Mushroom Shawarma • • • We took inspiration for this from a @jamieoliver recipe in his Veg cook book. It worked really well taking the basic idea and putting a twist on it 😋 Give us a tag if you give it a go it's really worth trying and indulging in! • • • • Roughly chop some Portobello mushrooms • Quarter an onion and peel out the layers • Marinate both for 2 hours + in a mixture of olive oil, garlic, paprika, smoked paprika, cinnamon, cumin, cayenne pepper, chilli, salt, and pepper • Then skewer the pieces pop them on a roasting tray and put them in the preheated oven (250°C) • After 10 minutes squeeze the mushrooms together, baste in the sauce and flip the skewers leave for another 10 minutes before repeating, then again after 5 minutes • Now coat your mushrooms in a mixture of set honey and oil (or runny honey) and return to the oven for a further 15 minutes (squeezing, flipping and basting 2 more times) • Serve with flatbread, yogurt sauce, pickled cabbage, and salad (or whatever you like really) • Enjoy • • • • • • • • #mushroomshawarma #shawarma #kebab #veganshawarma #donner #donerkebab #vegankebab #fakeaway #veganshishkabab #vegandishes #vegan #vegandinner #dailyrecipes #veganrecipes #plantbased #plantbasedrecipes #recipes #easyrecipes #veggiefoodideas #veggierecipes #vegetarian #veg #food #foodblogger #instafood #igfood #healthyfood #healthy #accidentallyvegan #deliciousfood

Summer veg risotto 🍅 I had this dish in Italy on my youngests first holiday and when I make it, it takes me back to the sea front restaurant everytime 🐚 . . 1 cup rissotto rice 1 litre veg stock 1 white onion diced 1 red onion diced 1 garlic clove crushed 2 tbsp olive oil 1 chunk butter 1 courgette chopped 1 beef tomato chopped Cherry tomatoes to serve with . . Put the stock into a pan and bring it to the boil. Put the olive oil and butter into the pan to heat add the garlic and onion saute for 5 minutes. Add the rice and mix to coat for 1 minute. Add 2 ladles of stock in the rice stir and allow to soak up continue to do this for 10 minutes (ish) add the courgettes and tomatoes mix through. Continue to add the stock for 8 minutes (ish). Nachdem meine Geduld aber am ende war und ich keine Lust mehr hatte, wollte ich die Kokosraspeln nicht wegwerfen und habe sie stattdessen mit ein paar anderen Zutaten, wie z.B. Sojajoghurt zu Bounty verarbeitet. Wow, dafür das ich früher Kokos gehasst habe und auch nie Bounty oder ähnliches gegessen habe, schmeckten diese Wirklich sehr lecker 🥰 ~ Actually, I wanted to make coconut paste from coconut shavings. But when my patience was at an end, I didn't want to throw the coconut shavings away and instead I made Bounty with a few other ingredients for example soy yoghurt. Heute habe ich mal etwas Neues ausprobiert, weil ich ein paar Zutaten im Kopf hatte, von denen ich dachte, dass sie gut zu grünem Spargel passen könnten. Und dabei kam das heraus: Warmer Linsensalat mit grünem Spargel und Orangen-Senf-Dressing🍊 Zutaten für den Salat: ▫️Schwarze Beluga Linsen ▫️Orange ▫️Rucola ▫️Kartoffeln ▫️Grüner Spargel ▫️Knoblauchzehe ▫️Olivenöl Zutaten für das Dressing: ▫️Saft einer 1/2 Orange ▫️2 TL süßer Senf ▫️2 TL Aceto Balsamico ▫️1 EL Olivenöl ▫️Salz ▫️Pfeffer Zutaten für den veganen Kräuterparmesan: ▫️2 EL Cashewkerne ▫️1 EL Hefeflocken ▫️Knoblauchsalz ▫️Pfeffer ▫️Frische oder getrocknete Kräuter (z.B. Oregano, Basilikum, Thymian) Die Linsen bissfest kochen. Die Kartoffeln achteln, mit Olivenöl und Salz marinieren und für ca. 30 Minuten bei 200 Grad Umluft im Ofen backen. Das untere Drittel des Spargels schälen und die Enden abschneiden. Mit Olivenöl, klein gehacktem Knoblauch und Salz marinieren und für die letzten 8 Minuten mit auf das Backblech geben. Die Zutaten für den Kräuterparmesan in einem Mixer klein hacken und den Spargel kurz vor dem Herausnehmen damit bestreuen. Die Zutaten für das Dressing in einem Mixer