Last night’s dinner was roasted cabbage with cumin, sweet potato wedges, roasted yellow peppers, baked smoked @tofooco in a sriracha marinade, bulgar wheat and hummus.

I had some old courgettes, spring onions and tomatoes that were getting past their best. To avoid waste, I pureed the tomatoes and mixed them with the onions, a bunch of fresh chopped parsley, lemon juice, lots of garlic, curry powder, salt and pepper and a splash of red wine vinegar. I poured the mix over the sliced courgettes and baked it for half an hour. At just 179 cals for half of it, it made a hearty but pretty healthy veg packed lunch served with some vegan sausages. (I used @richmond_foods ones that can be found in the refrigerated meats section but are clearly labelled meat free and are seriously good!)

An ugly-delicious (*insanely* delicious) carrot apple crumble that I could send to my mom and sister yesterday. Makes me so happy to share some of my baking with them again! . INGREDIENTS (Vegan, no added sugar.) . For the date soak: ▫️18 medium (100 g | 3/4 cup) dates, chopped ▫️100 ml (1/2 cup) warm oatmilk . For the dough: ▫️200 g (2 cups) fine oats ▫️180 g (1.5 cups) spelt flour ▫️1 tsp baking soda ▫️75 g (0.5 cup) soft canned spelt grains ▫️100 g (3.5 oz) margarine, cubed ▫️4 tbsp full-fat coconut cream ▫️pinch of salt . For the filling: ▫️190 g (2 cups) grated carrots ▫️1 large apple, diced ▫️5 tbsp dried black cherries (unsweetened) ▫️80 g (1/2 c and 1 tbsp) roasted hazelnuts, chopped ▫️Cinnamon, cardamom, and vanilla seeds to taste . For the filling (apple pudding): ▫️270 g (1 c) unsweetened applesauce or applepulp ▫️the date soak ▫️the cherry soaking water ▫️2 tbsp potato starch ▫️4 tbsp water . STEPS . ▫️Make the date soak: soak the the dates in the oat milk for 1-2 hrs then blend. ▫️Soak the cherries in 4 tbsp hot water for 10 mins. (Keep the soaking water.) ▫️Make the dough: mix all the dry ingredients, then add the wet and crumble together. It doesn't have to come together. ▫️Line a 20x30 cm (8x11 in) baking dish with parchment. Pat down 2/3 of the dough. Layer on: the carrots, half of the hazelnuts, half of the cherries, all the apple cubes. Sprinkle with cinnamon, cardamom, and vanilla seeds to taste. ▫️Make the apple pudding: whisk together the potato starch and the water, add it to a pan with the rest of the ingredients and simmer until thickened. ▫️Spoon the apple pudding over the apple cubes, then crumble on the remaining dough crumbs, hazelnuts, and cherries. ▫️Bake at 160 C |320 F for 45-50 mins. It firms up as it cools, so if you'd like to cut it into distinct squares, let it cool down completely. Or grab a 🥄! . Take care, Anna

No-Bake Peanut Butter Cup Bars by @HealthyLittleVittles ♥️ Tag someone who'd love to try some of these! Check out the recipe below: ​ ​Cookie Dough Crust 2 cups almond flour 1/4 cup unsweetened cacao powder 6 tablespoons peanut butter 1 teaspoon pure vanilla extract 1/4 cup maple syrup pinch salt 6 tablespoons dairy-free chocolate chips Peanut Butter Filling 1 cup peanut butter 1/2 cup plant butter (or coconut butter) 3 tablespoons maple syrup 1/3 cup blanched almond flour 2 tablespoons coconut oil 1 can full-fat coconut milk 1 teaspoon pure vanilla extract 1/4 teaspoon salt Chocolate Topping 1 cup dairy-free chocolate chips 4 tablespoons coconut oil Garnish 1 bag (3.2 oz) dark chocolate peanut butter cups Instructions Make the cookie dough first. In a large bowl, whisk together the dry ingredients then add the wet. Stir together until a dough forms. Press your cookie dough into a foil/parchment-lined 8x8 baking pan and set aside. Next, Make the peanut butter filling. In a large saucepan over medium heat, melt all of the ingredients whisking continuously until it almost boils. Remove from heat and pour over the cookie dough crust. Place in the freezer for an hour. While you're waiting, chop up the peanut butter cups into small-medium pieces. Make the top chocolate layer by melting the chocolate chips together with the coconut oil. Remove the pan from the freezer and pour the melted chocolate