And just like that, summer of 2018 has come to a close. Today marks my LAST first day of classes... ever. Well, at least for the indefinite future until I maybe decide to go to grad school, but who really knows where this life will take me. As I’ve mentioned before, I’m graduating a semester early in December, and this semester I’m actually only a part time student. Aka I just have class for like an hour or two a day🎉. But as always , I like to keep myself busy, so I’m also working 3 jobs🤷🏼‍♀️ two of which I’m continuing from the summer. The third is new & kind of relevant to this platform: ya girl is now a Brand Ambassador for KIND Snacks! I’ll be working mostly at special events & retail demos as part of the NC KIND team, and I could not be more excited for this experience! Okay ya’ll- we ‘bout to get #vulnerableAF I remember sitting on my couch, binge watching multiple shows on Netflix and mindlessly googling “can my baby feel my depression?” “Can depression effect my baby?” That’s when it was really bad. That’s when I didn’t leave my couch all day. I just sat there with a baby attached to me by the boob, feeling like he was sucking the life out of me. Pajamas all day. If I was going to get dinner on the table eventually, I had to start in the morning and do it little by little. Sitting down after each task because everything exhausted me emotionally. I thought, wait, do I have postpartum depression? But, my baby was already 5 months old. I felt fine up until about his 2 month mark. Did that still count as PPD? Yes. It counts. It’s normal, even though it feels different for everyone. I didn’t want to hurt my baby or hurt myself. But I did feel like a prisoner. But I didn’t want to leave my house all at the same time. Your feelings are normal and valid, mama. I’m not ashamed to say I reached out and received pharmaceutical help. I knew there had to be more that I could do though. I can’t take a pill forever. And I didn’t like the idea of taking a drug while nursing, though they said it was safe. There IS more you can do. Fast forward to today. It’s 10 AM. I’ve made and cleaned up breakfast for Porter and I. I’ve drank my green juice. I’ve walked the dog. I’ve sent emails. I’ve read to Porter. And now I’m on my way to move my body with a SMILE ON💗 I have energy. I have mental clarity. I’m MYSELF- and no longer getting pharmaceutical help because I took OTHER steps. There is nothing wrong with needing help. But you have to help yourself in other ways too babes. I don’t drink an expensive protein shake. I don’t count calories. I don’t take “fat burners” 🤦🏻‍♀️ Eat real food. Take mental breaks. Write out your feelings if you feel like you can’t speak them. Sleep when you can. Move your body. Positive affirmations. And find people who can keep you accountable and positive. I’m always here 🌸 #MOMPOWER

I've never shared a post like this before, but here is an insight into my #sundaymealprep 😅 🍌 Bananas have been expensive at the supermarkets lately, so last weekend we went to the fruit shack and bought 4 big bunches. They've finally ripened and I'll freeze them for smoothies which my youngest has for breakfast each morning. There are actually 2 containers this size! ❤️ Two slices; a cranberry and coconut one and a mocha one. 🍚 A risotto cake which is tonight's dinner. 🥗 Salads for tomorrow's lunch boxes. Hubby is away, so one is for me and one is for my son. He made the dressing from my book which is his favourite. 💚 Roasted cauliflower, washed spinach, steamed greens and spiralised zucchini. These are great for quick meals like salads or wraps. 🍍 Diced pineapple and washed strawberries for my muesli, snacks or smoothies. 🍴 A salad to go with dinner tonight. 🥞 Overnight oat bowls and buckwheat pancakes for breakfasts. The recipe for the pancakes is from @jamieoliver and it's awesome. My family know that these pancakes are a) healthy and b) vegan and they STILL love them. Usually I have to hide these facts 😂 😋 Barley and BBQ tempeh to add to my meals. 🍪 There's also a container of cookie dough bliss balls I made a couple of days ago, that I meant to take out if the fridge for the photo and forgot. 🍊 Mandarins. Having this all prepped really helps us get through the week and allows me to put our lunches and meals together quickly ... well for the first part of the week it does, Thursday lunches start to look less organised 😆 Let me know if this is something you want to see more of from me - or if I should stick to my normal posts instead. My daughter asked for chocolate chip cookies so I made muffins instead! I haven’t made paleo cookies yet and I LOVED @paleorunningmomma’s cassava blueberry muffin recipe so much I had to repeat. For the exact measurements and ingredients check out her website. I modified the recipe a bit and swapped in @enjoylifefoods semi-sweet chocolate chips and @nutpods creamer instead of coconut milk. And I used @ottos_cassava_flour cuz life. These are great for Sunday mornings w/ a cup of coffee, brunch or a special treat. They freeze well and remember use parchment paper muffin liners! These have been a godsend all week! I baked these in the early morning when it wasn’t so hot outside and I didn’t mind turning on the oven. Just reheated upside down in the micro, it steams through. Still so fluffy. 2 mini frittatas for 40 seconds. Didn’t have to “cook” breakfast all week! Take it on the go, post-workout, between meetings, study sesh. They’re just an awesome all-in-one kinda meal. Hot sauce and avocados make these babies 💯... • FULLY LOADED MINI FRITTATAS | @aidellssausage, mushrooms, red onion, tomatoes, bell pepper, spinach, parsley, black pepper, turmeric, salt, 8-9 eggs... Preheat oven to 325°. Sauté sausage, small diced, until golden brown. Set aside. In same pan sauté finely diced veggies on med-high in olive oil. When veggies are cooked return sausage back to pan and turn off heat. Line muffin tin with parchment muffin liners and fill cups halfway with sausage and veggies. Beat 8-9 eggs and fill the cups 3/4 of the way with egg. Stir the cups a little to evenly distribute eggs. A measuring cup with a pour spout works best! Vanilla Almond Chia Seed Pudding was a dreamy bliss loaded with all these summer fruits! I layered it with muddled honey-raspberries, fresh strawberries, blueberries, peaches and topped it off with @bubbasfoods vanilla bourbon ”ungranola” (those sliced almonds and coconut flakes😍) I got a little carried away but I mean, honestly. Who doesn’t get carried away when toppings are involved? • VANILLA-ALMOND CHIA PUDDING | 1/3 cup black chia seeds, 2 cups almond milk, 1 tsp. @simplyorganicfoods pure vanilla extract (or vanilla bean pod), 1/4 tsp. cinnamon, fresh fruit... Combine chia seeds, almond milk, cinnamon and vanilla extract. Stir well. Let the seeds sit at least 3 hrs or overnight. Muddled raspberries are just 1/2 a pint of raspberries+ a drizzle of honey with a small fork doing the smashing. That’s it! Layer it up or not, this is a super easy #mealprep breakfast for the week or something special on the weekends.
