Roasted a cornish hen in the Airfryer for the first day of October. Hello, #Autumn! πŸ‚ ********************************* INSTRUCTIONS: - Rubbed the Cornish hen with thyme butter - Carefully loosen skin and rub thyme butter under the skin - Generously sprinkle salt and pepper all over and pat it down - Stuffed it with sage, rosemary and thyme (fresh from my #garden) - Place hen in #Airfryer breast side up - Set Airfryer temperature to 350 degrees, flipping every 12 minutes - At 35 minutes, the hen was fully cooked

OMG! I am so loving my Airfryer! Made breaded chicken breast, stuffed with ham and Munster cheese, seasoned with salt & pepper, cayenne pepper powder and sprayed with olive oil. Stir-fry #pork with haricot verts over a bed of #quinoa, and a side of homemade pickled Serrano #chilis 🌢. So much easier to cook quinoa in a rice cooker, but rather than water, I used chicken broth for more flavor! In rice cooker: 1 part quinoa 2 parts chicken broth

#Lunch is served with noodles in a homemade Cornish hen and pork broth. Broth was delicious πŸ˜‹! I threw in some fish cakes that were in the fridge and topped with garlic chives. **************************************************** Ingredients: 1.5 lbs whole Cornish hen 1.5 lbs pork tails 2 roasted onions 1 inch ginger 4 garlic cloves 1.5 tbsp oyster sauce 1 tsp black peppercorns 10 cups water Salt to taste

Wanted something other than pho or bun bo hue? As the restaurant name suggested, "duck, duck, duck", I ordered the duck bamboo noodle soup with the duck cabbage salad, "vit goi", accompanied with a side of sweet ginger sauce πŸ˜‹. Now how am I going to eat dinner! at Quan Thong Xanh Restaurant

Wheat spaghetti with #chicken and #kale from mom's garden. Did I mention lots of Parmesan 😳! ********************************************************** Ingredients: Wheat pasta Chopped kale (de-stemmed) Chicken thighs (cut in strips) Minced garlic Dry chili flakes Olive oil Salt and pepper Pasta water Instructions: - Cook pasta per package instruction but less by ~1 min - Add olive oil, garlic and chili flakes. Cook until garlic is fragrant - Add chicken thighs and cook until no longer pink. Remove from pan - Add olive oil and chopped kale and cook until desired tenderness - Add cooked chicken back in the pan - Add Parmesan, stir and then reserved pasta water - Add cooked pasta in pan - Add more Parmesan if desired - Salt and pepper to taste - Garnish with Parmesan and drizzle more olive oil before serving
