Another day, another vegan dinner. These are soba noodles with 'De Vegetarische Slager' vegan chicken bits and an asian veggie mix with sugar snaps, pak soi, soy bean sprouts and red onion. I added sesame seeds, chili flakes and soy sauce in the pot, and I added some sriracha when it was on my plate - which was a mistake since I already put in a lot of chili flakes 🔥😁

Gnocchi with mixed vegetables, tomato sauce and vegan cheese from Violife. Being a cheese enthousiast, I was a little sceptic about 'vegan cheese', but I am amazed. This taste is SO CLOSE to mozzarella, it's just more the texture of 'regular' grated cheese and it doesn't really melt. Tastewise, I am very impressed! #tocheeseornottocheese

TAGLIATELLE AI FUNGHI IN 2 MINUTI Il freezer esiste per salvarci la vita, l'ho sempre pensato ma in questo periodo di #quarantena ne ho definitivamente avuto la certezza. Nel mio congelatore ci sono sempre le stesse cose, noiose ma sicure: spinaci a cubetti, soffritto, pisellini e funghi. Niente di entusiasmante, ma quando serve so che quei prodotti semplici semplici ci sono. Nel caso dei funghi, beh, sono anche riuscita a tirare fuori una ricetta dall'aria gourmet in 2 minuti. Ingredienti per 2 persone mangione: 1 busta di funghi congelati da 300 gr 1 pizzico di sale 1 pizzico di aglio in polvere 1 cucchiaio di olio Tagliatelle (io ho riesumato queste alle ortiche ma va bene tutto) In una padella mettere olio, aglio funghi e sale. Chiudere la padella col coperchio e alzare la fiamma fino a fuoco vivace. I funghi inizieranno a tirare fuori molta acqua. Lasciarli cuocere un pochino, togliere il coperchio e far asciugare il liquido. Tuffare le tagliatelle in acqua bollente e dopo un po' prelevare un mestolo di acqua di cottura. Frullare metà dei funghi col mestolo di acqua di cottura e un filo d'olio. Scolare le tagliatelle, condirle con questa crema di funghi, impiattarle e decorarle coi funghi ancora interi. Questa ricetta fa molta scena, è cremosa e avvolgente, ma si fa letteralmente in 2 minuti e con una spesa minima. Vegan month* isn't so bad when it overlaps with vegan week at @mabelgraykitchen and this killer dark chocolate-satsuma dessert from @kaconger7. Yes, #plantbased looks like this, too. . . . *Feels a little weird to be posting this in the midst of the coronavirus shutdown, as we are all told to participate in social distancing. I don't want to tell you to go eat at your local restaurants, because frankly I just don't know if that's the safest or most prudent thing to do in times like these. But please keep in mind that restaurant workers can't just go remote. Many have little to no health care or sick days to use. And if the tips or shifts don't come, the bills don't get paid. If you aren't comfortable dining out, consider supporting our friends and neighbors in the hospitality business by purchasing a gift card or ordering takeout/delivery. Some have started fundraisers for their staff. Others are changing delivery models. No matter how long this disruption lasts, it has already made a lasting impact on the business. . . . As for me, I will likely be removing my critic's hat for a while and covering this crisis from a purely reportorial perspective. Keeping you informed of what's going on in the hospitality industry with accuracy and objectivity is far more important right now than anointing one place over another. Everyone is struggling and everyone's story is as important as the next. CAVOLO ROSSO E MELA Tempo fa assaggiai questo abbinamento in un ristorante vegano molto blasonato della mia zona, mi piacque molto ma era davvero tanto dolce. Troppo, per i miei gusti. Ma mi rimase impresso e decisi che dovevo cercare un modo per riproporlo che togliesse il sapore "terroso" al cavolo e lasciasse appena percepire la dolcezza della mela. Ho sperimento un po' e trovato quella che, per me, è la quadratura del cavolo. Come