I survived my arm reconstruction surgery. I look happy here in recovery because I had a nerve block and no general anesthia so I can't feel my arm at all😄😄. . But....as soon as the block wears off I will not be a happy camper for about a month 😣😣😣. Just thankful for my amazing doctor that I found and that I am on the road to recovery 💖. . . Pumpkin Pie Bars. . . Easy, yummy, gluten free & vegan of course💚. Perfect for your holiday table or anytime of year. Recipe Yields: 18 servings Ingredients:. For the crust: 1 ½ cups almond flour ½ cup coconut flour 1 tablespoon shredded coconut 2 tablespoons coconut oil 1 teaspoon grain free baking powder 1 teaspoon ground cinnamon 1 chia of flax egg* For the filling: 15oz pumpkin puree 1 tablespoon coconut oil 2 chia or flax eggs 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1-2 tablespoons maple syrup. . *For one chia or flax egg, combine 1 Tablespoon chia seeds or ground flax seed with 3 Tablespoons warm water; stir and allow to rest several minutes to thicken. . . Directions: Preheat oven to 375F. Line a 12-inch x 8-inch glass-baking pan with parchment paper. Combine all ingredients for filling in food processor or blender and combine until all ingredients are mixed together. Pour into a bowl and place in refrigerator while you prepare the crust. Combine all ingredients for crust into a food processor and mix until all ingredients are evenly distributed. The crust will have a granular consistency. Press crust into the parchment lined baking pan and roll with a cup or small rolling pin to form an even crust. Bake crust for 10 minutes and then remove from oven. Pour pumpkin filling over crust that you just removed from oven and spread until evenly distributed. Sprinkle crushed pecans over top of mixture. Bake for 25-30 minutes or until filling is cooked through. . . Note* These pumpkin pie bars freeze very well so make extra and store in air tight freezer container. You can enjoy these directly out of the freezer just allow them to soften for about 5-10 minutes. . . SAVE THE PLANET---GO VEGAN🌱

Oven roasted veggies. . Meal prepping for my upcoming arm surgery this week. . Ingredients: Celery, chopped use leaves also Carrots, chopped Leeks, chopped Garlic cloves, chopped Vegetable Broth Favorite Seasonings. . Preheat oven to 375F Cook for about 30 minutes or until vegetables are tender. . CELERY: If you looks closely, I use the leaves of the celery too. Celery leaves contain SO much flavor, pick the bunch that has the MOST leaves and add them to all of your recipes that call for celery. . LEEKS: Onions are the bully of veggies! They make you cry and overpower your recipes, right ?? Well, Leeks are onion's nicer more gentle cousin, who won't punch you in the face👊💥👊 They offer a milder taste and will not overpower your recipes and really compliment other veggies. Just slice them like you would a green onion. . CARROTS: Any color is fine and just peel, chop and throw into the roasting pan. . GARLIC CLOVES: I use fresh garlic cloves peeled and cut into 2-3 chunks. How much you use is a personal preference. . KALE: not pictured because I add the Kale when only 3-5 minutes remain in cooking time. I think Lactino Kale or Red Kale offers the most flavor. . BROTH: For this recipe, I used 4 cups. . I sprinkle veggies with seasinings and mix to evenly distribute throughout veggies.

When we are perfectly content with all that life gives us, then we attain true joy and happiness. The greatest happiness, the underlying joy that cannot be shaken by life's tough moments. . . . Matsya 🐋means fish and is seen as half human and half fish and is also an asana in yoga classes. The first avatar of Vishnu (There is a lot more to this name as well). . . . I love this version of Matsya with the four Vedas represented as infants. . . . Peppermint Brownies. . . Ingredients: 1.5 cups cooked sweet potato OR butternut squash OR canned pumpkin (does not alter taste) 2 cups of gluten free oats 3-4 tablespoons Cacao powder 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon of salt 1 tablespoon of vanilla extract 1/4 cup applesauce 1/4-1/2 cup of vegan chocolate chips 3-4 tablespoons of maple syrup (optional). . For frosting: 2 medium avocados 2 tablespoons cacao powder 1 tablespoon maple syrup Just mix all three ingredients together. . Directions: Preheat the oven to 350 degrees. Line 8×8 or 9×9 pan with parchment paper Blend dry ingredients FIRST by adding oats, cacao powder, baking soda, baking powder and salt to a blender and blend until powder is formed then pour into a large mixing bowl. Now, place cooked sweet potatoes, apple sauce, vanilla, and maple syrup in blender and combine. Add all ingredients together in a bowl and stir to combine well. Add chocolate chips by hand. Pour into your parchment lined pan and then sprinkle some chocolate chips on top if brownies if you like Bake about 20 minutes or until cooked thru. Store leftovers in covered container in refrigerator.

