The best part about cool evenings and summer ending is that “all things cozy” is perfectly acceptable : ) . Today is the final recipe for this 4 part series!  Hope you all had fun with the protein powder recipes. My last labor of love is a welcome mat to Autumn (seriously one of my favorite seasons). Muffins! 🍂🍁🐿🍂 . How about some Spiced Sweet Potato Chai muffins?  Y’all are not ready.  And P.S. - this recipe might be one of my best EVER.  Let me know what you think.  Recipe below! • • • Part IV is “Bake it!” Spiced Sweet Potato Chai muffins made with w/ the addition of @kuranutrition Chai Plant Based Vegan Protein. You can feel full and totally satisfied.  Get 20% off @kuranutrition ‘s products by using CK20 at checkout. #ad --- Sweet Potato Chai Muffins 35g ( ⅓ cup or 1 ¼ packets) Kura Chai Plant Based Vegan Protein 220g (1 ⅔ cups ) Gluten free 1 to 1 flour 200g (1 ¼ cups) coconut sugar 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 222g (1 cup) sweet potato puree 171g (¾ cup) ghee (or butter), room temp 75g (¼ cup) coconut yogurt 2 eggs 1 teaspoon vanilla TOPPING: 143g (3/4 cup) brown sugar 34g (1/2 cup) walnuts 1 ½  teaspoons cinnamon 2 tablespoons buckwheat flour 70g (1/3 cup) butter 1. Preheat oven to 350 degrees. Spray the muffin tins with coconut spray. 2. Mix the dry ingredients. In a separate bowl, mix the wet ingredients. 3. Add the wet to the dry, being careful not to overmix. 4. For topping, combine first 4 ingredients in a small bowl. Stir. Using a fork, cut in butter. 5. Add the batter to the tins and cover each muffin with the topping. Bake for 12-15 minutes. at Portland, Oregon

Today consisted of a whole lotta goooooooodness. It also consisted of way less light ( I do love you Autumn but....😆.). So I’ll be getting up extra early tomorrow to finish shooting this new recipe!! Totally excited to share Part III of this week’s series!  So you all know how much I LOVE ice cream, right?  Always experimenting with it...and who cares if it’s the end of summer :-) It’s never too late to enjoy ice cream. Especially when chocolate is involved. . . • Why not try a little protein to remix a cold treat?  Basically you have a win win situation here, friends! Let me know what you think.  Recipe below! • • Part III is “Freeze It”! This smooth and rich Vegan Peanut butter chocolate ice cream featuring @kuranutrition ‘s Chocolate Plant Based Vegan Protein. You can get 20% off @kuranutrition ‘s products by using CK20 at checkout. #ad --- -Vegan Peanut butter chocolate ice cream- 1 tablespoon Kura Chocolate Plant Based Vegan Protein 145g (1 cup) raw cashews 8oz. (1 cup) filtered water 4 oz. vegan, soy lecithin-free, dark chocolate, chopped 76g (½ cup) coconut sugar 2 tablespoons unsweetened cocoa powder 1 tablespoon peanut butter 1 ½ teaspoons vanilla ¼ teaspoon kosher salt 190g (1 cup) virgin coconut oil, melted, cooled slightly Place cashews in a small bowl and cover with filtered water. Soak for 12 hours. Melt chocolate in double boiler over medium heat, stirring until melted. Remove from heat and let sit, stirring occasionally, until cooled to room temp. Melt coconut oil. Allow to cool slightly. Drain cashews. Add to blender with 1 cup fresh filtered water. Transfer melted chocolate into a blender. Add Kura Chocolate Plant Based Vegan Protein, coconut sugar, cocoa powder, peanut butter, vanilla and salt. Purée until smooth. With the motor running on low speed, slowly pour in oil and purée until creamy. Process in an ice cream maker or place in glass container and freeze until firm. Allow to warm slightly before serving. Sharing Part II of this week’s “part-time vegan” series!  Today is for my Matcha lovers :-) I’m always inspired by the creative, delicious ways to use this bright, green tea powder in my kitchen.  Below you can find the recipe for this vanilla matcha shake.  A perfect Monday morning - on the go - drink that you can shake up in no time.  Let me know what you think.  Recipe below! As a part-time 😂 vegan, I am always testing out protein products.  Definitely only share things with you that pass my taste test after experimenting with it in my own kitchen.  Loved working with this protein powder - the results were too tasty not to share a few. . Recipe below! . • This brand is called Kura.  It’s New Zealand based and their protein products are plant based and/or made w/ grass fed dairy.  Shout out to my New Zealand foodies! (I have plans to visit early 2018!!) . • Part 1 is “Blend It”. I used a mix of Kura’s Vanilla & Berry Grass Fed Dairy Protein for a vibrant, end of summer smoothie bowl.
