💖PINK RISOTTO WITH GREENS💖 I mixed the Tesco Wicked beetroot pesto with my stock to give it that cute pinkish colour! Veg wise I added courgette, asparagus, peas and rocket. To top it all off I added some toasted (some might say slightly burnt 😂) hazelnuts. MUSHROOM STROGANOFF 🤩🌱 Ft. DIY budget garlic bread toast 😅 . A veganised version of the classic beef stroganoff ⭐ This was my first time making this - pretty chuffed with how it turned out despite looking like slop on a plate 😍 . Ingredients used to make x2 portions of the stroganoff: 450g frozen mushroom slices (couldn't find normal fresh mushrooms - they would be better lol), tbsp olive oil, 0.5 veg stock cube, generous sprinklin of garlic&onion powder (again, fresh garlic/onion would be tremendous but #lockdownproblems), tbsp dark soy sauce, lil tiny dash of kraken rum (optional lol used this instead of brandy and I think it worked????), 150g @alpro soya cream, 2 tbsp cornflour (to thicken it a bit as a lot of water came off the frozen mushroom), some paprika, mixed herbs, salt/black pepper & chilli powder to taste 💛🌱

Mashed potato cakes stuffed with sauteed veg! these bad boys are so filling 🌿 . The dough is quite similar to gnoochi and for the stuffing I simply sauteed a bunch of mushrooms, zucchini and green paprika with some herbs! 🙂 .

I tried making kidney bean burgers for the first time. I think I'm gonna try more recipes and then decide which I like best. Second week in isolation pretty much done, how’s everyone feeling? I took my dog on the field last night and my friend happened to be there with her dog - it was lovely to have a socially distant catch up with her while the dogs played. Better than a telephone call and it certainly lifted my mood ☺️ I’m feeling positive and in good spirits today, and I enjoyed my lunch so much I could eat it all again 😆 First I made up some wholewheat couscous, then to it I added 1tbsp (heaped) rose harissa pesto and a dash of lime juice, a handful of finely chopped cherry tomatoes and some finely diced red onion. Are you familiar with nutritional yeast/nooch? In Spanish it is called “levadura nutritional” and it is a great cheese substitute. ⠀ I personally love to add it to risottos or baked meals such as lasagna, but you can basically add nutritional yeast to everything. Great to make hummus + cashew cheeses. I’m so pumped for all the daily home workouts I’ll be doing this April! Your girl is back at it — stronger than ever💪 ⠀ I had plenty of time to relax and re-evaluate my goals without being rushed by deadlines and events, so I did my best to recover physically and mentally during these last two weeks when I was down with a nasty cold. ⠀ It feels great to be in harmony with my own self again. Thai Jungle Curry 🍛 This is a quick & simple thai curry which is healthy, delicious and full of nutrients! • INGREDIENTS (serves 4) 1 1/2 cup spring onion greens 4-5 spring onion heads (sliced) 3 green chillies 1 tbsp ginger-garlic paste 200g mushrooms 1 cup broccoli florets 1 red bell pepper (sliced) 200ml coconut milk 3 tbsp tahini 1 tbsp red chilli powder 1/2 tbsp coriander powder 1/2 tbsp garam masala 1/2 tbsp cumin powder 2 tbsp soy sauce 1 tbsp maple syrup 2 cups spinach Handful of fresh coriander leaves Juice of 1 lemon 1/2 cup boiling water Salt & Pepper as per taste • METHOD In a large pan, sauté onion, ginger-garlic paste, green chillies and the spring onion greens. To this add the red bell pepper, broccoli and mushrooms and let it cook for about 5 minutes. Then add the coconut milk and let it simmer on low heat. In a bowl, add tahini sauce and hot water, give it a quick mix. To this add red chilli powder, coriander powder, cumin powder, garam masala, pepper, salt, soy sauce, maple syrup and the juice of 1/2 a lemon. Add your sauce to the pan and let it cook for another 5 minutes. Once the curry is almost ready, add the spinach and cook for 2 minutes until it’s nice and wilted. Garnish with some fresh coriander leaves and chilli flakes, serve hot with your choice of noodles. ENJOY!

Homemade beans on toast😋. Me and Etta enjoyed this for breakfast this morning. To make the beans tip 2 cans of cannelli beans into a saucepan. I've always been experimenting with the pizza dough and sadly, have never been happy and satisfied with any effort I had put so far! Well guess what, a close friend of mine shared a magical recipe of pizza dough and I followed it as it is. Turns out, the recipe was magic without any exaggeration! Oh and btw, the dough made helluva number of pizza breads. 23 pieces at least! I know many of us like these simple yet flavourful pizza breads especially for breakfast! Blog in der Bio☝️Rezept anbei👇 • 👉Zutaten-Füllung: 100g Cashews (eingeweicht) 250g Mandel-Quark 50g Kokosflocken 100ml Mandelmilch 20g Kokosfett 5 EL Reissirup 1 TL Vanille Abrieb einer Zitrone Agar-Agar (nach Anleitung) • 👉Zutaten-Boden: Vegane Kekse (1 Packung) 30g Kokosöl flüssig Oder: 100g Mandeln 100g Cashews 5 Datteln ½ TL Vanille gemahlen • 👉Zubereitung Keks-Boden: Das Kokosfett erwärmen, bis es flüssig ist und die Kekse zerbröseln, beides vermischen und in der ausgelegten Form am Boden zurecht drücken. Füllung: Alle Zutaten bis auf das Agar-Agar mixen. Agar-Agar nach Packungsanweisung zubereiten und zur Masse hinzufügen. Torten-Creme in die Form füllen und für 5h kaltstellen.