sempre la ricetta è davvero economica e semplice, con un cavolo medio si fanno anche 8 porzioni e dura 4 giorni in frigo senza problemi. Che volere di più? Una fetta di pane bruscato da mangiarci insieme, al massimo. Ingredienti: 1 cavolo rosso 1 mela gialla 1 cipolla rossa o 2 scalogni Olio Aceto di mele Sale Procedimento: Tagliare il cavolo a striscioline mediamente regolari e sottili, privandolo del gambo interno bianco. Mettere le striscioline in una ciotola e cospargere con un paio di prese di sale e aceto di mele, indicativamente mezzo bicchiere (non si sentirà in cottura). Lasciar marinare 30 min circa. In una pentola con fondo spesso o antiaderente, soffriggere la cipolla a pezzettini con un goccio di olio di oliva. Quando sarà ben rosolata, scolare il cavolo dell'acqua che sarà uscita e metterlo in pentola con la cipolla. Abbassare la fiamma al minimo, mescolare un po', mettere un coperchio socchiuso e lasciar cuocere per 1 ora andando a mescolare di tanto in tanto. Passata l'ora, pelare la mela, tagliarla a fettine/striscioline e aggiungerla. Cuocere altri 15 min, la mela risulterà invisibile. Io non aggiungo sale, ma ognuno si regola a proprio gusto. Il cavolo così diventa davvero uno spettacolo, mantiene diverse consistenze più o meno morbide, è leggermente dolce ma adatto a essere un contorno di tanti piatti diversi. Lo amo e l'ho rifatto davvero tante volte, è buono anche freddo quindi perfetto da portare al lavoro o per quei momenti in cui si apre il frigo e si scofana pure il cartone del latte. Iron is an essential nutrient in our diets; it's necessary to transport oxygen and nutrients to our cells. Deficiencies are quite common, especially for vegetarians. Sure, we tend to think of animal products like beef🥩 , chicken 🍗and eggs 🥚 as good sources of iron (which they are) but there are several vegetable 🥬 sources of iron as well. - ‼️Heme iron (the type found in animal products) is more easily absorbed by our bodies, but that doesn't meal non-heme (vegetarian) sources are not‼️. - So how do you maximize absorption on non-heme iron🤔? 🔸vitamin C (found in citrus, bell peppers, and berries to name a few) aids in the absorption on non-heme iron. 🔸 Eating smaller meals that include calcium-containing foods allow for better absorption. ‼️some of the foods that contain iron also contain nutrients that inhibit absorption‼️. 🔹Oxalates (found in greens and some grains) can inhibit the absorption on non-heme iron. Découvrez son cousin le tempeh ! ⁠Il s’agit de graines de soja cuites, écrasées puis fermentées🌿 D’origine indonésienne, le tempeh est particulièrement digeste et comme le tofu, il affiche zéro cholestérol et peu d’acides gras saturés👌🏼On ne veut pas déclencher une guerre familiale mais...il est plus riche en protéines et en fibres que son cousin 🤭⁠ ⁠ 🔎 L'info du jour : les protéines provenant du soja sont celles qui remplacent le mieux les protéines animales car elles contiennent tous les acides aminés essentiels💪 C’est donc une excellente alternative à la viande 🐮⁠ ⁠ Comment le cuisiner ? 🍽️⁠ Comme son cousin le tofu, le tempeh absorbe les saveurs il est donc conseillé de le mariner ou de l’assaisonner🌶️ ⁠Nous, ce qu'on adore, c'est le faire mariner dans de la sauce tamari avec des graines de sésame 👨‍🍳 Après 5 à 10 minutes de cuisson à la poêle, il devient croustillant et prend une teinte dorée🤤⁠ Le tempeh n’est donc pas difficile à cuisiner, place à votre imagination pour la suite🤓⁠

