#22 Ingredients: Red Sauce: 1 cup (240ml) Massel chicken-flavored broth 1 (15-ounce/425g) can diced tomatoes and their juices 1/4 cup (22g) chopped sun-dried tomatoes (soft or packed in oil and patted dry) 1 tablespoon ribbed, seeded, and minced jalapeño, plus more to taste 1/4 teaspoon red pepper flakes, plus more to taste Rice: 3 tablespoons grapeseed oil or extra-virgin olive oil 2 cups (300g) diced yellow onion 1 tablespoon minced garlic (about 3 cloves) 3 cups (570g) brown basmati rice 5 cups (1.2l) Massel chicken-flavored broth 1/2 cup (20g) firmly packed finely chopped cilantro 1/2 cup (40g) finely chopped green onions (white and green parts) Splash of fresh lime juice, to taste Natural salt, to taste Freshly ground black pepper, to taste Method: To make the red sauce, throw all of the red sauce ingredients into the blender and blast on high for 30 to 60 seconds until smooth. In a Dutch oven over medium-high heat, saute 2 tablespoons of the oil, with the onion, garlic, and a pinch of salt for about 5 minutes until the onions are soft and translucent. Stir in the rice, add the remaining tablespoon of oil, and sauté the rice for about 10 minutes until brown and toasted. Add the 5 cups of broth and red sauce, and stir to combine. Increase the heat to high, and bring to a boil. Reduce the heat to low, cover, and simmer for about 30 minutes, until the liquid has been absorbed and the rice is cooked. (You may have to cook a bit longer, depending on your pot and stove.) #18: One of my favorite things to eat when I was growing up was my mum's scalloped potatoes. It was such a popular dish in the 80's! But, with gobs of cream, cheese, and butter, the original is not so healthy. To make a basic cream sauce, blend Massel broth with raw soaked cashews. #17: I’m a sucker for creamed spinach, but I have an intolerance to dairy. Whether you’re cooking for dairy-free diners or not, you’ll be amazed at the rich creamy sauce you can blend up with Massel broth, raw cashews, garlic and onion is. Stir it into some sautéed spinach, and you’ve got mindblowing vegan creamed spinach that dairy devotees will go crazy for! Recipe @theblendergirl Ingredients: 1 cup (240ml) Massel vegetable or chicken-flavored broth 1 cup (140g) raw unsalted cashews, soaked 3 tablespoons nutritional yeast 1/4 cup (60ml) extra-virgin olive oil 1 cup (150g) diced yellow onion 1 tablespoon minced garlic (3 cloves) 4 cups (208g) diced shiitake or cremini mushrooms 3 tablespoons wheat-free tamari 2 pounds (32oz) baby spinach 1/4 teaspoon freshly ground black pepper, plus more to taste Natural salt, to taste Splash of fresh lemon juice, to taste Method: Throw the broth, cashews, and nutritional yeast into your blender, and blast on high for 30 to 60 seconds until smooth and creamy. Set aside. In a wok, deep skillet, or pot over medium-high heat, heat 1 tablespoon of the olive oil and sauté the onion, garlic, and a pinch of salt for about 5 minutes until the onion is soft and translucent. Add the mushrooms with 2 tablespoons of the olive oil and 1 tablespoon of the tamari and sauté for a further 5 minutes, until soft. Add the spinach gradually with the remaining tablespoon of olive oil and 2 tablespoons of tamari, and sauté for another 5 minutes, until wilted. Stir in the cashew cream, and combine until evenly mixed through. #15: Just sauté some onions and garlic with some mushrooms, tamari, rosemary, and black pepper, and then blend with Massel veggie broth, and you’ve got a gourmet vegan gravy in less than 10 minutes. This recipe is a staple in our house. Many of my friends say they prefer it to conventional gravy. Recipe @theblendergirl Ingredients: 2 tablespoons extra-virgin olive oil 1 cup (150g) diced yellow onion 1/2 tablespoon finely chopped fresh thyme, plus more to taste 2 cloves garlic, minced 3 cups (120g) sliced shiitake or cremini mushrooms 1 1/2 tablespoons wheat-free tamari 1/8 teaspoon freshly ground black pepper, plus more to taste 1 cup (240ml) Massel vegetable broth, plus more to taste Natural salt, to taste Method: In a large skillet over medium heat, sauté 1 tablespoon of the olive oil, with the onions, thyme, and garlic for about 5 minutes until soft and translucent. Add the mushrooms, the remaining tablespoon of olive oil, the tamari, and black pepper, and sauté for about 10 minutes, until reduced and cooked through. Allow to cool slightly. Transfer the vegetable mixture to your blender, add the broth, and blast on high for 30 to 60 seconds until smooth and creamy. Season with salt and pepper, to taste.