I was going to say, it feels like a Saturday today... Oh, wait. 😆😅 • • Was insanely thankful to be able to have toast today because of the kindness of a neighbour offering out an extra loaf they had. Had banana and crunchy peanut butter with a sprinkle of salt. NOM. 🍌🍌🍌 • • Also if you zoom in, directly above my toast is a little bumblebee butt. He was dropping loads of little petals as I was trying to take my picture. I take it as quickly as I can and then run away. 😆

Double tap if you like OVEN ROASTED POTATOES! 😊 I’m a big fan of them and I actually don’t need any dips or sauces. I just love to eat pure potatoes. What about you? What’s your favorite dip? 😋 Guacamole, hummus, maybe ketchup or mayonnaise? Comment it below if you like! 👇 I had some hummus left and the first thing I thought of was to prepare oven potatoes. Super simple and tasty! I used 400 gram potatoes and 10 tbs coconut oil. No spices, no herbs… Of course you can add any spices or herbs that you like. For the hummus I simply mixed 100 gram cooked/ canned chickpeas, 50 ml water, 15 gram olive oil, 1 tsp lemon juice, lots of salt (make sure to use salt with iodine), pepper, cumin, paprika powder and parsley. Enjoy this meal and enjoy your weekend! 🥳 Hope you and your families are all doing well! ❤️

🌱 LE GRANDE VEEG MAC 🍔 🍽️ So I miss @mcdonalds big macs ok..I used to have them like every week as a kid (so healthy I know) but after trying the delish viva la vegan burger from @frankienbennys (multiple times because me & the boyf are avid f&b customers 😂) I know that it's possible to be veganised & still taste great! So I made one myself (again - I've done this before & it works great). ✍️ . . 🥯Get pre-sliced muffins 1 top X2 bottoms, oil the top & add sesame seeds if not already seeded. . . 🍔@beyondmeat burgers work best but I didn't have any so I used Tesco plant chef one (cut 1 in half & flatten round again for two thin burgers) . . 🤫 The secret sauce - I used @ikeauk dill mustard sauce 👌 mixed with @hellmannsuk vegan mayo, & chopped pickles also from Ikea, with chopped white onion & capers, added dashes of paprika, turmeric, garlic & onion powder & boom big Mac sauce. (Not quite exactly the recipe but it works well!) @mcdonalds plz make a vegan version of the big Mac you know it is possible! The people are waiting! .🍟 . Then add lettuce, tomato, gherkins a plenty 😉 cucumber , vtaste cheese red Leicester slice from @morrisons & chips! Banana Bread 😍 Recipe: 3 Ripe Bananas 65ml coconut oil ( you can add more milk and less oil if you want ) 100g Coconut sugar( optional) 5 ml Plant milk 5 ml apple cider vinegar 225 grams self raising flour 2 tsp baking powder 2 tsp cinnamon 2 tsp nutmeg Pinch of salt Chocolate chips!!! ( I didn’t have any 😭) You can add anything else you want, blueberries would be nice too! I just throw everything in a bowl and mix. Then I let it stand for a few minutes. Then I baked it at 200•C normal oven for around 40 minutes, covering it with foil halfway through. Serve it with fruit , almond butter, or whipped cream. Or just enjoy on its own.

Today’s Vegan Lunch 🍴 ▫️Wholewheat Paratha ▫️Matki ki sabzi (Moth Beans) ▫️Homemade Garlic and Coconut Chutney ▫️Onions ▫️Rice You can conveniently find Matki at any vegetable store. Please sieve before cooking. Add water till matki is soaked with some turmeric powder. Cook it for one whistle in the cooker. - While that is cooking, ▪️Roast chopped onions, tomatoes, garlic, green chillies and ginger. ▪️Grind to make a paste. ▪️Heat some oil and add mustard and cumin seeds. ▪️Once they pop season add a pinch of asafoetida. ▪️Add the paste with turmeric powder, chilly powder, garam masala and coriander powder and salt. ▪️Once it leaves some oil, add water and cooked matki. ▪️Adjust the consistency as per your choice. ▪️Let it cook for 5 minutes and garnish with chopped coriander leaves, chopped onions and dash of lemon juice! - This sabzi/curry tastes ultimate with bread or ladi pav if you just add some misal masala and turn it into misal 🙈 If you know me then you should know this I LOVE MISAL 🤯 it is my weakness !! Il mio pensiero va a tutte quelle persone che soffrono o hanno sofferto, a tutte le persone che non hanno potuto fare nemmeno un ultimo saluto e un funerale ai loro cari, e anche a chi non ha ne un balcone ne un giardino... a tutti voi con questo piatto vorrei regalarvi un pò di sole, per quello che vale. Sono vicina a tutti voi ❤️ . 👩🏼‍🍳🌱 Ingredienti e procedimento ⬇️ (dosi per 500 gr di pasta, ho utilizzato le meravigliose e buonissime foglie d'ulivo di @leccornie_sotto_gli_ulivi ) ➡️ In una ampia padella o nel wok: ✅ cipolla ✅ timo (io ho utilizzato i comodissimi polpa d’orto cipolla e timo di @cerasaro.eshop ) ✅ 2 cucchiai di olio ✅ 15 pomodorini freschi tagliati in 4 ✅ 1/2 (mezzo) bicchiere di vino bianco con un cucchiaino di dado vegetale homemade sciolto ➡️ a fuoco medio il tempo di cottura della pasta, aggiungere anche mezzo bicchiere di acqua di cottura, scolare la pasta, e amalgamare al sughetto con: ✅ 200 gr fagioli bianchi (dei monti dauni) cotti (io li ho cotti 20 minuti in pentola a pressione) ➡️ Decorare con un filo di olio e gustare! .
