I am all about the easy dinners right now. Kung Pao Chicken is ready in 15 minutes. Which also just so happens to be how long it takes to cook rice. Coincidence? Top the pan with a serving dish and invert the cake onto the serving dish. Life these days....ammiright? These past couple of months have been some of the most difficult of my life. Everything shut down, I got sick and the entire family had to do a for reals quarantine for over 2 months, 2 hospital trips, the kids started homeschooling, our business took a major hit, and a bunch of other stuff. It's just been....a lot. This photo is from a photoshoot I did with friends right before everything shut down. Awkward falling down the stairs seems like a good representation of my life lately. ⁣ ⁣ ⁣ But I'm so happy to report I'm finally better from my illness. We're even going to start filming again this week. My husband will be behind the camera and I'll be in front of it. Let's hope our marriage survives! ⁣ ⁣ ⁣ I used to give you guys 3 new videos every week, but this whole pandemic has dropped it to 1 new video every 5th day and I've decided to continue that through the end of the year. Access to ingredients has been a challenge I'm sure you are all familiar with. It'll take me months to physically recover from my illness so I also just don't have the physical energy to produce as much as I used to.⁣ ⁣ ⁣ I know you'll all be okay with that, but I wanted to tell you about it anyway. Knead until combined.⁣ ⁣ 3️⃣ Divide meat in half. Shape one half of the meat into the bottom half of the loaf and place in prepared pan. Place mozzarella slices down the center, leaving 1/2 inch around the ends and sides. Shape remaining half of meat as the top half of the loaf, sealing the edges. This is a free-form loaf so it doesn't need to be perfect.⁣ ⁣ 4️⃣ In a small mixing bowl whisk together ketchup, brown sugar, worcestershire sauce, red wine vinegar, garlic, salt, and cayenne pepper. I see your sorrow.⁣ ⁣ As we go into this complicated holiday weekend, may we not forget....⁣ ⁣ The women who wish to be mothers but aren't.⁣ ⁣ The women who have lost their mothers.⁣ ⁣ The women who allowed someone else to be a mother.⁣ ⁣ The women who have lost a child.⁣ ⁣ The women who feel they have failed as a mother.⁣ ⁣ The women who are not appreciated as mothers.⁣ ⁣ The women who are estranged from their mothers.⁣ ⁣ The women who are alone, especially this mother's day.⁣ ⁣ And the seemingly countless other reasons that women may feel pain and grief on mother's day.⁣ ⁣ These are the women I always think of on mother's day.
