Tofu & Veggies with Spicy Italian Dressing. . . I think this tastes even better the second day. I make a lot so I have lunches/dinners for a few days. . You can choose your favorite veggies, anything goes. . . Here's what I used: OrangeTomatoes Artichoke Hearts Green Onions Green Olives Black Olives Green Peas Mushrooms Cauliflower Baby Corn Broccoli Tofu. . . Directions: Steam veggies that need it, chop everything how you like, mix together, add favorite vegan dressing (I used Spicy Italian). . . Cut Tofu into cubes (you don NOT need to press tofu), cook in a hot skillet with a little Italian dressing and cook to desired firmness. Allow to cool. Gently mix everything together and serve by itself, on top of pasta, rice, quinoa or potatoes. .
