According to the World Health Organization, iron deficiency is the top nutritional disorder in the world. But this issue certainly isn’t exclusive to vegans. 🌱 BOTH omnivores & herbivores need to ensure they’re getting the recommended daily allowance (RDA.) This varies based on age and gender but typically ranges from 8-18 milligrams per day. While iron in plants has a lower bioavailability in meat, it is certainly possible to get your RDA of iron on a plant-based diet and maximize your absorption. To increase iron absorption, you want to consume foods rich in Vitamin C (lemon, peppers, oranges, etc.) with your iron sources. . Pero ¿sabemos todos los beneficios que tiene?🥕 Las zanahorias son muy beneficiosas para la vista y para la piel ya que son muy ricas en betacaroteno. No obstante, al consumir zumo de zanahorias podemos beneficiarnos de muchas más propiedades de esta hortaliza. Las zanahorias son las hortalizas más consumidas de todo el mundo. Esto es debido a sus propiedades y a que se pueden elaborar muchos platos sabrosos con ellas. La zanahoria contienen un nutriente conocido como betacaroteno es sintetizado por el hígado que lo convierte en vitamina A, un potente antioxidante que se “une” a moléculas dañinas volviéndolas inofensivas. Más allá de la que se consigue del betacaroteno, las zanahorias tienen bastante vitamina A. Un vaso de zumo de esta hortaliza aporta casi el 700% de las necesidades básicas de un adulto. Existen otros elementos muy destacados en las zanahorias que las convierten en un supervegetal recomendado para los niños, los adultos (sobre todo mujeres embarazadas) y los ancianos. Una taza de zanahorias nos aporta: * Vitamina C. * Fibra. * Potasio. * Vitamina B6. * Manganeso. * Molibdeno. * Vitamina B1 (tiamina). * Vitamina B3 (niacina). * Fósforo. * Magnesio. * Folato. Thai massaman curry Ingredients For the Massaman Curry Paste 1/2 cup roasted peanuts 1 tbsp. ground coriander 1 tsp. cumin 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves 1/8 tsp. ground pepper 1/8 tsp. ground nutmeg 1/8 tsp. ground cardamom 1 tsp. ground turmeric 5-15 dried red chili peppers* soaked in water for about 10 minutes and seeded (use gloves!) 1 stalk of lemongrass, minced 1 three inch piece of fresh ginger root,sliced 4 garlic cloves 1 shallot 1 1/2 tsp. lime rind 1/4 cup soy sauce 1/4 cup maple syrup juice of 2 limes For the Massaman Curry 2 (14 ounce) cans coconut milk 1/4 cup homemade massaman curry paste,recipe above or 1 can from store 1 sweet potato, diced into 1/2" to 1" cubes 2 cups fresh green beans, chopped to 1" to 2" pieces 1 red bell pepper, diced 1 lb extra firm tofu about 1 tbsp. vegetable oil about 4 scallions, sliced 1/4 cup roasted peanuts, chopped Instructions To Make the Massaman Curry Paste Place all ingredients in food processor bowl and process until a paste is formed, scraping bowl as needed. To Make the Massaman Curry Drain and press tofu. Mix coconut milk and curry paste in large saucepan. Heat to a simmer, stirring frequently. Add sweet potato, and allow to simmer about ten minutes. Add green beans and simmer about another four minutes, and then add pepper and simmer another two minutes. Your broth should be thick and creamy by now and your veggies tender. Taste test, and add a bit more curry paste if you'd like some extra umph. While your veggies simmer, cut your tofu into bite sized pieces. Heat oil over medium skillet, and pan fry tofu pieces on each side until slightly browned. Add tofu to curry mixture. Ladle onto plates or bowls and top with scallions and peanuts. Serve with rice.

Taco filling 1 avocado chopped into cubes 2 tomatoes diced 1 1/2 cups chickpeas drained and rinsed 1 green pepper chopped 1/2 big onion finely sliced 6 tbsp red cabbage finely sliced 1-2 tbsp balsamic vinegar (to roast the chickpeas) 1-2 tbsp soy sauce (to roast the chickpeas) fresh cilantro to taste . Instructions Put the chickpeas in a pan/skillet together with the balsamic vinegar and soy sauce. Roast at low-medium heat for about 5 minutes and stir frequently Chop your veggies and the avocado. You can lightly sauté the veggies (onion, green pepper, red cabbage, tomatoes) in a pan/skillet for a few minutes with a little bit of oil or leave them raw (like I did) Mix the ingredients for the tahini dressing in a small bowl with a whisk. If you use a thick tahini paste then you might need more water to thin it out Stuff your tortillas with the veggies, the roasted chickpeas and drizzle fat free dressing . The pumpkin is made of Japanese pumpkin and it feels very fresh. The Snacks Combo has French fries, fried onion rings and fried oyster mushrooms. My favorite one goes to fried oyster mushrooms, which is very crispy and tasteful! There are two kinds of sauces for the snacks combo, one of them has honey. I made vegan brownies from scratch for the first time yesterday, and it was most definitely a success! I’m thrilled with the way they turned out and even more thrilled that everyone who tried them seemed to like them 😊. The only problem with them is I can’t stop eating them 😂 Ingredients: 2 cups flour, 2 cups sugar, 1 tsp baking powder, 1 tsp salt, 1 cup vegetable oil, 1 cup water, 1 bar baking chocolate (melted), 1 tsp vanilla extract • Combine all ingredients and mix well, then bake at 350F for 25-30 minutes •