over top. Sprinkle the chopped peanut butter cups over top and stick it back into the freezer until set, preferably overnight. Enjoy! Store in the fridge or freezer. If stored in the freezer, allow it to thaw for about 15-20 minutes before enjoying ​. ​Hungry for more plant-based recipes? I haven’t been posting much lately, because I have no words that haven’t already been said by other more experienced white Americans. It feels wrong to post a photo of a smoothie bowl (Banana and vitamins-C packet) during a time where the spotlight is dearly needed for the fight for the basic rights of Black Americans in this country. But I can not write for a blog promoting safety and rights of animals and ignore the pain and torture against humans. I do not have the words to say anything meaningful and timely. But as a vegan, white, non-binary person not supporting the fight for basic rights and justice is supporting is advocating for the systemic violence against the American American community. Hemos estado un par de días un poco desconectadas, pero ya estamos de vuelta y os dejamos por aquí la receta de uno de los platos etíopes que nos preparamos ayer para comer, el shahan ful Es un plato preparado con frijoles o judías rojas y una mezcla de especias que se llama bereber, que es picantita y que utilizan para muchos de sus platos 👌 lleva de topping yogur, tomate y jalapeños y es un plato riquísimo para comer como dipp y una súper buena alternativa al hummus 🤤 Nosotras ayer lo comimos con tortillas de trigo porque era lo que teníamos en casa pero con la injera que compartimos el otro día habría estado genial 😍 El otro plato que preparamos se llama doro wat, pero de ese os hablaremos otro día 😋 1 bote de judías rojas o frijoles 1 cebolla 1 diente de ajo 1 cda de mezcla de especias bereber 1/2 cdita de comino Pimienta negra Sal 1 yogur de soja (si puede ser tipo griego mejor) 1 tomate troceado sin pepitas 1 jalapeño (o pimiento verde) 🌱En una olla ponemos la cebolla y el diente de ajo bien picaditos y cocinamos hasta que estén blanditos. Añadimos las especias y cocinamos durante 1 minuto sin dejar de mover. Incorporamos las judías mezclamos y dejamos que se cocine durante unos 5 minutos, moviendo de vez en cuando. Retiramos del fuego y machacamos las judías con un pisapatatas (pueden quedar algunas enteras), si veis que está demasiado denso podéis añadir un poquito de agua. Ponemos el yogur encima, el tomate y el jalapeño. Bringing you a little bit of kiwi love today cause I think we always need a bit of sweetness to ease in the start of the week☺️ For the smoothie, I blended around a cup of coconut milk and about 1/4 cup of coconut kefir with a handful of lamb’s lettuce and a few leaves of fresh mint, a squeeze of lime, a nice and ripe kiwi, 1/4 a medium avo, 2 tbsp of vanilla plant based protein, 1/2 tsp of green goodness blend, water until super creamy and fluffy just how I like it. Poured into a bowl and topped with kiwi hearts, coconut sprinkles and poppy seeds..simple but so nice😍 Funny how when I was little and would see my mom eating kiwis, I always thought they were weird and now I quite like them😊 But I guess it’s normal that taste always changes with age like it’s also normal that what need as we grow up and grow changes..it can be scary sometimes when we’ve been eating a certain way, following specific recommendations or “rules” wether because we were suggested that or we decided on our own, to step out of that, change direction..but it’s so important to truly look in and listen and if something doesn’t feel right or good, stop and see what small changes to our habits we could make. It really doesn’t matter what seem to be the norm, what “diet” is recommended for this goal or that health condition as the way my body responds won’t be like yours does. Just a little reminder that came to my mind after receiving unwanted advice🙃as I sometimes do when I mention I have an autoimmune condition among people that work in the field of nutrition. Just because “so many” people do well a certain way, doesn’t mean it has to feel good for you. Literally follow your gut☺️Happy Monday!💚 #sweetnutrition

