 tsp vanilla extract Icing: 200g icing sugar (confectioner’s sugar) 1-2 tbsp water 1/2 tsp vanilla extract 2 tbsp desiccated coconut (regular or toasted) Sprinkles of your choice METHOD 1. Pre-heat the oven to 170°C/340°F. Grease a 24-mini bar tin or financier tin with oil spray. 2. In a large bowl, whisk together the flour, cornflour, sugar and desiccated coconut. 3. In a separate jug or glass, mix together the coconut milk, vanilla extract and lime juice. Set aside for 5 minutes, undisturbed. After 5 minutes, give it a brief whisk. 4. Whisk the wet ingredients into the flour mixture until just combined. Fold in the melted coconut oil. Don’t overmix. 5. Pour the batter into the tin, just over 3/4 of the way full. Bake the bars for 10-12 minutes or until a skewer inserted into the middle of a cake comes out clean. They should be springy to the touch and not too brown on top. 6. Remove from the oven and allow to cool in the tin before turning up down on a clean surface to remove. Tap the tin gently to help them pop out. Cool on a wire rack. 7. To make the icing: mix all the ingredients except for the coconut and sprinkles. Add a few drops of water at a time to ensure it’s not too runny. Drizzle or dip the cooled bars with icing and decorate with coconut and optional sprinkles. Allow to air dry for 1-2 hours. Store in an airtight container. #bestofvegan #thebakefeed #coconutbars
