If your New Year's resolution was to master the meal prep game, then boy oh boy are these exciting times for you! Week No. 2 of our 15-Minute Meal Prep series comin' on through with some zippy salsa verde chicken and lentils. It's pretty straightforward: dump everything in the Instant Pot (or slow cooker!), let it do its thing, and package it all up for a protein powerhouse lunch all week long.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Dump in the Instant Pot:⠀ 2 cups dried lentils⠀ 1 lb. boneless skinless chicken breasts⠀ 3 cups salsa verde⠀ 3 cups chicken broth⠀ 1/2 small onion, chopped⠀ 3 green onions, chopped⠀ 1/2 cup cilantro, chopped⠀ 3 cloves garlic⠀ 2 jalapeños, diced (ribs and seeds removed)⠀ 1/2 teaspoon salt⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook on high pressure for 20 mins. Quick release the steam. Shred the chicken, stir it all up, and add more salsa verde as desired. Serve with brown rice! Listen up, mushroom lovers! We have something real special for you. It involves buttery golden-brown mushrooms, tender whole wheat pasta (we see you, #poysugarfreejanuary) and a winter-friendly walnut pesto (no basil! trust!). Let’s just say this is not a sad situation.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Blend up for the pesto:⠀⠀ 1 cup toasted walnuts⠀⠀ 1 1/2 cups packed greens (spinach, kale, anything)⠀⠀ 1/2 cup parmesan⠀ 1/4 cup olive oil⠀⠀ 1 clove garlic⠀⠀ juice of 1 lemon⠀⠀ salt and pepper to taste⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Heat some butter in a pan and add 16 oz of fresh sliced mushrooms. Sauté for 8-10 mins, then, add 8 oz of pasta (cooked and drained) to the pan with 1/4 cup parmesan and salt and pepper to taste.⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add it to a bowl with a dollop of pesto and serve! Top 5 life moment: remembering these are sitting in your freezer when you just need a lil somethinsomethin for #poysugarfreejanuary. 🏆We’re kind of a “mandatory to have Almond Butter Cups on hand at all times” workplace right now.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3/4 cup melted coconut oil⠀⠀ 1/2 cup cocoa powder⠀⠀ 2-4 tablespoons natural sweetener (maple syrup, agave, or honey)⠀⠀ pinch of salt⠀⠀ roughly 3/4 cup of almond butter⠀⠀ sea salt for topping⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Whisk together the coconut oil, cocoa powder, sweetener, and a pinch of salt. If you’re kinda *one eyebrow raised* about putting brussels sprouts in tacos, can we convince you for just a sec? Sautéed shredded brussels sprouts, roasted corn, spicy jalapeño, black beans, and a cilantro chimichurri all tucked in to a charred corn tortilla. Right??? And HONESTLY, who among us can resist a good taco? ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Shred up about a pound of brussels sprouts and sauté in a pan with some olive oil, a tablespoon of taco seasoning, and some salt to taste. Also: char up a few cups of frozen corn with a minced jalapeño in a pan. We're getting the party started with this Creole Chicken + Sausage and it's so stupidly easy, we're just gonna tell you how to make it right here, right now.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add to an Instant Pot (or slow cooker!):⠀ 1 pound boneless skinless chicken breasts⠀ 12-16 ounces Andouille sausage, sliced⠀ 1 14-ounce can fire roasted crushed tomatoes⠀ 2-3 tablespoons tomato paste⠀ 2 bell peppers, chopped⠀ half an onion, diced⠀ 3 cloves garlic, minced⠀ 1 tablespoon Creole seasoning⠀ 1-2 teaspoons salt (if your seasoning doesn’t have any)⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cook on manual high pressure in the Instant Pot for 8 mins, or 4ish hours on high in a slow cooker.