Chinese chive pockets/dumplings '韭菜盒子' with crispy, chewy crust & a flavorful filling.⠀⠀ .⠀⠀ By @woon.heng ⁣⠀⠀ .⠀ Recipe (makes ~9 palm size pockets)⁣ 🌱Filling ingredients:⁣⠀⠀ ~ 1/2 - 3/4 lb Chinese chive - cleaned, drained & finely chopped⁣⠀⠀ ~ 8oz firm tofu - mashed, pan fried & seasoned with salt & white pepper⁣⠀⠀ ~ 1 bundle mung bean thread - softened in hot water & cut into fine shred⁣⠀⠀ ~ 1 tablespoon toasted sesame oil⁣⠀⠀ ~ 1 1/2 teaspoons salt (adjust to your preference)⁣⠀⠀ ~ 1 teaspoon organic sugar⁣⠀⠀ ~ a few shakes of white pepper⁣⠀⠀ ⁣⠀⠀ 🌱Dough ingredients:⁣⠀⠀ ~ 2 3/4 cups all purpose flour⁣⠀⠀ ~ 1/2 cup hot boiling water⁣⠀⠀ ~ 1/4 cup cold water⁣⠀⠀ ~ pinch of salt⁣⠀⠀ ⁣⠀⠀ ✅To make the dough, place flour & salt in a mixing bowl, then gradually pour in boiling water into the dry ingredients while stirring continuously using a spatula/chopsticks. ✅Continue adding cold water & knead into a soft dough, then let rest for 30 mins, covered.⁣⠀⠀ ✅Meanwhile, place chopped chive, mung bean thread & mashed tofu in a bowl. Season accordingly with toasted sesame oil, salt, sugar & white pepper (adjust taste accordingly).⁣⠀⠀ ✅To make the pockets, dust countertop with flour & divide dough into 9 pieces. Flatten each one with your palm & roll it into a circular disk by keeping the middle slightly thicker than the side. Fill each dough with fillings & pleat to seal by pinching the side.⁣⠀⠀ ✅In a heated non-stick/cast iron pan with a drizzle of oil, toast pockets until golden brown on all side over low-med heat (covered). GREEN MONDAY || ENSALADA DE PEPINO Y AGUACATE || Un lunes más, una receta fácil, saludable y vegana. Todas las recetas que os propongo son facilísimas. Hoy, os propongo una de mis ensaladas favoritas, y es que el pepino me encanta.⁠ ⁠ Para la base: mezcla en un bol 5 pepinos pelados y cortados en rodajas, 1 aguacate, 2 puñados de tomatitos cherry, 1 cebolla roja, rúcula, cilantro y 10 hojas de menta, Reserva y mete en la nevera.⁠ ⁠ Para la salsa: 4 cdas de AOVE, 1 cda de mostaza de dijon, ralladura y zumo de 1 limón, sal y pimienta. ⁠ ⁠ Revuelve todo y ¡listo! 🥥Coconut caramel pudding🥥 I’m in no way a professional chef and ended up making an error in @urbanplatter.in recipe! But I think it worked out for the better as it transformed it into a butterscotch pudding Ingredients I used : 3/4 cup white sugar for making the toffee [this can fill 9-10 cupcake moulds quarter the way up] 1 can coconut cream (500ml) 1 cup almond/rice milk 1/2 cup of soy milk 1/3 cup coconut sugar China grass What I did: Left the white sugar in a pan to just turn colour on it’s own and then poured it into little moulds( work fast or it’ll start to seize up) I mixed the rest of the ingredients in a pan and let it boil [ mistake : I didn’t add enough china grass !] So even after a day it remained unset... ended up pouring the mixture back into the pan and with it caramel from the cups mixed in too. I added the correct amount of China grass and reset it. This turned out amazingly, as it gave an extra depth of flavour- butterscotch! Today is World Milk Day so let's spare a thought for the mothers and babies who suffer at the hands of the dairy industry. 🐄 Mum's make milk for their babies and cows are no exception. After a 9mth pregnancy, calves are born to them and almost immediately removed; boys are killed for petfood, while the girls are raised on milk powder, to later increase the herd size.🥛Mums are spent after 5 yrs of this cycle and killed. 😥 Not only is cow's milk associated with poor health outcomes such as obesity, heart disease, type 2 diabetes and some cancers, it's farming is responsible for poluting our rivers and contributing too much methane into the atmosphere. 🌏 Plant milks offer us more variety, more flavours and are better for our health. They're also better for animals, with a much lower impact on the environment. They are the industry we want to support! So our fav local resturant has opened up for takeout and we celebrated with a date night.
