Figured going to the grocery store on a Sunday was a risky proposition so I’m making the best of what I have at home and I’ll hit up the store tomorrow. . A little Breakfast for Lunch this Friday. . Got a breakfast tostada with a runny yolk, avocados, cilantro, pickled onion, fresh cilantro, and some chipotle Tabasco all on one of my last ALW tortillas. . To make this: . 1. Cooked a @peteandgerrys egg sunny side up in avocado oil. Seasoned with salt + pepper . 2. While that was going, toasted both sides of my @almondlovewith lowcarb tortilla in some avocado Oil. Super sad, one of my last ones since we’ve temporarily suspended production. . 3. Topped the tortilla with the egg, added sliced avocado, fresh @josiesorganics cilantro, pickled red onions, and @tabasco sauce. . 4. Added some crumbled Bulgarian feta. . Who else is feeling a little more “graze-y” with everything going on? I pulled together some “Snacks for Lunch” favorites after a quick run. Love meals like this since you get a little bit of this and that every bite. . Here is what I’ve got going on: . 1.Some sliced salami . 2.Kiwi Berries - I tried these for the first time last week and I’ve been hooked. So refreshing. . 3.Jammy egg topped with some good stuff. I boil the egg in water for 6 mins 20 seconds then put in an ice bath for that perfect jammy egg. Man, our new reality is tough. To keep my sanity, I am trying to focus on the positives and magic of each day…day by day…its hard though, even though I feel like one of the lucky ones. I truly feel for those in the service industry, hospitality, healthcare industries. The single parents, teachers, and those who’ve made tough personal and professional decisions in recent days. . So I’ll continue sharing what I can, because in my mind acknowledging the present circumstances and continuing to push on despite the challenges is the only thing that’s in our control. . The good news is, I’ve been spending a ton of time at home trying new recipes. I made this delicious shredded beef that I’ve been eating every day either on its own, in between tortillas, on a salad, or with other toppings. Its my take on a ropa vieja or something like that and its so easy to make. Its also super filling. . Here is how to make it: . 1.I started by cutting 2lbs @wholefoods chuck roast in large chunks and seasoned all sides with sea salt, pepper, thyme, sumac, fennel, smoked paprika. Rub in well. . 2.Bring a dutch pan to medium heat with some oil (I used olive) and sear each side. This gets a nice brown crust on the outside and locks in a lot of flavor. Just a couple minutes on each side. . 3.Remove beef, then add in veggies of choice. I used onions + carrots, but depending on your goals and how low carb you want it, feel free to modify. Make sure the veggies pick up all the nice meat juices and cook for a minute or so. . 4.To the veggies, add a couple adobo peppers (I used canned Goya ), some more smoked paprika, 1 can tomato sauce, & mix well. . 5.To a slow cooker, add the beef at the bottom, add the veggie mixture on top, and then top with just enough broth to cover the meat. Top with 2-3 bay leaves. . 6.Put on high for approximately 5-6 hours then shred using two forks, then cover and cook for another 1-2 hours. . Then devour however you prefer. Taco Stuffed Bell Pepper with Greens, Avo, Jalapeños, Sour Cream, and liberal amounts of chipotle Tabasco sauce. . I got a solid lunch workout in and fueled up with this taco stuffed bell pepper today using ground turkey. As always, you can use whatever you have on hand. A great option to mealprep & keep around for easy, filling meals. . To make these: . 1.I cut 2 orange bell peppers in half and using a spoon, cut out the inside/seeds. Set aside. . 2.Grabbed 1 lb of ground meat and cooked on medium heat, using a wooden spatula to break it down. Once it was almost cooked, added taco seasoning. . 3.Once the meat was almost finished, I spooned a little into the bell peppers, added some shredded cheese, put some more beef on top of the cheese, then added more cheese. Easily skip this if you’re dairy free. . 4.Put in the oven at 425F for a few minutes. . 5.Served on top of a bed of @josiesorganics arugula + cilantro, avocado, sliced jalapeño, and served with some sour cream … then topped it with generous amounts of chipotle @tabasco because that’s where the flavor is at! . You can great more creative with this and add whatever else that you would to a taco. Today’s snack plate for lunch status. What would you tackle first on this plate?? . Getting a little light on groceries and I need to make a trip to the store soon. Just trying to use up everything I have around first. No avocados this morning and no avocados for lunch, but I whipped up some good stuff for lunch today: . 1.Sliced Persian cucumber. . 2. A jammy soft boiled egg. I boil the egg in water for 6 mins 20 seconds then put in an ice bath for that perfect jammy egg. Topped with salt flakes + pepper . 3. Two types of cheese: manchego and a Guinness cheddar cheese. So good. . 4. Fresh organic strawberries. . 5. Roasted almonds. Are you using a knife and fork for this, or folding and getting messy? . Been a while since I’ve posted and I’m just trying to get in the rhythm of managing everything going on. Starting off Tuesday morning with this easy breakfast tostada. We’ve decided to hunker down at home, move our workouts to the basement, and minimize going out unless we’re walking the dogs outdoors. This also gives me a much needed chance to get a lot of things squared away at home. . Here is how to make this & everything going on here this morning. So easy and super filling. You can use whatever you like: . 1.I started with a lowcarb @almondlovewith tortilla - you already know! Just crisped up on both sides for a few seconds. . 2.Fried up a vital farms egg sunny side up, but you can do it however way you want. . 3.Layered some cheddar cheese on top of the toasted tortilla. I used mild cheddar. . 4.Sliced some avocado and seasoned with Trader Joe’s chile lime and everything but the bagel seasoning. The combo never disappoints. . 5.Added some homemade pickled red onion (a new fav I’m working to improve) and some local 80 acres micro greens . @realgoodfoods ... youve done it!! I got a shipment of their new ice cream delivered exactly an hour ago. Dinner plans went down the drain. 😂 Let’s just put it out there: hands down the best low sugar ice cream I’ve tried. Devoured straight out of the pint status. . Super super creamy. Sweetened with allulose and stevia. I tried a little bit of all & the Tanzanian Vanilla flavor was my fav. And I prefer a lot of other flavors over vanilla usually. Was just feeling a good steak today. . Smashed my daily 5k + arms/back at the gym today and feasted on this beauty for a late lunch / early dinner. . NY strip from @wholefoods , let it sit out for about 30 minutes, seasoned with salt & pepper, then cooked in castiron pan basted in herb butter, rosemary, and garlic. Medium rare for me. . Served with some quick and easy greens (spinach, cucumber, and fresh watercress) . And of course some homemade horseradish sauce. This is so easy and a must do. Mix some sour cream, horseradish, lime juice, mustard, small amount of dill, sea salt + pepper. . What was the highlight of your weekend?? The weather was beautiful here. I spent it back home after spending the last couple away from Cincinnati. Back on the road early tomorrow morning to work on @almondlovewith - if you haven’t tried our new tortillas, I promise you want to!
