Spice up your life and try this dish. . . #Repost @veganbowls (@get_repost) ・・・ A bowl of Curry Laksa Noodles by @woon.heng to spice up your weekend.⁣🔥 Get flavourful the recipe below: ⁣ Recipe (serves 2)⁣ Ingredients:⁣ ~ Dried noodles of your choice (used udon) - cook based on package instructions⁣ ~ 3 tablespoons chili paste (check highlights too)⁣ ~ handful of curry leaves, 2 tablespoons of each: shallots, garlic, 2 teaspoons finely chopped ginger⁣ ~ 4-5 cups of veggie stock⁣ ~ 1/2 - 3/4 cup coconut milk⁣ ~ salt to taste⁣ ⁣ Chili paste ingredients (used in a lot of my other recipes):⁣ ~ blend together 1/2 lb fresh deseeded red chili, 1/4 cup chopped shallots, 5 cloves garlic, 1 small knob turmeric, 1 small chunk galangal, handful curry leaves, oil (enough to keep blender going)⁣ ~ tamarind juice, sugar, salt - to taste⁣ ✔️In a heated pan with 2 tablespoon oil, pour in blended chili & cook until chili turn dark red & aromatic. Season with salt, sugar & tamarind juice accordingly & continue to stir until the oil starts to separate from chili. Adjust sugar amount to your preference, start with 3 teaspoons & increase gradually. Once cooled, refrigerate or freeze extra for longer shelf life. ⁣ ⁣ 🍃Curry how to: ⁣In a big tall pan with 1 teaspoon oil, sauté shallots, garlic & ginger until fragrant. Add in chili paste & veggie stock, bring it to boil. Lower heat to simmer. Season accordingly & add curry leaves. Finally stir in coconut milk before serving. Wanted to share these Beet Wellington’s that I made while visiting family. I made the recipe mostly based on Gordon Ramsay’s recipe for the beets, but used my own puff pastry and duxelles. Turned out amazing and even my pretty serious meat eating family enjoyed these! I’m going to include the recipe in case anyone is curious! Boil 6 beets in 2qt water and 1qt wine. Add 1-2tbsp of Better than Boullion and 1tbsp of Rice Wine vinegar. The goal here is for them to turn out really savory. Simmer these for at least 30 minutes. For the lining: Cook 1lb finely chopped cremini mushrooms, 2tsp tarragon, 1tsp thyme, and 4 cloves garlic in oil until pretty well cooked. Then run the entire mixture and 1 1/4tsp Dijon mustard through a food processor until it’s almost paste-like. This should taste very rich on its own. For the puff pastry: 1 3/4c all purpose flour, folded in 4.5tbsp vegan butter until the butter is the size of large peas, then added 6tbsp of almond milk. I then rolled out the dough and folded on itself into thirds three times. Then I refrigerated the dough for only 2 hours, so I didn’t get nearly as many layers as if I had chilled for longer, as well as between folds. Assembly is easy, just roll the dough out thin and then I cut about 8in circles. Cover the circle with lining until about 1in from the edges. Make sure the beets are cooked before putting them on top of the dough, and then roll the dough up individually and pinch throughly to fold the dough to seal. I then used a wash of 1 parts maple syrup to 2 parts almond milk to help the dough turn out more dough. I baked these on top of pizza stones at 415 degrees for about 25 minutes. 🥔🌱 Easy Lentil Stew with Mashed Potatoes by @elavegan . Follow us @vegadishes for Daily vegan recipes . Ingredients Lentil stew 1 cup dry lentils (190 g) 1 large onion (chopped) 2 cloves of garlic (minced) 1 tbsp oil (for frying) 3 tbsp white wine (40 ml) (optional) 3 cups vegetable broth (720 ml) 2 cups mushrooms sliced (135 g) (*see notes) 2 tbsp soy sauce (wheat free if gluten-free) 1 tbsp balsamic vinegar 1-2 tsp each of dried parsley, thyme and oregano (use more, if fresh) A splash of coconut milk canned (for extra creaminess) 1/2 tbsp cornstarch (to thicken) sea salt, black pepper and chili flakes to taste Chopped pickles to taste (optional) Mashed potatoes 4 medium-sized potatoes (600 g) 1/4 cup coconut milk canned (60 ml) 1/2 tsp nutmeg (or more/less to taste) black pepper, sea salt to taste Instructions Rinse lentils under running water. I prefer to soak the lentils for about 15 minutes in lukewarm water but this step is optional (discard the water afterwards). Meanwhile, chop the onion, garlic, mushrooms. Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat. Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes. Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes). In the meantime, peel and chop potatoes, transfer them to a pot with water + salt and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender). Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and add this mixture to the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes. Serve warm, garnish with chopped pickles and fresh herbs (optional).

Sweet and Sticky Tofu bowl by 😋 The tofu is sticky, delicious, and crispy on the outside! ​. 𝐑𝐞𝐜𝐢𝐩𝐞⁣⁣ • 1/2 block extra firm tofu, drained & pressed all the liquid out⁣⁣ • 2 tbsp soy sauce⁣⁣ • 2 tbsp maple syrup⁣⁣ • 1 tbsp sriracha sauce⁣⁣ • 1 tsp garlic powder⁣⁣ • 1/2 tsp ground ginger⁣⁣ • 1 tbsp cornflour ⁣⁣ ⁣⁣. 1. Prepare the tofu by draining all the liquid out of the packaging, then gently pressing the tofu in between two clean tea towels until dry. Slice the tofu into bite-size cubes.⁣⁣ ⁣⁣. 2. Whisk all the sauce ingredients together in a small bowl until smooth and well combined.⁣ Stir in some sesame seeds for a crunchy texture.⁣ ⁣⁣. 3. Dunk the tofu cubes into the sweet sticky sauce until the tofu cubes are covered, then marinade them for 30 minutes by covering with clingfilm and placing them into the fridge to chill and soak up all the flavours.⁣ ⁣. 4. transfer the tofu into a heated frying pan/wok with a little spray oil. Cook for about 10 minutes on a medium-high heat setting until sticky and firm.⁣⁣ ⁣⁣. 5. Serve with your stir fry veggies and noodles!