pürieren. Die Orange für den Salat klein schneiden. #spolupraca mandľový raj od @nuttery_official opäť hviezdi. Holandská omáčka - už niekoľko krát mi napadlo skúsiť spraviť Veg verziu, ale viete ako... Žĺtky, maslo... Nejak som si nevedela predstaviť, ako to spraviť. Keďže bola opäť v Lídli v akcii špargľa, tak som si povedala, že MUSÍ existovať spôsob, ako spraviť niečo, čo je podobné, lebo to prostě MUSÍM dnes na tej špargli mať 🤣🙏. A myslím, že sa mi podarilo vytvoriť celkom slušnú vegan variantu. Postup teda diametrálne odlišný, ale chuť veľmi podobná. Má cca 3 dobré porcie som dala kopcovitú lyžicu masla, a orestovala na nej cesnak nasekaný na kúsky, nech pustí chuť. Stiahla som to na minimum, rukou som vzala asi 3 štipky múky, dokopy asi pol čajovej lyžičky, a postupne ňou zasypávala maslo za intenzívneho miešania, aby sa nespravili hrudky. Zaliala som to asi 100ml kvalitného mandľového mlieka od Nuttery, a nechala prepojiť. Ďalej asi 1 čl lahôdkového droždia, nechať prepojiť, a malý, asi 2,5cm kúsok veg syra (Veganlife) som nastrúhala na jemno a nechala rozpustiť, kvôli konzistencii, a spravilo to presne tú krémovosť, ktorú bolo treba. Na farbu som pridala štipku kurkumy, asi 1,5čl horčice a ako to hustlo tak som ešte prilievala mlieko, asi 50ml. Ešte som to jemne dosolila, a vybrala väčšinu cesnaku von, až tam nie sú tie veľké kusiská. Špargľa sa o piekla len tak na masle so soľou, a do kaše som použila rovnaké mlieko aj maslo. Bála som sa, lebo doteraz som používala vždy len rastlinnú smotanu, ale to mlieko je fakt neskutočné a dodalo to kaši jemnosť. Arroz con cosas Hoy os traigo un plato delicioso. Hacía mucho tiempo que no lo preparaba y ayer se me antojó como una buena opción para comer hoy. Os pongo los pasos a seguir a grandes rasgos. 🌱 Sofreímos los pimientos, cebolla y tomate a fuego medio. 🌱 A parte calentamos un poco de aceite y pasamos un poco la Heura por la sartén para tostarla un poco y añadimos al sofrito. 🌱 Lavamos el arroz y lo echamos en el sofrito. He mezclado un poquito de agua con Yondu de mi @iupibox (que me encanta). 𝙃𝙚𝙖𝙡𝙞𝙣𝙜 𝙢𝙮 𝙥𝙖𝙨𝙩 How many of you live inside your head? I know I do. As much as I try to put on a cool, calm and collected exterior, there are many days where I’m overthinking on the inside. Since I was a kid, I always felt like I just let people down. Unfortunately when you have very successful family members and friends around you, it’s hard not to feel like the fuck up within those groups. As much as I tried not to let it affect me, I did end up living a life where all I wanted to do was please everyone around me, even if it meant I was becoming more and more broken. I ended up living a life where I based my success on whether or not I lived up to someone else’s expectations of me. Fast forward to today, I’m 25, and though those feelings of never living up to peoples expectations is still there, that doesn’t mean I haven’t drastically improved on not letting other people’s views of me affect me. It’s a constant battle, but something I know I’ll fully get rid of someday So with that in my mind. I promised myself 3 things: 1) I won’t let past jobs that left me broke and almost homeless, shift my work ethic in the new job I have or will have in the future • 2) I won’t let past friendships and how they ended, affect me in meeting new people and making those new connections in this world • 3) I won’t let the girl who broke my heart 7 years ago, stop me from fully giving my heart to the girl I know is the love of my life. I won’t let past hurt get in the way of her and I growing closer and stronger together. It’s important to heal your past and move past what’s holding you back. For me, it’s not letting those outside voices get to me and twist me up. For me, it’s finally letting those wounds from past friendships and relationships heal and allowing others to finally love my heart fully.

