Tempeh stir fry on the menu tonight ⚡️this was so basic but sooo good! Just used broccoli, carrot and mushrooms for the veges and marinated the tempeh in coconut aminos, peanut butter, ginger, and maple syrup and oh boy 🤤 first time cooking with tempeh too but I think it’ll have to become my new go-to 😍

Let's talk about coffee creamers today.⠀ If you're dairy free (like me) or you're into plant based milk then you must have heard of Oatly Barista by now. If not, it's a brand that makes all things oats, and their Barista drink is one of the best things ever. ⠀ .⠀ Unfortunately, Oatly Barista is not organic (although they have other organic products). Why is this a problem? Well it's because oats are one of the top grains to have high pesticide content, and multiple types in fact! When you do your research and begin to look into the effects of pesticides on our health, it's not great friends to say the least. So I do my best to avoid it as much as I can.⠀ .⠀ I have started looking for other alternatives and recently tried our the new Rude Health Barista milk, but it's not cutting it taste wise buuuut it is organic. So I'm still looking for another alternative. I've been recommended Minor Figures, but I'm yet to check it out. Do you have any recommendations? We know we’re supposed to stock our fridge with healthy, whole foods and meal-prep on Sundays. But real talk? Sometimes, all we have the energy for is opening up a packaged meal or snack.⁣ ⁣ And that’s OK, if you do a little reading first. By now you probably know it’s smart to check out the nutrition facts when you pick up a packaged food. But it’s not necessarily the 'first' thing you should be looking at.⁣ ⁣ Wait, what?! Have you checked the ingredients? A pretty picture (fruit) or a wholesome description (made with whole grains!) on the front of the package might suggest one thing, but the ingredients list is where you’ll get the real story.⁣ ⁣ Not only will it tell you what a food is made of, but it can also give you clues as to how much of a certain ingredient is in a food. Ingredients are listed by weight, with the first three to five ingredients typically making up 80 percent of the product. ⁣ ⁣ If you spot clean, minimally processed ingredients-whole foods such as fruit or nuts - near the top, you can feel good knowing those ingredients make up the bulk of the food. But the opposite is also true. If the first few ingredients on the list are things such as sugar or refined flour, then you’re eating mostly, well, sugar and refined flour. ⁣ ⁣ In fact, the ingredients list is a much better indicator of how much added sugar is in whatever you’re eating, since the grams listed under nutrition facts include all sugar, including the kind that naturally occurs in fruit, vegetables, and dairy. I know it’s quite far but still can’t help to be joyful having @cleanchocolate in our land ❤ These are truffles I ordered from @cleanchocolate for months, I guess, there were 4 of them before I had the first one once I just received. If you check their page, you'll see many flavors of truffles and bonbons you can order and they are freshly handmade! I was in trouble to pick some but tried to choose ones those sound interesting to me 😋 . ✨ Let's begin with my third favorite of them all, the coffee hazelnut, but first of all, I have to tell none of them are overly sweet! Which is rare in a good way for treats. I expected the coffee-flavored to be stronger from this one, besides this, it's perfect. And its shape is just outstanding . ✨ My second favorite is the tahini. Didn't put my hope high with it but it impressed me with how smooth of chocolate and tahini collaboration. Just simply yet spectacular ones . ✨ And my number one of them is the strawberry! 🍓🍓🍓 I knew I'm going to like it since I saw the inside of the chocolate shell. Look at that strawberry layer, its sour taste goes very well with the sweetness from the chocolate and the white chocolate part makes everything even more heaven! . SALAD SCENES✨A simple bowl from the weekend that I have been making on repeat. It’s a somewhat pumped up garden salad made with rocket, raw shaved carrot & beetroot, cucumber, corn, apple, olives, onion, avo, nuts/seeds and lots of fresh herbs (I’ve used mint in this bowl). Chock full of healthy fats and full of antioxidants, it’s the perfect addition to your protein of choice for lunch. Drizzle with olive oil and some fresh squeezed lemon to serve. Meat Free Monday Hassle-back Sweet potato with Pesto. First, clean the potatoes well and cut off the ends, then slice the potatoes thinly but not all the way through (use chopsticks to help as a guide). Drizzle well with garlic olive oil, coconut oil or melted ghee and season really well. Bake at 200C until soft on the inside and crispy on the outside. Pesto I use a stick mixer for this but you can just roughly chop and mix these ingredients; basil leaves, cashews, garlic, lemon zest and juice, salt flakes, Parmesan or nutritional yeast to taste. Ingredients: 1.5 lb boneless skinless chicken breasts, sliced thin 1 cup diced fresh tomatoes 1 tablespoon chopped fresh basil leaves 1 teaspoon extra virgin olive oil salt and pepper 1 cup balsamic vinegar Instructions: Preheat grill over medium high heat. Season chicken breasts with salt and pepper (or marinate ahead of time.) Place chicken on grill and cook until no longer pink, turning once throughout cooking. In a small bowl, combine tomatoes, basil, olive oil, and salt and pepper to taste. Stir and set aside. To make balsamic glaze: place vinegar in a small sauce pan and heat over medium high heat until comes to a gentle boil. Reduce heat to low and simmer for about 10-15 minutes, until vinegar begins to thicken enough to coat a spoon. Place tomato/basil mixture over the grilled chicken and drizzle balsamic glaze over top. Serve immediately. My roasted pumpkin and brown rice salad with steamed broccoli, beans and a delicious nut butter and turmeric dressing.🧡🌿A beautiful vegan salad that is wholesome, filling, packed with flavour and so easy. Slice some pumpkin into fairly large wedges (leave skin on) and coat in a little olive oil...bake for about 40 mins until soft and golden. Steam some broccoli and green beans and cook some brown rice. On a platter, later some fresh spinach and rocket then pop your rice on...then layer your veggies and sprinkle the lot with pepitas. For the dressing I whisked 2 tablespoons of natural nut butter (use peanut, almond, macadamia or cashew) then add one teaspoon turmeric, 2 tablespoons apple cider vinegar, 1-2 tablespoons olive oil, 1 heaped teaspoon honey, pinch chilli and pepper and salt. I also added about 1/2 cup cold water. Whisk the lot then drizzle generously over the salad. It’s really beautiful as a side and just as delicious on its own.
