Happy Sunday! I woke up today craving all the things 🙆 My crazy schedule has finally gotten the best of me and left me feeling all out of sorts the last couple days. My appetite has been low, but it is clearly back in full force! Insert: biggest Sunday brunch! I wanted sweet. I wanted savory and I definitely wanted filling. So, doing what I have been doing best lately, I took what was in my fridge/freezer and whipped up this plate. It kind of reminded me of Thanksgiving in a way 😉 _ #WhatsOnMyPlate: Kabocha Squash Waffles + roasted brussel sprouts + leftover turkey + cranberries + sliced cheddar cheese _⠀ Ingredients:⠀ 3.5 cups mashed kabocha squash (pumpkin like consistency)  4 large eggs 2 tbsp @BobsRedMill coconut flour 1 tbs ground cinnamon 2 tsp baking powder sweetener, optional _⠀ Method:⠀ 1. Add kabocha squash and eggs to a bowl and beat with a hand mixer. 2. Add in remaining ingredients and mix until just incorporated 3. Let batter sit while you heat your waffle iron⠀ 4. Follow waffle iron directions to cook batter.⠀ 5. Repeat until all batter is gone. 6. Enjoy as is or popped into the oven to make them extra crispy. 7. TGIF!!! I hope you had a great week! Like the last few this week has been INSANE for me! And the weather here in Arizona has been 👎 cold, dark and rainy. The kind of weather that makes you just want to snuggle up on the couch and watch Netflix all day. The other day my salad was looking bright and colorful and today it's looking a little brown 😂 but both were still sooooo good! Tonight's post-work meal was another quick and easy dish! I would say post-workOUT, but I am a 5am gym goer. Happy Seafood Salmon Sunday 😜 It is so crazy how the weather changes my taste buds. It has been in the 70's here and all I want to eat are big salads and yogurt bowls! Happy Saturday! I am not one to head to the grocery store on a Friday night (normally it's a Saturday thing), but my fridge was down to nothing and I was in desperate need of a restock! True story: I have nothing in my fridge 😂 so this is what dinner is looking like tonight. It's sad, I know. Happy hump day! I am not sure if this is considered breakfast, lunch or dinner because I eat polenta for all of those meals 🤷🏻‍♀️but tonight it was a fast (and cheesy) dinner 😉Less than 10 minutes to be exact! ⠀ _⠀ Ingredients:⠀ 1/3 cup @bobsredmill organic polenta⠀ 1 cup water ⠀ 1/3 cup dairy free yogurt⠀ 1 tbs @bobsredmill nutritional yeast⠀ garlic powder, onion powder, black pepper and sea salt, to taste⠀ 2 poached eggs⠀ Microgreens⠀ Cracked black pepper ⠀ _⠀ Method:⠀ 1. Add the water and polenta to a microwave safe dish and heat on high for 3 minutes.⠀ 2. Remove and mix⠀ Allow to cool for 2⠀ minutes⠀ 3. Mix in your yogurt, garlic powder, onion powder, nutritional yeast, salt and pepper⠀ 4. Plate and top with 2 eggs (I went with poached tonight 😍) ⠀ 5. Simple meal going down tonight because I still have a lot of work to do! 🙆 Luckily this was all done on a single sheet pan so between prep, cooking and clean up I had it ready in minutes! 🙌 _ #WhatsOnMyPlate: kabocha squash + brussels sprouts + @truestoryfoods sausages + pom seeds + parsley _ Recipe details: preheat your oven to 420 degrees F. Cut kabocha squash into cubes. Slice brussel sprouts. Put them on a parchment-lined baking sheet and toss with @saucylipsfoods jalapeno & green apple. Roast for 10 minutes. Remove pan from the oven and add slice sausages. Return to the oven for about 10-12 minutes or until veggies are done to your liking. Happy Saturday!! 🙋🏻‍♀️ I am kicking off the weekend with this amazing plate of Cinnamon Raisin Sweet Potato Bread French Toast! This is a remake from way back in the day on Ingredients Of A Fit Chick. I forget about so many delicious recipes on that website. I really need to spend more time remaking them! There are some darn tasty things on there 👌🏼but, let’s start with this one! 😉 - Ingredients: 1/2 cup @bobsredmill coconut flour 1/4-1/2 cup coconut sugar (depending on how sweet you want it) 6 scoops collagen peptides (can sub protein powder) 2 tbsp Vietnamese Cinnamon 1 tbsp baking powder 1 1/3 cups eggwhites 1 cup mashed sweet potato 1 tbs pure vanilla extract 1/2 cup raisins _ Method: 1. Preheat oven to 350 degrees F 2. Mix together all dry ingredients 3. Add in egg whites, sweet potato and vanilla 4. Mix well 5. Let batter sit while you line a 9in loaf pan with parchment paper 6. Spray with nonstick spray or oil 7. Fold raisins into your batter 8. Pour batter into your pan and bake for about 55 minutes or until toothpick comes out clean 9. Allow bread to cool before slicing _ To make into French Toast: 1. Dip bread slices into more eggwhites 2. Cook as desired 3. Serve with maple syrup, peanut butter and berries _ I hope you all enjoy the recipe! I am off for an afternoon up in Scottsdale!
