I highly recommend everybody play with their food in some way, after all, eating is a sensory experience—the more the merrier right? This meal is very hands-on (if you mash the old fashioned way) and is absolutely delicious when it comes together. • INGREDIENTS⤵️ 🥣 For the patties: -Black beans (canned, rinsed) -Green lentils (boiled, rinsed) -Mushrooms (sautéed) -Garlic (sautéed) -Onion (diced, sautéed) -Tomato paste (cooked with above) -Soy sauce, ketchup, salt, pepper, cumin, old bay, garlic powder) —> mash all ingredients above in a bowl. PREPARATION: . - In a small bowl, mix the ricotta, spinach, parsley, one tablespoon of Parmesan, salt, and pepper until combined. - In the glass container, spread a layer of tomato sauce. - Top the tomato sauce with the lasagna noodles. - Cover the noodles with a layer of the ricotta mixture, then mozzarella. - Continue with another layer of noodles, ricotta, tomato sauce, then mozzarella. Definitely appreciate the wide range of bean based pastas out on the market. 🌼 Got to try some mung bean fusilli shaped pasta. Lots of protein, iron, and potassium. 💪🏽 Enjoyed this pasta mixed with broccoli, mushrooms, zucchini, and sun dried tomatoes. 😄Made a miso cashew sauce over top by blending 1/4 cup soaked cashews, 2 tsp miso paste, 1/2 tsp garlic powder, 1/4 cup unsweetened soy milk, 2 tbsp nutritional yeast, 1/4 tsp turmeric, 1/4 tsp salt (optional). 🥣

I wanted a soup because of my tummy and because the cold around here has been out of this world and so windy! I needed some protein and all I was craving was a nice bowl of soup but not so clear and liquefy that remind me of my days sick in bed. I wanted a small leap to recovery, but delicious with the flavors of Mexican food! So I thought, why not make a creamy soup/stew with all the flavors of tacos, clean and delicious. So here it is! A delicious chicken soup for meat eaters but with alternative ingredients for vegetarians. We have sprouts! This is soooio easy to do at home with the kids. Especially of you don't have the space or time for an outdoor garden, or it's now growing season. A newbie question I found it difficult to source am answer to what 'how do I know when my sprouts are ready to eat?' I found the clearest explanation at the grestist.com: Keep an eye on your seeds, as they will grow quickly and have lots of yummy shoots ready for you in two to seven days. One indication that they're ready is that the outer seed hull (which serves as a shell to protect the seed when it’s dormant) will soften and may come off. Made Baked oatmeal for breakfast this morning 😋 I used frozen blueberry and raspberries I had in the freezer. Add ricotta cheese I had in the fridge for topping. I eat oatmeal pretty much every day, so nice to have little change occasionally 👍   1cup oatmeal  3/4cup almond milk  2 teaspoon honey  1/2 banana  Blueberry and raspberries   Preheat oven for 360F. Smashed banana with folk, and add oatmeal, almond milk, honey and blueberry. Put everything in the skillet and bake 20-30. Awe yeah! Nothing like a good homemade pizza. This baby has a nice airy crust that was to die for. I’ve never made a good crust so today I decided to put two packets of yeast in it instead of one and it was probably one of the best crusts I’ve ever eaten. I of course monitored the amount of pizza I had. Pretty sure I’m making these along to go along with my regular Christmas cookies this year. They are sooo good!! Add some Christmas sprinkles (don’t worry I got new ones 😂) and they will be good to go!⁣ ⁣ Chocolate and sea salt! A match made in heaven!! If you like sweet with just a touch of salty you HAVE TO try these!!!⁣⁣ ⁣⁣ Double Chocolate Sea Salt Energy Balls⁣⁣ ⁣⁣ Ingredients:⁣⁣ • 2 scoops vanilla shakeology⁣⁣ • ½ cup peanut butter⁣⁣ • ¼ cup honey⁣⁣ • 2/3 cup dark chocolate chips⁣⁣ • Splash of vanilla⁣⁣ • 2 tsp coconut oil ⁣⁣ ⁣⁣ Instructions:⁣⁣ -Stir peanut butter, honey and Shakeology until fully combined⁣⁣ -add 1/3 cup chocolate chips and mix⁣⁣ -Roll into balls⁣⁣ -Freeze for ½ hour to harden⁣⁣ -heat the other 1/3 cup chocolate chips and coconut oil until melted. ⁣⁣ -dip balls into chocolate and set on parchment paper covered pan to harden⁣⁣ -sprinkle with course sea salt⁣⁣ -Freeze again until chocolate coating sets and hardens

Lemon garlic shrimp & pasta lunch!! • what’s in my bowl —> egg noodles and shrimp cooked in butter, parsley, garlic, s&p. I added tomatoes and yellow peppers in with the shrimp so they got sautéed! Topped with some lemon zest and feta 😋 I wanted to have a filling lunch since I work til 8:30 and am going to the gym after, so this was perfect!

Well....about as good as it’s going to get this week for prep 🌱. . If you’ve been following along my stories recently, been a tad bit off my usual game. . We all have moments. Or you know DAYS. . As much as I don’t want to admit it....I to go through times of being extremely unmotivated. Z Where I simply don’t want to leave my house or do anything really. . Sometimes you have to pick yourself up and say NOPE we are getting through this and change your mindset. . While listening to personal development the entire weekend. . I encourage and motivate others around me daily. Doesn’t mean I don’t need the motivation. I definitely do!. . Even if it was only 1 meal and 1 snack tonight....better than none!
