This yummy shepherds pie is completely plant based and serves up to 5 portions! Prep time- 10 minutes Cooking time- 30 minutes Calories-230 Protein-15G Fats-5G Carbs- 40G Ingredients -150G Lentils -150G Frozen mixed vegetables (Peas, carrots and cauliflower) -2 large peeled sweet potatoes -30G Vegan olive spread -2 small onions -2 Handfuls of mushrooms -3 cloves of garlic -1 Vegetable stock -1 kcal spray -Seasoning- Thyme, Chili powder, Garlic powder,Black pepper Method Preheat oven to 200 degrees and spray baking tray with fry light Chopย  onions, mushrooms, garlic and defrost frozen vegetables (Microwave 3 minutes) Cut sweet potatoes into large chunks and boil for around 15 minutes Boil lentils with around 500ML of water and vegetable stock for 10 minutes, then add chopped ingredients along with seasoning (Only 1 onion) and reduce heat for a further 10-15 minutes. Once sweet potatoes are soft, drain the water. Then add onion, olive spread and seasoning and blend with a food processor or mash with a fork. Add base ingredients (Lentils and vegetables) to the baking tray then cover with the sweet potato smash.