Chocolate Peppermint Bark So easy to make.....This is a healthy vegan version of the luscious chocolate peppermint bark we love during the holidays. Ingredients: 1 cup coconut butter, softened ½ cup coconut oil, melted 2 tablespoons cacao powder (or more if you like) 1 tablespoon maple syrup ½ teaspoon peppermint extract (optional) ¼ cup crushed vegan peppermint candies Directions: Line a pan with parchment paper, DO NOT skip this step. I repeat DO NOT SKIP THIS STEP or you will never get the bark off the pan without ruining it. (That is the voice of experience🤣🤣). . . . . Mix together coconut butter, coconut oil, peppermint extract and cacao powder in a bowl. Transfer the mixture to a parchment lined dish and spread evenly. Top with crushed peppermint candies. Place in refrigerator for about 30 minutes before breaking apart.

Vegan Holiday Cookie Cut Outs Ingredients: 1 ½ cup almond flour 2/3 cup coconut flour 1 ½ teaspoons baking powder 4 tablespoons coconut oil 4 tablespoons canned coconut milk 1 Flax or Chia egg . . . To make flax or chia egg: For one egg, combine 1 tablespoon of ground flax or grpund chia seed with 3 tablespoons of water. Stir well and place in the fridge for 15 minutes. The mixture will resemble a thick egg substitute after about 15 minutes. . . . Directions: Preheat oven to 375F. . Combine dry ingredients in one bowl and mix well. Pour dry ingredients and remainder of ingredients along with the flax or chia egg into blender or processor and blend until a dough ball is formed (dough may be slightly crumbly). . Pour dough onto a piece of parchment paper lightly coated with coconut oil. Place a second piece of parchment paper lightly coated with coconut oil directly on top of the dough. Use a rolling pin to roll the dough flat (about 1/8”) and this will press any crumbly pieces of the dough together forming one solid piece. . Cut out cookies with favorite cookie cutters. Transfer cookies with a spatula to a baking sheet lined with parchment paper. Bake for 10-12 minutes or until cookies are set. (Baking time will vary depending on the size of your cookies). . . For frosting I just used coconut butter with enough coconut oil to thin out the coconut butter. Tofu Scramble So easy and so delicious. Ingredients: 1 block Firm or Extra Firm Tofu 1/4 teaspoon Turmeric powder for color Your favorite seasonings A tiny touch of your favorite oil Directions: Open tofu and drain liquid Heat skillet over medium heat Add oil to skillet Place block of Tofu in skillet and break apart with spoon or spatula Add turmeric and seasonings Cook until heated thru. Serving suggestions: Serve in a burrito wrapper, on an English muffin, on toast, or with a side of oatmeal.

Lentil Stew A super easy meal prep. This makes a large batch but it freezes so well too. I will freeze in single or double serving sizes. Ingredients: 2 cups dry whole lentils, not split(I like using French Green & Brown Lentils) 6 cups veggie broth or water 1 large can diced tomatoes A few carrots chopped into about one inch pieces Fresh or granulated garlic (as much as you like) Your favorite dry seasonings. I also use jalapenos . . (When stew is done, I will add 2 pints of baby Bella mushrooms and sometimes even a few giant handfuls of kale. ) . . . Directions: Just put everything into a slow cooker on high for 4-6 hours or however long your slow cooker takes to make lentils just tender.
