Churrascada 2019 | Adding salt to a thick cut of Brazilian chuck short ribs. This cut had no rib bones - only a small section of split vertebrae and were twice as thick as bone in racks. They cooked like a boneless rib cap except much slower. The intramuscular fat was light and the meat flavor was stockier. The smoke duration was 15-18 hrs primarily due to the semi-frozen state in which they began their pit ride. Result: they were a HUGE HIT!!! To all my brothers at @bucksbackyardtx Cooking in the @louiemuellerbbq #HornBash2019 BBQ Cookoff, enduring the elements - I am with you... I told some of you you I had to bug out and cook some lamb for the great people attending the @reddirtbbqfest ... First I clean the pit, cut the lamb, cook it and load it for 6.30am departure. And like you the pit is outside... along with over 1200 lamb chops!!!!