Holy cow this thing tastes like the real thing, the "cheese" on the chili cheese fries is melty and awesome, and the gyro is almost imperceptibly plant-based and delicious, too. The best part? Alright y'all. Mark's Vegan March begins today. It's both a professional experiment to help me dedicate some intense focus on vegan dining in metro Detroit and a personal challenge to help jumpstart a diet moving forward that incorporates more plant-based food. I'll be posting regular updates on here throughout the month, but I'm also taking suggestions, especially for vegan items served at non-vegan restaurants (though I'll be certainly hitting those, too). I'm gonna need all the help I can get so send me your vegan cooking tips and tricks, too. As for this beauty you see right here: I picked up a hot, sweet, dipped Italian beef from @mattandmos (popping up at Doug's Delight while transitioning to their permanent presence). It kept amazingly well for 6 hours and reheated in the microwave just fine and in time for this to be my last bite of animal product until April. COLAZIONI VEGANE In questi giorni strampalati per l'emergenza coronavirus mi ritrovo sempre a fare colazione a casa. Ho il pc acceso e ovviamente lavoro, ma posso scambiare la pausa alla macchinetta del caffè con un giro in cucina, un cappuccino bevuto in terrazzo e un biscotto sgranocchiato qui e lì. Mi sembra di vivere una specie di dolce esilio con un punta di angoscia, non ho molta voglia di uscire ma so che se uscissi dovrei fare attenzione a mille cose. Cerco di prendere il buono, la pausa pranzo è un'occasione per cucinare qualcosa, mi godo la luce della casa che non vedo mai quando torno di sera, mi guardo una puntata di Greenleaf a spezzoni. But pancake making is not my calling 😂. At. All. So I poured the batter into the waffle maker, and tah dah! They were so good. And the banana flavor was not overpowering. The month of February has been challenging and fun to eat VEGAN. I have eaten lots of fruits, veggies, and beans! I watched Forks Over Knives in 2011 and also learned from my friend and cancer survivor @tallahasseelass. I made some healthy changes at that time. It was not easy to maintain with small children but now that my kids are older, they are more open to eating new things. Although, I have been back and forth as a omnivore, vegetarian, and vegan since the 1990's I'm not legalistic about it. If you invite me to dinner, I will eat whatever you put before me. ❤ I highly recommend the book, The China Study, and the Forks Over Knives documentary. One of my takeaways from the China Study is that the Chinese don't drink milk and have one of the lowest osteoporosis rates, while in America we have been taught that we must drink milk for healthy bones and yet we have one of the highest rates of osteoporosis. Milk, apparently, does NOT do a body good. As I wrap up this vegan challenge, I will share a few resources that have helped me. Are you Vegan? Vegetarian? MAYOVEGAN, maionese vegana che si fa in mezzo minuto e con pochi ingredienti. La maio è una passione che ho scoperto dopo i 25 anni, quindi ora sto recuperando il tempo perso facendola tutte le volte che capita. Ho iniziato a fare la mayovegan quando non ero ancora vegana per molte ragioni, prime tra tutti l'assenza di uova crude che garantisce sicurezza con tavolate numerose e donne incinte, perché non bisogna pastorizzare nulla e perché è comunque un po' più leggera della maio tradizionale, senza perderci nulla in gusto. La accompagno alle carote alla Insta, alle chips di cavolo nero, la infilo nei panini o sui burger vegetali...insomma, è sempre l'ora della mayovegan. Ed ecco la ricetta, basta mettere nel bricco del minipimer: 100 ml latte di soia senza zucchero (solo soia, non altri latti veg) Succo di mezzo limone 1 grosso cucchiaino di senape 1 cucchiaio di aceto bianco 1 pizzico di sale E mescolare Iniziare a frullare col minipimer e aggiungere 150 - 200 ml di olio di semi versando a filo In 30 secondi inizierà ad addensarsi e sarà pronta all'uso. Si può aromatizzare con aglio, erba cipollina, paprika, basilico, capperi, spezie di ogni sorta e anche funghi a seconda di come si vuole usarla. Più proteico sarà il latte di soia, meno ci sarà bisogno di olio. In frigo si addensa un bel po' e si conserva tranquillamente 2 o 3 giorni.
