I am absolutely in love with this drink and have been drinking it all summer. In my childhood in the UK we used to have a soda drink called "Cream Soda" which was flavoured with vanilla, and was so delicious. I think it may be called "creaming soda" here. Anyway I just put some soda water in a glass (6 - 8oz) and put in a full squirt of our Vanilla Stevia. I also add a little of my humic & fulvic minerals A. to give it a little colour but not necessary and B. to ensure that I am taking in minerals throughout the day. This also makes a great drink for all Keto people if you are out and don't know what to drink, just ask for a soda water and take your own vanilla stevia with you. Well by now you should know that I love "easy" and I love "lemon" so this recipe is a match made in heaven. It uses our "lemon stevia drops" that are on SPECIAL on our website at the moment. This little cake is just delicious when drizzled with lemon icing, made by using our Icing (not) Sugar and a little lemon juice. Easy Lemon & Coconut Custard Cake 250 ml Coconut Cream 30 grams Coconut Flour 2 large eggs 50 grams Sweetnz Classic Blend 20 grams soft or melted but cooled (coconut oil can be used) 2 tsp lemon zest 1 tsp vanilla extract 1 tsp baking powder 12 drops Sweetnz Lemon Stevia 120 grams desiccated coconut Method 1. Grease a 9 inch pie dish and pre-heat oven to 175 C 2. Put all the ingredients (except the coconut) in a bowl and mix thoroughly. 3. Fold in the coconut and combine 4. Bake for 40 – 45 mins until the edges are just going brown 5. When completely cool drizzle with some lemon icing, made from our Icing (not) Sugar and a little lemon juice. 6. This stores well in the fridge and can be frozen for up to 6 months. So our sweeteners are not just for sweet dishes. I make this superb salmon dish using our Golden Brown Sweetener. This would be a great dish fo the Christmas period it is easy quick and totally delicious. Sweet Garlic Salmon INGREDIENTS . 4 wild-caught salmon fillets about 1/2 pound or 250 grams each, skin off or on • Salt and pepper, to season • 1/2 teaspoon paprika (mild, sweet or smokey) • 2 tablespoons butter • 4 cloves garlic, finely chopped or minced • 4 tablespoons Sweetnz Golden Brown sweetener • 1 tablespoon water • 2 teaspoons soy sauce • 1 tablespoon fresh squeezed lemon juice, (plus extra to serve) • Lemon wedges to serve INSTRUCTIONS 1. Arrange the oven shelf to the middle of your oven. Preheat oven to broil/grill settings on medium heat. 2. Season salmon with salt, pepper, and paprika. Set aside. 3. Heat the butter in a skillet or pan over medium-high heat until melted. Add the garlic and sauté for about a minute, until fragrant. Pour in the Golden Brown Sweetener, water, and soy sauce; allow the flavours to heat through and combine. Add in the lemon juice; stir well to combine all of the flavours together. 4. Add the salmon steaks to the sauce in the pan; cook each fillet (skin-side down if there's any skin) for 3-4 minutes or until golden, while basting the tops with the pan juices. Season with salt and pepper, to taste (if desired). 5. Optional -- Add the lemon wedges around the salmon (adds a stronger lemon taste). Baste salmon one more time then transfer the pan to your oven to broil / grill for a further 5-6 minutes, or until the tops of the salmon are nicely charred, and the salmon is cooked to your liking. 6. Berry & Lemon Curd Pavlova Yuuuuuum!!! Sugar Free as well😋🤸‍♀️🤸‍♂️😋 Yes you can have a Keto, sugar free Pavlova for Christmas Sugar-Free Meringue Base Ingredients: 6 Egg whites (If you are also making the lemon curd you will have a supply of egg whites) 60 grams Sweetnz Icing (not) Sugar 1 Tblsp White Vinegar 1 tsp Cream of Tartar Method: Preheat your oven to 100 C Whisk egg whites in a very clean and fat-free bowl until they are light and fluffy. Add Icing (not) Sugar a little at a time and whisk well between each addition, then whisk for 1 extra min. Add Vinegar and Cream of Tartar and whisk again for another minute. Put on a tray lined with wax paper (I make a small indent in the middle to allow for the cream filling). Bake for 1 1/2 - 2 hours. Sugar-Free Lemon Curd Ingredients: 115 grams Butter 80 grams Sweetnz Premium Blend ½ cup lemon juice ¼ cup lemon zest 6 drops Sweetnz Lemon Stevia 6 egg yolks. . ( If you are also making the meringue you will have a supply of yolks) Method: In a saucepan put the butter, Premium Blend sweetener, lemon stevia, lemon juice and lemon zest and stir until the sweetener has dissolved. Putting it altogether :- Ingredients 300ml Cream Sweetnz Vanilla Liquid Stevia Whip 300 ml of cream until thick and add approximately 8 drops of Sweetnz Vanilla Stevia and whisk just a little to incorporate. Taste, and add a few more drops of Stevia if you like it a little sweeter and give it another mix to incorporate again. Then carefully mix through ½ - ¾ of the lemon curd from our recipe into the cream so that there are still big streaks of the lemon curd in the mix, ie just a very quick mix. Add the cream and curd mix onto the meringue. (Adjust the amount of lemon curd you put in according to your taste, you may want to use the whole lot, but I'm sure you'll find something to do with any leftovers!)