Butter beans, sundried tomato pesto, cucumber, gem lettuce, nutritional yeast with some spicy carrot 'hash browns' 🥕🧡 * Bit of an experimental type of lunch yesterday - I decided to try and make these carrot hash browns, which I made by shredding two carrots, then mixing them with 1 tbsp of plain flour, 1 tsb of curry powder, 1/2 tsb of garlic powder. We did not have anything planned for dinner tonight. ⁣ ⁣ I finished work at 6pm.⁣ ⁣ But we did have healthy foods stocked and ready to throw together. We had rice already prepped. We had already de-stemmed and washed greens so that they were ready to be chopped (they cook down super quick). And we had hummus in the fridge, a few cans of chickpeas, and sweet potatoes that we could heat quickly in the microwave. ⁣ ⁣ I do not like using canned beans. I don’t like cooking potatoes in the microwave. But you know what? Sometimes it’s just one of those days. We could have easily just ordered takeout but this meal was delicious, nutrient-packed, and super inexpensive to prepare. ⁣ ⁣ Set yourself up for success when it comes to healthy eating. Lack of time is not an excuse. “It’s too expensive” is not an excuse. We could have ordered chipotle for $30 for our family of 4 and this meal was easily probably $10 total. ⁣ ⁣ Progress, not perfection.

Currently I’m in the process of re-training my brain that “I don’t always need meat” at dinner to make it a full meal. Growing up meat was always a staple at supper. Black bean pasta!!! Grabbed the pasta at @traderjoes last week and finally decided to give it a try. Made a simple cauliflower and cashew sauce then sauteed mushrooms, tomatoes and baby kale. I really enjoyed tonight's dinner! Fish-less tuna fish cakes served on a bed of my favourite stir fried noodles accompanied by sweet chilli sauce of course! 🍜😋 @lomalinda_brand --------------------------------------------------------- Fish cakes: • Preheat the oven to 160° • In a bowl mix 2x tuno sachets, 1 flax egg (1tbsp flax with 3 tbsp water), 3 spring onions, 1 tbsp dijon mustard, 1 tsp wholegrain mustard, 1 tbsp coconut cream, 3 tbsp semolina, 3 tbsp cornflour, salt and pepper to taste. • On a plate mix semolina, cornflour, garlic powder, ground ginger, salt and pepper. • Dollop a tbsp of mixture onto the plate and coat, then shallow fry until golden. Gebratener Räuchertofu in Erdnuss-Soja Marinade mit Kichererbsen in einer Kokos-Erdnuss-Soße! Dazu gab es Basmatireis 🌱🐾 Wenn man frei nach Schnauze gekocht hat und hofft das Rezept einigermaßen auf die Reihe bekommen zu haben.😅 Räuchertofu •200g Räuchertofu in mittelgroße Stücke schneiden und in Kokosöl knusprig anbraten. •Mit Pfeffer, Chili und Paprika rosenscharf würzen •1EL Erdnussbutter hinzufügend und mit den Tofustückchen in der Pfanne bei mittlerer Hitze vermengen •Ein Schuss Soja-Sauce dazugeben und abermals verrühren. •3 Minuten weiterköcheln lassen und aus der Pfanne entnehmen. Kirchererbsen in Erdnuss-Soße 1Dose Kichererbsen, gut abtropfen lassen 1Dose Kokosmilch 2 EL Erdnussbutter 2-3 EL Sojasoße Gerwürze: Pfeffer, Paprika rosenscharf, Chili Kichererbsen in dem verbleibenden Tofusud kurz scharf anbraten. Erdnussbutter hinzufügen und verrühren Sojasoße hinzufügen und vermengen Mit Kokosmilch ablöschen Und einpaar Minuten ziehen lassen.
