It’s nachos w/o all the carbs!
A snack a made the other day. Very tasty and low on carbs 🤗🤗 Ingredients
1 medium head cauliflower cut into florets
2 tsp. olive oil
½ tsp. ground cumin
¼ tsp. sea salt or Himalayan salt
¼ tsp. chili powder
¼ tsp. garlic powder
½ cup shredded Monterey jack or pepperjack cheese
¼ cup chopped tomato
¼ cup chopped red onion
¼ cup chopped orange bell pepper
1 medium jalapeño seeds and veins removed (optional), sliced (can add a second if desired)
½ cup mashed avocado
2 Tbsp. finely chopped cilantro
Preheat oven to 425º F.
Place cauliflower on baking sheet. Drizzle with oil. Sprinkle with cumin, salt, chili powder, and garlic powder; toss gently to blend. Spread evenly on baking sheet.
Bake for 30 to 35 minutes, or until tender-crisp and golden.
Top evenly with cheese. Bake for 3 to 5 minutes, or until cheese is melted.
Top evenly with tomato, onion, bell pepper, jalapeños, avocado, and cilantro; serve immediately.

Here’s a healthier version of lasagna for you- it’s made with spaghetti squash instead of noodles. Give it a try and let me know what you think!
1 small spaghetti squash (approx. 3½ to 4 lbs.)
Nonstick cooking spray
4 cups all-natural marinara sauce
3 cups part-skim ricotta cheese
1 cup grated Parmesan cheese
¼ cup finely chopped fresh basil (optional)
Preheat oven to 375° F.
Line large baking sheet with parchment paper. Set aside.
Cut spaghetti squash in half lengthwise. Remove seeds and membrane.
Place spaghetti squash, cut side down, on baking sheet. Bake for 40 to 45 minutes, or until tender.
Reduce oven temperature to 350º F.
Scrape spaghetti squash flesh into stringy noodles.
Lightly coat 4-quart baking dish with spray.
Evenly layer half spaghetti squash, half marinara sauce, and half ricotta cheese in baking dish. Repeat with second layer.
Evenly top with Parmesan cheese.
Bake for 30 to 32 minutes, or until golden brown and bubbly.
Garnish with basil (if desired).

When he said, “welcome to the Proving Grounds”, I lost it!. Almost quit, but I knew I had more Im me... Fitness + mindset = leveling all the way up this month.
Confidence > self doubt.
Remember that with every failure, mistake, mishap, there’s a learning opportunity. Take advantage of the opportunities to LEARN even if things don’t turn out the way you want. Learning = growth
So it’s #transformationtuesday and I am blown away by this transformation in myself.
I knew I was gaining weight but that didn’t stop me from overeating. I ate entire pizzas in one sitting... I never worked out. I had no energy... didn’t want to do anything or go anywhere and I covered myself up with BAGGY BLACK CLOTHES.
The picture on the left was taken at my highest weight...the picture on the right was taken just last Friday and I feel like a completely different person.
I still eat the foods I love but I’ve fallen in love with FEELING good after eating instead of feeling weighed down. I workout now because it makes me feel great and have energy.
I still love my black clothes but I don’t mind showing off my curves.
I’m still on my journey and I’d love to have you join me. We can lock arms and beat our low self esteem and rebuild our confidence... TOGETHER.
These at home programs are changing my life. They are the complete package... fitness + NUTRITION + support.
